AUNT NINA'S BREAD BALLS AND SAUCE

this recipe is for meatless meatballs, which are prepared in much the same way as meatballs, just with different ingredients. Bread crumbs, eggs, cheese, and herbs are combined and rolled into balls, which are then browned and simmered in a tomato sauce. This idea can be traced, not surprisingly, to Italy, were similar recipes...

Number Of Ingredients 23

1 cup water.
one large egg.
three garlic cloves, minced
1 tablespoon chopped fresh parsley or 3/4 teaspoon dried
1/4 teaspoon pepper
one loaf italian bread, torn into small pieces, 16 ounces
1 1/2 cups grated parmesan cheese
6 tablespoons olive oil
sauce:
one onion, minced
salt
two cans tomato paste, 6 ounces each
1 tablespoon sugar
three garlic cloves, minced
2 teaspoons dried oregano
1/8 teaspoon red pepper flakes
pepper
2 cups water
one can diced tomatoes, 28 ounces
one can tomato sauce, 15 ounces
1 tablespoon chopped fresh parsley
1/2 cup grated parmesan cheese
1 tablespoon chopped fresh basil

Steps:

  • 1. for the bread balls: whisk the water, egg, garlic, parsley, basil, and pepper together in a large bowl. Add the bread and cheese and mix with your hands until well combined. With wet hands, form the mixture into 1 1/2 inch bread balls. You should have about 30 bread balls.
  • 2. Heat 1/4 cup of the oil in a Dutch oven over medium-high heat until shimmering. Add half of the bread balls and cook until well browned on the first side, two to four minutes. Do not move the bread balls until they are well browned on the first side. Continue to cook until they are well browned on all sides, about five minutes longer, turning as needed. Transfer the bread balls to a bowl. Add the remaining 2 tablespoons oil to the pot and return it to medium heat until the oil is shimmering. Repeat with remaining bread balls.
  • 3. For the sauce: pour off all but 1 tablespoon of the oil from the pot and return to medium heat until shimmering. Add the onion and 1/2 teaspoons salt and cook, stirring occasionally, until softened 5 to 7 minutes. Stir in the tomato paste, sugar, garlic, oregano, red pepper flakes, and 1/4 teaspoon pepper and cook until the tomato paste begins to Brown, 2 to 4 minutes. Add the water, tomatoes, and tomato sauce. Bring to a simmer, cover and cook, stirring occasionally, for one hour.
  • 4. Return the bread balls to the pot, cover and continue to simmer until the sauce is thickened slightly and the bread balls are tender, about 30 minutes longer. Off the heat, stir in the parsley and season with salt and pepper to taste. Serve, sprinkling each portion with Parmesan and basil.

½ cup finely chopped black olives
2 tablespoons finely chopped green onions

2 dashes Worcestershire sauce
1 cup chopped walnuts

Steps:

  • In a large bowl, mix the cream cheese, Cheddar cheese, blue cheese, butter, olives, green onions, garlic salt, and Worcestershire sauce. Cover, and refrigerate 30 minutes, until firm.
  • Form the mixture into 2 balls, and roll in the walnuts to coat.

She borrowed the recipe from a co-worker at the telephone company YEARS ago and has adopted it as her own. Easy. Quick. DELISH. If you want a fancier version, use cream cheese, worchester, accent, green onions....but substitute proscuito for the beef and add chopped roasted red peppers and minced black olives.

1/2 teaspoon Worcestershire sauce
1/2 teaspoon Accent seasoning
6 green onions
1 (12 ounce) package Buddig beef (for fancy appetiser use prosciutto and follow instructions in the notes)
3 ounces walnuts, chopped
12 ounces Ritz crackers

Steps:

  • Leave cream cheese out of fridge to soften about 20 minutes.
  • Finely chop green onions and Buddig Beef.
  • Mix onions, beef, Worchester, and softened cream cheese thouroughly.
  • Form into ball.
  • Roll ball in walnuts.
  • Serve with Ritz Crackers.

When I got married and had a family of my own, I asked her for her recipe. I touched it up with some red and green peppers. I love this cheese ball! its my all time favorite.

8 ounces cream cheese, at room temperature
4 ounces cheddar cheese, shredded
3 ounces blue cheese, crumbled
8 ounces kraft Cheez Whiz
1 small onion, diced
1/2 green pepper, diced
1/2 red pepper, diced
chopped pecans
1/2 teaspoon Accent seasoning

Steps:

  • In a large bowl add cream cheese,cheddar cheese and blu cheese and mix together well.
  • Add cheese whiz,Accent,onion, red and green pepper.
  • Mix all up real good and place in refrigerator for 10 minutes or just enough time to harden alittle. This is to help with rolling in pecans.
  • Remove from refrigerator and form into 1 large cheese ball or 2 medium size cheese balls.
  • On wax paper, place chopped pecans and roll each ball.
  • Place on a glass plate or cheese ball plate and pat around to secure the pecans.
  • Chill for 1 to 2 hours or overnight.
  • Serve with your choice of crackers.

1 jar(s) (6 oz) kraft roca blue cheese spread
1 jar(s) (6 oz) kraft old english cheese spread
1 pkg (8 oz) cream cheese (can use light if desired)
1 tsp garlic salt
1/8 c onion, grated
1 tsp worcestershire sauce
dash(es) paprika
chopped nuts or parsley

Steps:

  • 1. Have all ingredients at room temperature. Blend everything (except chopped nuts or parsley) with hand mixer. Return mixture to refrigerator overnight.
  • 2. Just before serving, form mixture into a large ball, or 2 smaller balls. Roll balls in chopped nuts or parsley.
  • 3. Serve with fruit and crackers.

You can use low-fat or fat-free cream cheese for this, but it will not get hard and form a ball. If you make it with low-fat ingredients, place the mixture in a bowl or decorative crock and top with crushed pecans. Cook time does not include chill time.

Steps:

  • Mix all ingredients except 1 1/2 c chopped pecans with mixer till throughly combined.

  • Remove from fridge and undo wrap and roll in remaining crushed pecans.
  • Enjoy with assorted cracker, we like Triscuits and Club crackers best.
