This is a great soup to warm your stomach on a cold winter night. So simple and so flavorful! I found this on Food Network, but tweaked it to be a little easier.

2 -3 pinches ground thyme (or a couple of shakes out of the bottle)
1 pinch rosemary (or a couple of shakes out the bottle)
2 bay leaves
1 tablespoon olive oil
1 tablespoon butter
1 cup chopped onion
3 ounces bacon, chopped (or pancetta)
2 minced garlic cloves
5 3/4 cups low sodium chicken broth
1 (14 1/2 ounce) can red kidney beans
1 (14 1/2 ounce) can pinto beans
3/4 cup small shell pasta, I used orecchiette pasta
fresh ground black pepper
1 pinch red pepper flakes
1/3 cup freshly grated parmesan cheese
1 tablespoon extra virgin olive oil
you can add pieces sausage or ham, which adds nicely to the flavor

Steps:

  • Heat 1 tablespoon olive oil and butter in a heavy large saucepan over medium heat. Add the onion, bacon, and garlic and saute until the onion is tender, about 3 minutes.
  • Add the broth, beans, and herbs (thyme, bay leaves, rosemary) . Cover and bring to a boil over high heat, then decrease the heat to medium and simmer until the vegetables are very tender, about 10 minutes.
  • Puree 1 cup of the bean mixture in a blender until smooth*. Before putting the puree back into the soup, add the macaroni and boil with the lid on until it is tender but still firm to the bite, about 8 minutes. You can also add sausage or ham at this time as well.
  • Return the puree to the remaining soup in the saucepan and stir well. Season the soup with ground black pepper and red pepper flakes.
  • Ladle the soup into bowls. Sprinkle with some Parmesan and drizzle with extra-virgin olive oil just before serving.
  • *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.

1/2 pound orzo pasta
1 medium onion (peeled, cut into large chunks)
2 medium carrots (peeled, cut into chunks)
2 medium stalks celery (cut into large chunks)
5 large cloves garlic (minced)
2 tablespoons olive oil
4 ounces pancetta (finely diced)
1 pound Italian sausage (I used hot and spicy variety, remove the casings and cut into chunks)
1 14 ounce can diced tomatoes in their juice
29 ounce can cannellini beans
3 cups low sodium chicken broth or stock
1/2 teaspoon crushed red pepper
2 bay leaves
1 teaspoon dried oregano
parmesan cheese rind (optional)
2 tablespoons butter
3 tablespoons Italian parsley (chopped)
parmesan cheese (grated)
Italian parsley (chopped)

Steps:

  • Transfer the onion, carrots and celery to the bowl of a food processor and pulse until chopped fine. Set aside.
  • In a large dutch oven heat the olive oil over medium heat and add the chopped garlic. Sweat the garlic until fragrant and translucent, but don't brown it.
  • Increase the heat to medium high and add the pancetta. Cook for one minute, stirring occasionally, then add the Italian sausage and cook, stirring occasionally until the sausage has browned.
  • Add the onion, carrot, celery mixture and sauté until the vegetables are tender.
  • Add the tomatoes, can of cannellini beans (including the liquid) and the chicken stock. Stir to combine. Add the oregano, bay leaves, crushed red pepper and parmesan cheese rind (if using). Stir, then cover with a tight fitting lid, bring the pot to a low simmer and cook for 20 minutes.
  • While the soup is simmering, cook the orzo pasta to al dente, according to the package directions. Drain the pasta and set aside.
  • Taste the soup and adjust seasonings as needed according to your tastes.

200g dried borlotti or cannellini beans , soaked for 6-8 hours
2 onions , cut into 1cm chunks
2 medium carrots , cut into 1cm chunks
3 celery stalks, cut into 1cm chunks
2 tbsp extra virgin olive oil , plus extra to serve (optional)
4 garlic cloves , crushed
1 litre fresh vegetable stock
400g can plum tomatoes
2 tbsp brown rice miso
6 rosemary sprigs
4 bay leaves
150g ditaloni rigati or other small pasta shapes
200g cavolo nero , stalks finely chopped and leaves torn
30g vegan parmesan , grated, to serve (optional)

Steps:

  • Drain the beans and bring to the boil in a pan of salted water. Cook for 10 mins, drain, rinse and put in a slow cooker with the onions, carrots and celery.
  • Stir in the olive oil, garlic, stock, tomatoes, half a can of water and the miso. Tie the herbs together with kitchen string and add these as well. Season. Cover and cook on low for 6-8 hrs, until the beans are cooked through and all of the veg is really tender.
  • Remove and discard the herbs and stir in the pasta. Cover and cook on high for another 30 mins. Add the cavolo nero stalks and leaves and cook for a final 30-40 mins, or until the pasta is cooked through and the greens are tender. Serve scattered with the cheese and drizzled with a little more olive oil, if you like.

3 15 oz cans cannellini beans
1/4 cup extra virgin olive oil
1/2 medium onion (chopped)
2 cloves garlic (chopped)
4 oz pancetta or approx 4 slices bacon (diced)
2 tsp minced fresh rosemary
3 cups beef broth
3 cups chicken broth
1 cup crushed tomatoes
1 3/4 cups small pasta shells (uncooked)
1 tsp kosher salt
crushed red pepper flakes (optional)
parmesan cheese (optional)

Steps:

  • Drain ONE can of beans, and set aside.
  • In a large soup pot, heat olive oil. Add onion and pancetta and saute until onions are golden, about 5 minutes. Add garlic and rosemary and saute about 4 additional minutes.
  • Transfer sauteed ingredients to a blender or food processor and add the two other cans of beans (liquid included). Puree until smooth.
  • Add the pureed mixture back into the pot, along with the drained beans, the chicken and beef broth, salt, and crushed tomatoes. Bring to a boil.
  • Once boiling, add the pasta and cook until al dente, stirring occasionally to prevent sticking.
  • Once the pasta is cooked, remove from heat.
  • Taste, and add more salt if necessary.
  • Serve, topped with red pepper flakes and parmesan cheese, if you like.

14 ounces carrots, slivered
12 ounces onions, chopped
14 ounces celery, diced
48 ounces diced canned tomatoes
2 cups red kidney beans
2 cups white kidney beans
88 ounces beef stock
3 teaspoons oregano
2 1/2 teaspoons pepper
5 tablespoons fresh parsley, chopped
1 1/2 teaspoons Tabasco sauce
48 ounces spaghetti sauce
8 ounces dry pasta shell macaroni

Steps:

  • Sauté beef in oil in large 10 quart pot until beef starts to brown.
  • Add onions, carrots, celery and tomatoes and simmer for about 10 minute.
  • Drain and rinse beans and add to pot. Also add beef stock, oregano, pepper, Tabasco, spaghetti sauce and noodles .

1 tablespoon dried basil
2 teaspoons dried oregano
Dash of red pepper flakes
1 1/2 cups chopped whole tomatoes, with juices
3 cups low-sodium chicken stock, or vegetable stock
1 can northern white beans, drained and rinsed
1 cup tiny pasta shells (ditalini)
2 tablespoons fresh chopped parsley
Freshly grated Parmesan and black pepper for garnish

Steps:

  • In a large heavy pot, heat olive oil over medium high heat. Stir in onion and cook for 2 minutes. Stir in garlic, celery, and carrots and cook for 3 minutes. Add dried basil, oregano, and red pepper flakes and toss to coat. Stir in tomatoes and stock and bring to a boil. Reduce heat and simmer for 30 minutes. If necessary add an additional cup of stock or water and stir in beans and tiny pasta. Simmer for 6-8 minutes or until pasta is tender. Stir in parsley and serve hot with grated Parmesan and ground black pepper.

100g (4 oz.) pancetta
2 or 3 garlic cloves, slightly crushed
A sprig of fresh rosemary
A peperoncino (optional)
Olive Oil
3-4 canned tomatoes, plus a bit of juice
500g (1 lb.) (or one large can) cannellini beans, pre-boiled or canned, drained
Water or homemade broth
500g (1 lb.) ditali or other soup pasta (see Notes), parboiled
Salt and pepper, to taste
Grated pecorino cheese

Steps:

  • If pre-boiling the beans, pre-soak them overnight in abundant water. Simmer them the next day until tender, about an hour or so depending on how old your beans are, seasoning with salt towards the end of cooking. (If you like, you can add a garlic clove and a sprig of parsley.)
  • Fry the pancetta, cut up into cubes or lardons, in olive oil until just beginning to brown, then add the garlic cloves and rosemary. (You can also add a peperoncino at this point if you like some spice.)
  • Just when you start to smell the garlic and rosemary, add the canned tomatoes, which you should crush in your hands as you add them to the pot. (I just add one or two plus a little juice, just enough to lightly color the soup and add a little flavor) and simmer until the tomatoes have separated from the oil.
  • Then add your cannellini beans, allow them to simmer for a minute or two to insaporire (absorb the flavors of the tomato and other ingredients) and then add water (or broth) and partially cooked pasta (see below).
  • Continue simmering, squashing some of the beans against the side of the pot so that they 'melt' into the liquid and thicken it, until the pasta is fully cooked.
  • I like to mix in a bit of grated pecorino cheese to enrich the soup before serving. Serve topped with you choice of additional grated cheese, freshly ground pepper and/or un filo d'olio.

1/8 pound (about 3 slices) pancetta, chopped
Two 4 to 6-inch sprigs rosemary, left intact
One 4 to 6-inch sprig thyme with several sprigs on it, left intact
1 large fresh bay leaf or 2 dried bay leaves
1 medium onion, finely chopped
1 small carrot, finely chopped
1 rib celery, finely chopped
4 large cloves garlic, chopped
Coarse salt and pepper
Two 15-ounce cans cannellini beans
1 cup canned tomato sauce or canned crushed tomatoes
2 cups water
1 quart chicken stock
1 1/2 cups ditalini
Grated Parmigiano or Romano, for the table
Crusty bread, for mopping

Steps:

  • Heat a deep pot over medium high heat and add oil and pancetta. Brown the pancetta bits lightly, and add herb stems, bay leaf, chopped vegetables, and garlic. Season vegetables with salt and pepper. Add beans, tomato sauce, water, and stock to pot and raise heat to high. Bring soup to a rapid boil and add pasta. Reduce heat to medium and cook soup, stirring occasionally, 6 to 8 minutes or until pasta is cooked al dente. Rosemary and thyme leaves will separate from stems as soup cooks. Remove herb stems and bay leaf from soup and place pot on table on a trivet. Let soup rest and begin to cool for a few minutes. Ladle soup into bowls and top with lots of grated cheese. Pass crusty bread for bowl mopping.

8 ounces bite size pasta (tubetti, small shells, broken spaghetti, linguine etc. can all be used)
use De Cecco for best results
8 ounces (one cup) cooked beans especially cannellini, Borlotti or kidney(any kind of bean will do, including garbanzo)
4 ounces pasta sauce (1/2 cup) more or less depending on your taste of course homemade is best, but the jarred kind will work
(optional: Parmigiano Reggiano, grated, to serve - please don't use a lesser quality cheese-read my rant below)

Steps:

  • Boil the pasta according to the directions on the package until it is almost al dente (a little hard, not completely cooked). Remove some water, (but reserve to use later, if needed); I usually try to make the water level with the pasta.
  • Add the beans.
  • Now add the pasta sauce. If it's too dry, add some of the reserved pasta water.
  • Stir thoroughly, and just let the pasta start to come to a boil, then remove from heat. Ladle into serving bowls, add grated Parmigiano Reggiano cheese, if desired, and dinner is served!

  • Peel and chop the onion. Heat olive oil in a large pasta pot on medium high. Add the onions and tomato paste and stir to combine. Cook until onions are tender, stirring as needed, about six minutes. (Lower the heat a bit if the onions are getting too brown.)
  • While the onions are cooking, rinse, dry and chop the basil and optional parsley. Peel and press the garlic. Drain and rinse the beans. When the onions have another minute to cook, stir in the garlic, herbs beans, salt and pepper.
  • After a minute, add water to the pot, cover it, and put the heat on high. When the pot is boiling, add the pasta.
  • Lower the heat to medium high. Cook the pasta uncovered, stirring occasionally and scraping along the bottom, until the pasta is al dente. (Check it three minutes before the al dente time listed on the package.) Do NOT drain.

  • Put the flour in a bowl and season with salt & pepper. Lightly coat all sides of the pork cubes with the flour.
  • Heat a large soup pot or dutch oven, of at least 5 1/2 quart capacity, over medium-high heat. When the pot is hot but not smoking, add 2 tablespoons of the olive oil. Working in batches, brown the pork, stirring occasionally, about 5 minutes per batch. Transfer the browned pork to a bowl. Add the wine to the pot, raise the heat to high and simmer for 2 minutes. Stir with a spoon to release any browned bits clinging to the bottom of the pot. Pour the wine mixture into the bowl with the cooked pork and set aside.
  • Reduce the heat under the pot to medium. Add the remaining tablespoon of olive oil. Add the onion and garlic to the pot and cook, stirring, until the onion begins to soften, about 3 minutes. Add the carrot, celery, rosemary and about half of the parsley. Season lightly with salt & pepper. Cook for about 5 minutes, stirring occasionally.
  • Add the broth and tomatoes (if using whole tomatoes, break them up before adding to soup) along with the beans and browned pork mixture. Bring to a simmer; then add pasta. Cook for additional 10 minutes or until pasta is al dente. Taste for seasoning.
