GRANDMA LORRAINE'S APPLE ANGEL FOOD CAKE
Steps:
- Place apples in large bowl with 1 can soda and 1 1/2 cups water. Let sit for 5 minutes.
- In a large skillet over medium heat melt butter. Add brown sugar, molasses, maple syrup, cinnamon and salt. Stir until sugar has dissolved and starts to simmer. Add apple brandy, pecans, raisins and apples. Reduce heat to low and let simmer for about 15 minutes or until apples are tender and liquid has reduced to a syrupy consistency.
- Slice angle food cake into wedges and top each slice with apple mixture.

- Preheat oven to 350°. Coat a 13x9-in. baking pan with cooking spray., In a large bowl, beat sugar, eggs, applesauce, oil and vanilla until well blended. - Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 pan.
- Mix pie filling and cinnamon, set aside.
- Beat flour, white sugar, milk, 1/2 cup softened butter, baking powder, salt and eggs in mixing bowl on low speed for 30 seconds. Beat on medium speed for 2 minutes.
- Pour half of the batter into prepared pan. Spoon half of the pie filling over the batter. Spread remaining cake batter over pie filling, and top with the remaining half of the pie filling.
- Mix brown sugar and nuts together and sprinkle over top of cake. Drizzle with 2 tablespoons melted butter.
- Bake at 350 degrees F (175 degrees C) for 45 to 55 minutes. Allow cake to cool 20 minutes.
- Combine confectioners sugar, 1 tablespoon butter, 3/4 teaspoon vanilla, 2 to 3 teaspoons hot water. Beat until smooth. Drizzle over cake.

- Apple Cake directions:.
- Mix sugar, oil, and eggs. Blend well.
- Sift flour, salt and soda. Hold out 1/2 cup flour mixture to dredge fruits and nuts.
- Beat dry ingredients into wet ingredients ~ add vanilla.
- Stir in apples, nuts, and coconut dredged in 1/2 cup flour (from above).
- Pour into greased and floured 10 inch tube, or large bundt pan.
- Bake at 350 degrees for 55-60 minutes. Cool and top with glaze.
- Butterscotch Glaze directions:.
- Combine salt, butter, evaporated milk, and brown sugar in saucepan over medium heat.
- Bring to a boil and cook gently (not a hard rolling boil) for 5 minutes.
- Add vanilla; stir, and pour over cooled cake.
- Makes 18-20 servings.

This traditional recipe for easy apple cake has everything you need: fresh apples, a pecan-studded spiced batter, and a heavenly praline-like frosting. Everyone will swoon when served a slice for dessert, but this cake works just as well as a brunch treat (paired with a cup of coffee!) or as a sweet snack with afternoon tea. Like most fresh apple cakes, it actually tastes better after a day or two. For this recipe, any baking apple will do; but we suggest using pink lady, granny smith, or honeycrisp apples. Get a taste of a Southern fall-favorite dessert when serving up Auntie's Apple Cake this season. Ice cream optional!

- Prepare the Cake: Preheat oven to 325°F. Coat a 10-inch tube pan with cooking spray; dust with flour. Beat eggs, sugar, oil, and vanilla with a hand mixer on medium speed about 1 minute. Stir together baking soda, salt, cinnamon, and 2 1/2 cups of the flour in a separate bowl; gradually add to egg mixture, beating on low speed until blended.
- Stir together apples, pecans, and remaining 1/2 cup flour in a bowl; fold mixture into batter. Spoon batter into prepared tube pan. Bake in preheated oven a until wooden pick inserted in center comes out clean, about 1 hour, 15 minutes. Cool in pan 15 minutes. Remove from pan; let cool until just warm, about 30 minutes.
- Meanwhile, prepare the Frosting: Cook brown sugar, butter, and evaporated milk in a saucepan over medium, stirring often, until mixture comes to a boil and sugar is dissolved, about 2 minutes. Continue cooking, stirring constantly, until mixture reaches soft-ball stage (240˚F), about 3 minutes. Remove from heat; whisk until slightly thickened, abut 1 minute.
- Drizzle Frosting over warm Cake. If desired, garnish with chopped pecans.

My friend Robin's Aunt Mary, both of whose parents were born in Hungary, was a legendary cook. This is one of her cakes--a very moist and delightful cake.

- Preheat over to 350 degrees F.
- Sprinkle apples with sugar and let stand.
- Mix beaten egg and butter.
- Sift in flour, soda, salt and cinnamon and mix very well.
- Fold into apples and make sure the apples are well and evenly coated.
- Mix in raisins and, if desired, nuts.
- Note: we use raisins which have been soaked in bourbon.
- Note 2: If using regular raisins, make sure you plump them in warm water or rum or the like, then drain before adding.
- Place in a buttered 8" x 8" square baking dish or in a buttered bundt pan and bake for about 50 minutes.
- Cool briefly on rack in pan; turn out of the pan and allow to cool to room temperature on a rack.

This recipe was originated by my aunt about 60 years ago. It can be served for a breakfast treat or for dinner with a scoop of ice cream. It took many years before she released this absolutely delicious cake recipe.

- Preheat oven to 350 degrees F (175 degrees C).
- Sift flour and salt together into a medium bowl. Cut in butter as for pie crust to pea sized pieces. Set aside.
- Put warm water and 1 teaspoon sugar in a large bowl. Add yeast. Let dissolve. Add slightly beaten egg yolks to yeast mixture.
- Add flour mixture and gently mix until mixture forms a ball. Divide in half. Use one-half for bottom and one-half for top crust. Roll out one crust to fit a 9x13 inch ungreased pan. Sprinkle tapioca over dough.
- Fill with sliced apples, piled high. Sprinkle with mixture of 3/4 cup sugar and 1 teaspoon cinnamon.
- Roll top crust to fit pan. Put top over apples, seal in around pan, tucking top under (do not flute). Do not prick.
- Bake at 350 degrees F (175 degrees C) for 45 minutes. While still slightly warm, frost with butter frosting.
