Time 3h45m

Yield 6

Number Of Ingredients 12

2 green onions, chopped
1 lemon grass, cut into 1 inch pieces
1 cup chopped fresh cilantro
1 cup chopped fresh mint leaves
1 cup lime juice
⅓ cup fish sauce
1 tablespoon sweet chili sauce
½ cup white sugar
1 ½ pounds (1 inch thick) steak fillet
1 head leaf lettuce - rinsed, dried and torn into bite-size pieces
½ English cucumber, diced
1 pint cherry tomatoes

Steps:

  • In a large bowl, stir together the green onions, lemon grass, cilantro, mint leaves, lime juice, fish sauce, chili sauce and sugar until well combined and the sugar is dissolved. Adjust the flavor, if desired, by adding more sugar and/or fish sauce. Set aside.
  • Cook the steak over high heat on a preheated grill for approximately 4-6 minutes on each side, until it is cooked medium. Do not overcook the meat! Remove from heat and slice into thin strips. Add the meat and its juices to the sauce and refrigerate, tightly covered, for at least 3 hours.
  • Tear the lettuce into bite size pieces and place in a salad bowl. Arrange the cucumber on top of the lettuce, and then pour the meat and sauce over. Top with the cherry tomatoes and garnish with fresh cilantro leaves.

Time 4h30m

Yield 4 servings (1 serving is about 2 1/2 cups salad)

Number Of Ingredients 12

1 pound top-round London broil or flank steak, about 1 to 1 1/2-inches thick
3 tablespoons lime juice, divided
3 tablespoons low-sodium soy sauce
3 tablespoons canola oil
2 tablespoon brown sugar
1 teaspoon minced garlic
1 1/2 teaspoons minced ginger
1 1/4 teaspoons red curry paste or chili-garlic sauce
1/2 head red-leaf lettuce, torn (about 6 cups)

Steps:

  • Rinse and pat the meat dry. Place in a sealable plastic bag or small glass dish. In a medium bowl combine 1 tablespoon of the lime juice, soy sauce, canola oil, brown sugar, garlic, ginger and red curry paste. Pour half the mixture into the bag with the meat. Add the remaining 2 tablespoons lime juice to the bag. Seal tightly, and marinate meat in refrigerator at least 4 hours or overnight, turning occasionally. Reserve the rest of the mixture refrigerated, to dress the salad.
  • Spray grill or grill pan with cooking spray and preheat. Grill steak until medium-rare, about 5 minutes per side, depending on desired doneness. Let rest until room temperature then slice thinly against the grain.
  • Combine lettuce, sliced shallot, cilantro, basil and beef in a salad bowl, reserving a few shallots for garnish. Add the reserved dressing and toss to coat. Divide salad among 4 plates and garnish with reserved sliced shallots.

MY O MY.. BEST THAI BEEF SALAD EVER!

My O My.. Best Thai Beef Salad Ever! image

This is one of the best Thai salads I have ever tasted and I just had to share it with my zaar family. Try it, you won't regret it. You can substitute the beef with the same amount of Pork fillets, chicken breasts or thigh fillets, or some firm tofu. When preparing this salad in advance, cook the beef, prepare the salad, and make the dressing, BUT STORE EACH IN SEPARATE CONTAINERS. Do NOT combine until you are ready to serve. This is an ideal portable lunch or picnic dish that can be transported in 3 small containers, and assembled on the spot.

Provided by KitchenManiac

Categories     One Dish Meal

Time 15m

Yield 4 serving(s)

Number Of Ingredients 12

30 ounces sirloin steaks, trimmed (rump or fillet)
7 ounces salad greens (any kind)
2 small red onions, finely sliced
10 kaffir lime leaves, shredded
3 large mild red chilies, seeded and shredded (can add more if you like a BIG punch)
2/3 cup cilantro leaf (coriander)
2/3 cup mint leaf
2/3 cup basil leaves
1 teaspoon soya sauce
2 tablespoons fish sauce
2 tablespoons lime juice
2 tablespoons brown sugar or 2 tablespoons palm sugar

Steps:

  • To make the dressing, combine the soy sauce, fish sauce, lime juice and sugar.

THAI LARB RECIPE (LARB MOO ลาบหมู)

Thai larb recipe (larb moo ลาบหมู) image

Thai larb made with minced pork (larb moo ลาบหมู) is one of the most popular Thai streets foods in Isaan cuisine. It's a wonderful combination of minced pork, lime juice, chili flakes, fish sauce, and herbs to give it a refreshing touch.

Provided by Mark Wiens (eatingthaifood.com)

Categories     Salad

Time 35m

Yield 1 - 2

Number Of Ingredients 10

About 5 tablespoons of uncooked Thai sticky rice (but for the actual dish I used about 1 heaping tablespoon after we made it into powder - see directions)
300 grams (1 pound) minced pork (minced chicken or minced beef will also work well)
½ - 1 tablespoon of chili flakes (prik bon)
⅛ tablespoon of sugar (just a pinch)
½ tablespoon of fish sauce (here's the fish sauce I use)
1 - 2 limes (I used the juice from about 1.5 limes)
3 - 4 small shallots (Thai shallots are only about the size of grapes, so if you have bigger shallots just use however much you want)
A few leaves of Culantro - this is an herb also known as long coriander, it tastes a little like cilantro (if you can't find any cilantro, don't worry about it, it's not a must)
3 - 5 spring onions (green onions)
About 20 leaves or so of fresh mint

Steps:

  • First step is to make the toasted rice (khao kua ข้าวคั่ว).
  • Heat a frying pan on low heat, toss in the uncooked Thai sticky rice (no oil). Stir continuously, kind of like you're roasting peanuts or coffee. Toast the rice until it turns from white to golden yellow, almost to the point where it looks like brown wheat. It will also be very fragrant and smell almost like popcorn. It took me about 15 minutes or so.
  • Once the rice is finished toasting, and has cooled off a bit, put it into your stone mortar and pestle. Pound the rice until it turns into a coarse powder (a blender or food processor will also work fine). Put your toasted sticky rice powder in a bowl aside.
  • Add 300 grams of minced pork to a small sized saucepan with a handle. Fry the pork, breaking it into small minced pieces, until it's fully cooked all the way through. For best flavor, leave all the oils that come out (but if you want to be healthier, you can also drain the pork oil, and add in a splash of water instead). Take the pork off the heat.
  • Leaving the pork in the same pot, add 1 heaping tablespoon of the toasted rice powder into the pork. Also toss in ½ - 1 tablespoon of chili flakes.
  • Add a pinch of sugar, ½ tablespoon of fish sauce, and squeeze in the juice from 1 - 2 limes (I used about 1 ½ full limes, but I like it quite sour).
  • Give the pork and the seasoning a quick stir.
  • Peel and slice the shallots, finely mince about 5 green onions and a few culantro leaves (if you have them), and just pluck about 20 or so mint leaves off the stem. Throw everything into the saucepan with the pork.
  • Give the larb moo a good mix, making sure all the spices and dressing coats the pork.
  • Taste test. See if it needs more fish sauce for saltiness, lime juice, or chili flakes. Get it the way you want it.
  • Dish it out onto a plate and garnish with more mint leaves, Thai sweet basil, and culantro.

SPICY GRILLED BEEF SALAD

Spicy grilled beef salad image

You can prepare the spicy salad sauce ahead of time, then cook the beef really quickly before putting it all together. You can turn this around in under 10 minutes! Feel free to substitute the beef with grilled chicken, lamb, or even grilled aubergine for a vegetarian version.

  • After the beef has marinated, take the steaks and place in an air fryer and cook at 180 degrees for about 10 minutes until cooked rare.

  • Place rice in a medium skillet and set over medium heat. Cook, tossing often, until golden brown and deeply nutty–smelling, 12–15 minutes. Let cool, then finely grind in a spice mill or mortar and pestle; set aside.
  • Meanwhile, stir lime juice, fish sauce, red pepper flakes, and sugar in a small bowl until sugar dissolves. Season with salt and black pepper.
  • Do ahead: You can toast and grind the rice a few days in advance (as Suntaranon does). If the smokiness and aroma have faded at all, just toss it in briefly hot skillet to refresh.
  • Place beef in a large bowl and add fish sauce, sugar, and 2 Tbsp. oil. Let sit at room temperature 1 hour, or cover and chill up to 1 day ahead.

  • If using a wider cut of steak such as flank, slice it into two pieces along the grain. Combine the marinade ingredients in a small bowl and stir to dissolve the sugar. Transfer the steak to a ziplock bag and pour the marinade over the steak (*Footnote 1). Seal and massage the bag a few times. Marinate at room temperature for 20 minutes to an hour.
  • While the steak rests, combine the dressing ingredients in a small bowl. Stir until the sugar is dissolved.
  • When the steak is ready, remove it from the marinade and pat it dry with paper towels. Heat a cast iron skillet (or heavy-duty skillet) with a small amount of oil to coat the bottom of the pan over high heat until smoking. Add the steak and let it sear undisturbed for 1 to 2 minutes. Once the steak is fully seared, flip it and let it sear for another 1 to 2 minutes. Then lift the steak with a pair of tongs and sear each edge for about 30 seconds at a time. Turn the heat down to medium-high and let the steak continue to cook, flipping regularly, until the desired doneness is reached (about another 2 minutes for medium-rare, 3 to 4 minutes for medium). Remove the steak from the pan and let it rest for 10 minutes before cutting.

  • Remove Steak from refrigerator at least an hour before cooking. Pat the steak dry and salt on both sides. Rest on the countertop on a plate.
  • Toast (glutinous) rice grains in a skillet, optional with lime leaves. Once they are grains are gold brown, place in a spice grinder or blender till a fine powder forms.
  • Grill steak or cook on cast iron skillet on the stove. Depending on the steak thickness, I recommend 4 minutes on each side for Medium. Use an instant thermometer for accurate results. The lime juice will cook the steak more, so medium is preferred.
  • Once steak is cooked, allow to rest for 10 minutes on a cutting board then slice thin against the grain.

Thai restaurants around the world sell larb (also spelled laab) in various styles, usually with ground chicken "Larb Gai" or pork "Larb Moo".
