The recipe for these Lunch Lady Brownies has been passed down for generations and is the actual recipe used in schools over 50 years ago! These fudgy brownies are soft and thick with the most delicious chocolate frosting.

1 cup unsalted butter (melted)
½ cup cocoa
2 cups all-purpose flour
2 cups sugar
4 eggs
4 teaspoons vanilla
¼ cup unsalted butter (softened)
¼ cup milk
¼ cup cocoa
3 cups powdered sugar
¼ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, use a mixture to mix butter and cocoa together until smooth.
  • Add flour and sugar; beat together.
  • Mix in eggs and vanilla until just combined.
  • Pour batter into a greased 9x13" baking pan.
  • Bake for 20-25 minutes or until an inserted toothpick comes out clean.
  • Let the brownies cool for about 10-20 minutes and then frost while still warm.

I've had this recipe for years and years (wrangled it from my son's Godmother!) and it's a consistent, never-fail, chewy/fudgy piece of chocolate Heaven! It goes together very quickly, too!

Number Of Ingredients 10

1/3 cup butter
3/4 cup sugar
2 tablespoons water
1 teaspoon vanilla
2 eggs, lightly beaten
1 cup semisweet chocolate morsel
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup flour
1 cup semisweet chocolate morsel (additional)

Steps:

  • Combine butter, sugar and water in a small saucepan. Heat on medium and stir until sugar is melted. Remove from heat.
  • Add vanilla, eggs and 1 cup of chocolate morsels (I use Ghirardelli's) and stir until chocolate is melted.
  • In a medium sized bowl, combine baking soda, salt and flour, mix well. Add warm chocolate mixture and stir gently until combined.
  • Spray bottom of a 9"x13" baking pan with spray release of choice, then pour in the brownie batter. Wait a minute or two for the batter to even out over the pan, then sprinkle with the additional cup of chocolate morsels.
  • Bake in a 350 degree oven for 30-35 minutes.

I recently found this recipe in Family Circle. And since everyone loved my "Perfect Brownies" recipe I thought I should share this one, they are wonderful.

1 3/4 cups all-purpose flour
3/4 teaspoon baking powder
3/4 teaspoon salt
1/2 cup unsalted butter
4 ounces unsweetened chocolate, chopped
1 1/2 cups sugar
4 eggs
1 teaspoon vanilla
6 ounces cream cheese, softened
1/3 cup all-purpose flour
1/2 cup sugar
1/2 teaspoon vanilla
2 tablespoons milk

Steps:

  • Heat oven to 350 degrees.
  • Line a 13x9x2-in baking pan with aluminum foil.
  • Coat with nonstick cooking spray.
  • Brownies--------.
  • In a medium-size bowl,whisk together flour, baking powder and salt until blended In large microwave-safe bowl, combine butter and chocolate.
  • Microwave on high 1 minute; stir until smooth.
  • if necessary melt another 15 seconds.
  • Add sugar to chocolate mixture; stir to combine.
  • Add eggs and vanilla; stir til smooth.
  • Stir in flour mixture til smooth.
  • Spoon into prepared pan; spread evenly.
  • Cheesecake Dimples------.
  • In medium-size bowl, on medium speed.
  • beat cream cheese til smooth.
  • On low speed beat in flour, sugar and vanilla til blended.
  • Add milk; beat til smooth.
  • With tablespoon, make a depression or dimple in top of brownie batter.
  • With another tablespoon, drop a dollop of cream cheese mixture into the dimple.
  • Continue to make and fill dimples over the top in an uneven pattern until there are lots of them.
  • Bake in 350 degrees oven 30 minutes or until firm to touch and set.
  • Let cool in pan on wire rack for 15 minutes.
  • Using foil, remove brownie from pan to rack.
  • Let cool about 2 hours before cutting.

1/3 cup vegetable oil
1/2 cup boiling water

1/3 cup vegetable oil
1 1/3 cups all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt

Steps:

  • Preheat oven to 350.
  • Grease and flour 9x13 inch pan.
  • In a large bowl, stir together the cocoa and baking soda, add 1/3 c veg oil and boiling water. Mix until well blended and thickened.
  • Stir in the sugar, eggs, and remaining 1/3 c veg oil. Mix together.
  • Finally add the flour, vanilla, and salt. mix just until all of the flour is absorbed.
  • Spread evenly in prepared pan.
  • Bake for 35 to 40 minutes, or until toothpick inserted comes out clean. Allow to cool before cutting.
