AUNT EDNA'S BANANA BREAD
I love my Aunt Edna and her banana bread recipe. I think of her every time I make it. She is 86 now and I know she would be tickled pink just knowing I shared it with all of you.

- 1. Combine dry ingredients, mix well. Add wet ingredients and mix well. Pour batter into 2 greased loaf pans.
- 2. Bake 350F for 55 minutes or until wooden pick comes out clean.
- 3. ****I had enough batter to make a small mini loaf.
MY AUNT'S BANANA BREAD
I got this recipe from one of my aunts, who got it from an old woman she met in Hawaii while stationed there. It is hands-down the very best banana bread I've ever tasted!! No extra buttering required ;)

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Stir the bananas and vinegar together in a bowl, and set aside. Cream the sugar and butter together in a large bowl until creamy and smooth, then beat in the eggs. Stir in the reserved banana mixture. In a separate bowl, stir the flour, baking soda, baking powder, and salt together until the mixture is free of lumps. Mix the flour mixture into the butter-sugar mixture until well blended, and stir in the chopped walnuts and chocolate chips. Spread the batter into the prepared loaf pan.
- Bake in the preheated oven until lightly browned and a toothpick inserted into the center of the loaf comes out clean, 50 to 60 minutes. Let cool in pan about 5 minutes, then turn out onto a wire rack.

A dense cinnamon raisin bread that the Family Loves! Aunt Itsy makes these for Christmas gifts. Great spread with cream cheese or butter.

- Preheat oven to 325.
- Mix dry ingredients.
- Add eggs and oil.
- Place pork n beans and water in food processor or blender and process until smooth.
- Add to above ingredients.
- Fold in nuts and raisins.
- Bake in a greased bread loaf pan for 1 hour. (toothpick inserted in middle comes out clean).

AUNT EDNA'S DILL PICKLES
Aunt Edna's pickles always turn out right, and are delicious! Several in the family could eat a whole jar or more if you let us! Eat in a minimum one week, though more than two weeks is recommended.

Steps:
- How many cucumbers? Who knows. Obviously lots.
- Wash cukes and rub off spines.
- Arrange in sterilized jars, add dill, garlic, and a few sliced carrots, if using.
- Bring water, vinegar, salt, and sugar to a boil and pour into jars.
- Seal jars (by hand) then immerse jars in hot water bath for a few minutes to seal.

- Preheat oven to 350°F. Mash the bananas in a bowl. Add all the remaining ingredients and mix well with a wooden spoon. Bake in a buttered loaf pan until a toothpick stuck into the bread comes out clean, 55 to 60 minutes. Slice and serve.
