1-1/2 cup butter (softened)
3 cups sugar
5 large eggs (room temperature)
2 tbsp lemon juice
1 tsp vanilla extract
3 cups all-purpose flour
3/4 cup 7 Up
1-1/2 cup confectioner sugar
1 tbsp lemon juice
1 tbsp 7 Up
1/2 tsp lemon zest

Steps:

  • Preheat oven to 350 F. Grease and flour a 10-in. fluted or plain tube pan. In a large bowl, cream butter and sugar until light and fluffy. Add 1 egg at a time, beating well after each addition. Beat in lemon juice and vanilla. Add flour alternately with 7 Up, beating well after each addition.
  • Transfer batter to prepared pan. Bake until a toothpick inserted in centre comes out clean, 65-75 minutes. Cool in pan 20 minutes before removing to a wire rack to cool completely.
  • In a small bowl, mix confectioners' sugar, lemon juice and enough 7 Up to reach desired consistency. If desired, stir in zest. Drizzle over cake.

1 (18 1/4 ounce) lemon supreme cake mix
1 (3 1/2 ounce) pineapple instant pudding
2/3 cup vegetable oil
4 eggs
10 ounces carbonated lemon-lime beverage
1/2 cup margarine
1 1/2 cups sugar
1 (15 ounce) can crushed pineapple, small
2 tablespoons flour
angel flake coconut, 1 can
2 eggs

Steps:

  • Empty lemon supreme cake mix and instant pineapple pudding into a large mixing bowl.
  • Add oil and eggs.
  • Beat about 2 minutes.
  • Add 7-Up and mix until well blended.
  • Pour into a greased and floured cake sheet pan.
  • Preheat oven to 350 degrees Fahrenheit.
  • Bake 35 to minutes or until done.
  • While still hot spread with Icing.
  • ICING:.
  • Cook margarine, sugar, pineapple, flour and eggs until thick.
  • Add coconut and blend well.
  • Spread over cake while both are still warm.

1 cup butter, softened
1/2 cup shortening (Crisco is good)
3 1/2 cups sugar, divided
3 cups all-purpose flour
1 1/4 cups 7-up, soda divided
1 teaspoon almond extract
1 teaspoon vanilla
1/2 teaspoon salt
5 large eggs

Steps:

  • Set oven to 300 degrees F.
  • Grease and flour a 10" tube pan.
  • In a large bowl combine butter, shortening, 3 cups sugar (use only 3 cups sugar) vanilla and almond extract; beat using an electric mixer until light and fluffy (about 5 minutes).
  • Sift the flour and salt together.
  • Add eggs, 7-up, and the flour mixture to the butter mixture, using the following directions:.
  • This method must be followed; add 1 egg in at a time; then add a bit of Seven-Up, then a bit of the flour mixture, then a bit more of Seven-Up; repeat until all the eggs, flour mixture and 1 cup Seven-Up is used up (you will use the remaining 1/4 cup for glaze).
  • Spoon mixture into prepared baking pan.
  • Bake at 300 degrees for 1 hour and 40 minutes, or until cake tests done.
  • Cool in pan on a wire rack for 10 minutes.
  • Remove from pan.
  • Mix the remaining 1/2 cup sugar and the 1/4 cup Seven-Up soda.
  • Spread the glaze mix over cake.

Steps:

  • Preheat the oven to 325 degrees Fahrenheit.
  • Spray a 10-inch Bundt or tube pan with nonstick cooking spray. [NOTE: Don't skip this step unless you like digging your cake out of the pan! I swear by Baker's Joy Non-Stick Baking Spray with Flour and recommend a smoother Bundt pan for less chance of sticking.]
  • In the bowl of a stand mixer or with a hand mixer, cream together the butter and granulated sugar for 5 to 7 minutes, until light and fluffy. Add the eggs, one at a time, scraping down the sides of the bowl after each addition. Add the lemon zest, lemon extract, and vanilla extract and mix until combined. Add the flour one-third at a time and mix on low speed, alternating with ¼-cup portions of the lemon-lime soda, mixing well after each addition.
  • Pour the batter into the prepared pan and bake for 1 hour to 1 hour 15 minutes, until a toothpick inserted in the center comes out clean. Let cool for 30 minutes, then invert onto a wire rack and lift the pan off of the cake. Let the cake cool on the rack.
  • While the cake cools, make the 7-Up glaze (see recipe below).
  • Using a 6-inch wooden skewer or toothpick, poke holes in the top of the cooled cake. Slowly spoon the glaze over the cake, letting it run into the holes and over the surface. Set the cake aside for 10 minutes before serving to let the glaze absorb into the cake and give it a lightly lacquered finish.
  • 7-Up Glaze: In a small bowl, stir together 1 cup of confectioners' sugar, 2 tablespoons of fresh lemon juice, 2 tablespoons of 7-Up, and 1 teaspoon of grated lime zest until smooth.

My mother has been making this cake since I was a little girl and now I make it too. I receive many requests for it at work and for family parties. It is moist and dense. When changing the oven temperature from 350* to 300*, open the oven door briefly to allow some heat to escape so the oven will adjust more quickly to the lower temp. As an added treat, you can sprinkle it with confectioner's sugar or drizzle w/ a lemon glaze, however it is very yummy as is. My dad loves it the next day toasted in the toaster and spread with some butter.

5 - eggs
2 cup(s) flour
1 teaspoon(s) baking powder
1 cup(s) 7-up
1 tablespoon(s) lemon juice
2 teaspoon(s) vanilla
1 cup(s) confectioners' sugar
0 - juice of one fresh orange, remove seeds

Steps:

  • Soften butter ( an easy way is by microwaving for 30 secs), and beat with sugar until smooth. Add eggs one at a time, beating after each addition.
  • Sift together the flour and baking powder in a separate bowl. Add alternately to creamed mixture with 7-up, ending with dry ingredients.
  • Add vanilla and lemon juice. Beat well. Bake in greased and floured tube pan (a bundt pan or several bread loaf pans work as well) at 325 degrees for 1 hour.
  • Make glaze mixture with confectioners sugar and orange juice and spoon over cake while still warm. As a tip when making the glaze, put the 1 cup of confectioner's sugar in a small bowl start to squeeze the orange juice into the bowl and stir. The confectioner's sugar will start to thicken, and just add enough where you can use a spoon and drizzle over the cake..
