AUNT SUSAN'S CARAMEL CREAM CAKE



Aunt Susan's Caramel Cream Cake image

More caramel in color than flavor, this terrifically moist cake is rich with the taste of coffee and cocoa. Absolutely divine.

1 c butter, room temperature
2 1/2 c sugar
5 eggs, separated (reserve 1 yolk for frosting)
3 c cake flour
1/2 tsp salt
1 tsp cocoa, unsweetened
1 tsp baking soda
1 c buttermilk
5 Tbsp strong brewed coffee (1/4 cup + 1 tablespoon)
2 tsp vanilla extract
CARAMEL CREAM FROSTING
2 tsp cocoa, unsweetened
1 lb confectioners' sugar, sifted
1/2 c butter, room temperature
1 egg yolk, beaten
3 Tbsp strong brewed coffee, cooled
1 Tbsp vanilla extract

Steps:

  • 1. Using electric mixer on medium high speed, cream butter and sugar until light and fluffy.
  • 2. Add 4 beaten egg yolks and continue beating.
  • 3. Sift flour, salt and cocoa together.
  • 4. Dissolve baking soda in buttermilk.
  • 5. Add dry ingredients alternately with buttermilk mixture to the creamed mixture, beginning and ending with dry ingredients.
  • 6. Blend in coffee and vanilla.
  • 7. Beat egg whites until stiff, but not dry and fold into batter.
  • 8. Pour into three greased and floured 8-inch cake pans.
  • 9. Bake in 375° oven for 25 minutes.
  • 10. Frost with Caramel Cream Icing between layers, sides and top.
  • 11. For caramel cream icing:
  • 12. Sift cocoa and confectioner's sugar together.
  • 13. In mixer, cream butter and sugar/cocoa mixture together thoroughly.
  • 14. Add egg yolk, coffee and vanilla. Beat until soft and fluffy. Frost cake.
  • 15. NOTE: There is an uncooked, beaten egg yolk in the frosting. I have always used it and it has never caused a problem, however, if you are concerned, internet research gave suggestions of 1)just leave it out, may change texture and richness of frosting 2)substitute pasteurized egg product and use 1/2 the amount listed for 1 egg 3) pasteurize your own egg yolk by heating the egg, whisking constantly, until it reaches 160º. Done over hot simmering water it won't cook solid but will kill bacteria. 4) use reconstituted powdered egg I HAVE NEVER TRIED ANY OF THESE ALTERNATIVES AND DON'T KNOW WHAT THE FINAL RESULT WOULD BE.

OLD TIMEY CARAMEL ICING

I always had trouble making caramel icing before I got this recipe from a friend's mother. Putting the cold butter in last made all the difference for me. It tastes so good too!

3 c white granulated sugar
1 1/3 c white whole milk
1 1/2 stick cold butter
5 Tbsp white granulated sugar

Steps:

  • 1. Combine 3 cups sugar and milk in a heavy sauce pan on medium heat. Stir together for a few minutes. Allow to continue to heat.
  • 2. While milk and sugar are heating, place a small black iron skillet on med. to med. high heat. Add the 5 tablespoons on sugar. Stir in the skillet until the sugar liquifies and then turns golden brown. It will be bubbling hot.
  • 3. Now the milk and sugar should be very hot. Carefully pour in the browned sugar from the skillet. Whisk together and cook for about 15 minutes or until the mixture reached the very soft ball stage. (test by dropping a little off a spoon into a small glass of cool water. When a small soft ball forms, it's ready.)
  • 4. Remove from heat and using an electric mixer, mix in 1 and 1/2 sticks cold butter...never margarine! Continue to beat until cooled to spreading consistency.
  • 5. If too thick, you can thin by beating in milk a tablespoon at a time. Make sure your cake in completely cooled or this heavy icing may cause the top to split. It'll still taste super though!

CARAMEL FROSTING I

1 cup confectioners' sugar
½ teaspoon vanilla extract

Steps:

  • In a saucepan over medium heat, melt the butter, and mix in 3 tablespoons milk and brown sugar. Boil vigorously for 1 minute.
  • Remove from heat, and beat in 1/2 cup confectioners' sugar. Cool slightly, and beat in the vanilla and remaining 1/2 cup confectioners' sugar. Add more milk if the mixture is too thick.

1/2 pound butter
2 egg yolks
1 cup sugar
Scant 1/4 teaspoon ground cinnamon
2 cups unsifted flour
1/2 pound sliced blanched almonds
3/4 cup sugar
6 tablespoons butter
3 tablespoons honey
3 tablespoons milk

Steps:

  • Preheat the oven to 350 degrees. Butter and flour a 15 1/2 by 10 1/2 by 1-inch jelly roll pan; set aside.
  • Combine the butter, yolks, sugar, cinnamon and flour and mix until you form a cohesive ball of dough. Spread the dough onto the prepared jelly roll pan and bake for 15 minutes.
  • Meanwhile cook the almonds, sugar, butter, honey and milk, stirring on occasion, until the mixture is light golden.
  • Remove baked dough; spread almonds mixture over the top and bake for 15 to 20 minutes longer until dark golden. Cool and cut into squares or rectangles (be sure to cut the cookies before they turn too hard.)

1 1/2 cups granulated sugar
1 1/2 cups milk
2 tablespoons butter

Steps:

  • Combine sugars and milk and bring to the boil, stirring gently.
  • Boil without stirring, until a little mixture forms a very soft ball when dropped in cold water.
  • Add butter, remove from heat and cool until lukewarm.
  • Beat at medium speed until thick, creamy, and of a consistency to spread.
  • If necessary, place over hot water to keep soft while spreading, or beat in a little milk.
  • This will fill and frost a 2-layer 9 inch cake.

2 1/4 cups sugar
2/3 cup water
9 tablespoons unsalted butter, cut into 1/2-inch cubes

Steps:

  • Whisk whipping cream and cream cheese in small bowl until smooth.
  • Combine sugar and 2/3 cup water in heavy medium saucepan. Stir over medium-low heat until sugar dissolves. Increase heat to high; boil without stirring until syrup is deep amber color, occasionally brushing down sides of pan with pastry brush dipped in water and swirling pan, about 10 minutes.
  • Slowly and carefully whisk in cream cheese mixture (caramel mixture will bubble vigorously). Add butter; whisk until mixture is smooth, about 1 minute.
  • Remove from heat; cool caramel icing 10 minutes, whisking occasionally.
  • Makes enough for one 9 in layer cake, plus leftovers for serving.

Solid vegetable shortening for greasing the pans
Flour for dusting the pans
1 package (18.25 ounces) plain white cake mix
1 cup whole milk
8 tablespoons (1 stick) butter, melted
3 large eggs
2 teaspoons pure vanilla extract
Quick Caramel Frosting, recipe follows
8 tablespoons (1 stick) butter
1/2 cup packed light brown sugar
1/2 cup packed dark brown sugar
1/4 cup whole milk
2 cups confectioners' sugar, sifted
1 teaspoon pure vanilla extract

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F. Generously grease two 9-inch round cake pans with solid vegetable shortening, then dust with flour. Shake out the excess flour. Set the pans aside.
  • Place the cake mix, milk, melted butter, eggs, and vanilla extract in a large mixing bowl. Blend with an electric mixer on low speed for 1 minutes. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping the sides down again if needed. The batter should look well blended. Divide the batter between the prepared pans, smoothing it out with the rubber spatula. Place the pans in the oven side by side.
  • Bake the cakes until they are golden brown and spring back when lightly pressed with your finger, 27 to 29 minutes. Remove the pans from the oven and place them on wire racks to cool for 10 minutes. Run a dinner knife around the edge of each layer and invert each onto a rack, then invert them again onto another rack to that the cakes are right side up. Allow them to cool completely, 30 minutes more.
  • Meanwhile, prepare the Quick Caramel Frosting.
  • Place one cake layer, right side up, on a serving platter. Spread the top with the warm frosting. Place the second layer, right side up, on top of the first layer and frost the top and sides of the cake with clean, smooth strokes. Work quickly, as the frosting will set. (If the frosting gets too hard to work with, place the pan back over low heat for 1 minute, stirring constantly, to soften it up.) Once the frosting has set, slice and serve.
  • Store this cake, covered in plastic wrap or aluminum foil, at room temperature for up to 1 week or freeze, wrapped in foil, for up to 6 months. Thaw the cake overnight on the counter before serving.
  • Place the butter and brown sugars in a medium-size heavy saucepan over medium heat. Stir and cook until the mixture comes to a boil, about 2 minutes. Add the milk, stir, and bring the mixture back to a boil, then remove the pan from the heat. Add the confectioners' sugar and vanilla. Beat with a wooden spoon until the frosting is smooth.
  • Use immediately (while still warm) to frost the cake of your choice or the frosting will harden. If it does harden while you are frosting the cake, simply place the pan back over low heat and stir until the frosting softens up.
