1/4 teaspoon pepper
1 pork tenderloin (3/4 pound)
1/2 cup unsweetened apple juice
1 cup apple pie filling
1/4 cup raisins
1/4 cup chopped pecans
1/4 teaspoon ground cinnamon

Steps:

  • Rub salt and pepper over pork. Place in a large resealable plastic bag; add apple juice. Seal bag and turn to coat. Refrigerate for 30 minutes., Drain and discard apple juice. Place pork on a rack in a roasting pan. Combine the pie filling, raisins, pecans and cinnamon; spoon over pork. , Bake, uncovered, at 400° for 40-45 minutes or until a thermometer reads 160° Let stand for 5 minutes before slicing.

2 (1 1/2 pound) pork tenderloins
2 teaspoons vegetable oil, divided
1 teaspoon sea salt
2 tablespoons vegetable oil, divided, or more as needed
3 Granny Smith apples - peeled, cored, and sliced into eighths
2 medium sweet onions, sliced vertically
1 tablespoon Dijon mustard
1 tablespoon fresh thyme leaves, divided
¼ teaspoon ground black pepper, or to taste
1 cup chicken stock
1 tablespoon butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Trim all silver skin from tenderloins; pat dry using paper towels. Rub 1 teaspoon vegetable oil over the surface of each tenderloin and rub with sea salt.
  • Heat 1 tablespoon vegetable oil in a large, oven-proof skillet over medium heat until it shimmers, about 1 minute. Place tenderloins into the skillet and cook, rotating to brown all sides, about 10 minutes. Transfer pork to a large plate.
  • Add remaining tablespoon oil to any drippings in the skillet. Cook apples and onions in the hot oil, stirring occasionally, until onions begin to turn translucent, about 5 minutes, adding a bit more oil if skillet gets dry.
  • Meanwhile, spread Dijon mustard evenly over browned tenderloins using a pastry brush. Sprinkle 2 teaspoons thyme leaves over pork. Sprinkle remaining thyme over apple mixture and add black pepper; stir gently to combine. Nestle tenderloins into the skillet with apple mixture.
  • Roast, uncovered, in the preheated oven until an instant-read thermometer inserted into the center of the tenderloins reads at least 145 degrees F (63 degrees C), about 15 minutes.
  • Remove skillet from the oven and place pork onto a plate. Cover with aluminum foil and let rest.
  • Meanwhile, pour chicken stock into a saucepan and cook over medium-high heat until reduced by 1/2, 8 to 10 minutes. Add to the skillet containing apple mixture.
  • Heat over medium-high heat until boiling, about 5 minutes; stir in butter until melted. Slice pork and serve over apple mixture.

3/4 teaspoon poultry seasoning
1/2 teaspoon garlic salt
1/2 teaspoon pepper
1/4 teaspoon ground nutmeg

1 pork tenderloin (1 pound)
1 tablespoon butter
1 medium tart apple, sliced
1 tablespoon canola oil
1/2 cup reduced-sodium chicken broth
1/2 cup white wine or additional broth
1 tablespoon cornstarch
3 tablespoons thawed apple juice concentrate
Chopped fresh parsley, optional

Steps:

  • Mix the first five ingredients. Cut tenderloin crosswise into eight slices; pound each with a meat mallet to 1/2-in. thickness. Sprinkle pork with seasoning mixture., In a large nonstick skillet, heat butter over medium heat. Add apple; cook and stir 3-4 minutes or until crisp-tender. Remove from pan., In same pan, heat oil over medium-high heat. In batches, brown pork on both sides; remove from pan., Add broth and wine to pan, stirring to loosen browned bits from pan. Mix cornstarch and apple juice concentrate until smooth; stir into broth mixture. Return to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened., Return pork and apple to pan. Reduce heat to medium; cook, covered, 3-5 minutes or until a thermometer inserted in pork reads 145°. Let stand 5 minutes. If desired, sprinkle with parsley.

Juicy, flavorful, baked pork tenderloin with apples and onions is a simple yet delicious autumn dinner.

2 pork tenderloins (about 1-lb. each), trimmed
Kosher salt and ground black pepper, to taste
1 tablespoon minced fresh rosemary ((or 1 teaspoon dried rosemary))
½ teaspoon garlic powder
2 tablespoons olive oil
1 cup white wine, apple cider, or chicken broth
4 tablespoons butter
2 tablespoons pure maple syrup
3 medium apples, peeled, cored, and cut into eighths ((I use Granny Smith or Honey Crisp))
1 small sweet onion, thinly sliced
1 tablespoon apple cider vinegar
Optional garnish: additional chopped fresh herbs, such as parsley, thyme, or rosemary

Steps:

  • Adjust the oven rack to the lowest position. Preheat oven to 350°F.
  • Pat the pork dry with paper towels, and season liberally with salt and pepper. Sprinkle with rosemary and garlic powder.
  • Heat 2 tablespoons of olive oil in a large (about 12-14 inch) oven-safe skillet over medium-high heat until just smoking. Add the pork to the skillet and brown on all sides, about 8-10 minutes total. Transfer the pork to a plate.
  • Leave the pan over medium-high heat and add the wine to the pan, stirring to scrape up any browned bits. Lower the heat to medium-low and add the butter, syrup, apples, onion, and additional salt and pepper to taste. Cook until the apples and onions start to soften, about 7-8 minutes.
  • Remove the skillet from the heat. Nestle the tenderloins and any accumulated juices into the apple mixture.
  • Place the skillet in the oven and bake until the pork registers 140-145°F, about 15-20 minutes.

2 ½ pounds boneless pork loin
1 teaspoon garlic powder
salt and pepper to taste
2 tablespoons olive oil
½ cup dry white wine
2 cups cubed butternut squash
1 large onion, sliced
½ cup applesauce
1 tablespoon Dijon mustard
1 tablespoon soy sauce
½ cup brown sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Season the pork loin with garlic powder, salt, and pepper. Heat olive oil in a large oven-proof skillet or Dutch oven over medium-high heat. Brown the pork loin on all sides in the hot oil, about 10 minutes total. Remove the pork loin from the pan, and set aside. Pour in the white wine, and bring to a simmer, stirring to dissolve the caramelized bits in the pan.
  • Scatter the butternut squash and onion in the skillet and place the browned pork loin on top so they work as a roasting rack. Stir together the applesauce, mustard, soy sauce, sugar, and cinnamon. Pour over the pork loin, then cover the pan with a lid or a double layer of aluminum foil.
  • Bake pork loin in preheated oven until it has reached an internal temperature of 145 degrees F (63 degrees C), about 1 hour. Allow to rest for 10 minutes before serving

2 cups apple juice
1/2 cup apple butter
1/4 cup packed light brown sugar

  • Using an injection needle, inject apple juice into the the roast in multiple places.
  • Sprinkle with salt.

  • Drain.

Crimson and gold leaves under foot, hay rides, the crisp sweet smell of the air...comfort food, pure and simple. There are many variations, but this is the favorite in our home. To be honest, I've never measured the spices before I sat down to write this, so please feel free to adjust to your own tastes.

1 small yellow onion, thinly sliced
1 cup peeled and thinly sliced baking apples (preferably Cortland)

1 pinch brown sugar, or to taste
3 pork chops
salt and ground black pepper to taste
