CORN CHOWDER
Bacon takes this classic corn chowder recipe over the top for a mouthwatering spoonful of pure flavor.

Steps:
- Cut kernels from cobs; set aside. Break cobs into thirds, and place in a medium saucepan. Add 3 cups water. Bring to a boil. Reduce to a simmer, and cook for 20 minutes to make a corn stock. Strain, discarding cobs; you should have about 2 cups.
- Meanwhile, in a medium saucepan, cook bacon over medium heat until crisp, about 10 minutes. Use a slotted spoon to transfer to a small bowl; set aside. Pour off all but 1 tablespoon of the bacon fat. To the pan, add the onion, and cook until translucent, about 5 minutes.
- Add the potato, corn kernels, 2 cups corn stock, milk, thyme, and 1 teaspoon salt. Bring to a simmer, and cook, partially covered, skimming foam as necessary, until potatoes are tender, about 10 minutes. Taste, and adjust for seasoning. Sprinkle with reserved bacon.

Steps:
- Heat the butter and 1 tablespoon olive oil in a soup pot over medium heat. Add the onion, garlic, and thyme and cook until the vegetables are good and soft, 8 to 10 minutes. Dust the vegetables with flour and stir to coat everything well. Pour in the vegetable stock and bring to a boil. Add the cream and the potatoes, bring to a boil and boil hard for about 7 minutes, until the potatoes break down (this will help to thicken the soup and give it a good texture).
- Cut the corn kernels off the cob and add to the soup. Season with salt and pepper and simmer until the corn is soft, about 10 to 12 minutes. Stir in the parsley and give it another little drink of olive oil. Ladle the soup into bowls and serve.

- 1. In a large heavy-bottom pot or Dutch oven, heat butter and olive oil over medium heat. Add the onion, celery, and pepper. Season with salt and pepper. Cook vegetables until translucent and begin to brown, about 7-10 minutes. Add potatoes, red pepper flakes (if using) and pour in a vegetable or chicken stock.Bring soup to a boil and then reduce heat to low or simmer. Cook for 10 minutes, or until potatoes are fully cooked.
- 2. Add corn and cod, and cook for 10 minutes more. Taste the chowder and adjust seasoning.
- 3. Serve warm with fresh scallions, parsley and a piece of bread.

CORN CHOWDER
This is another recipe from my sister-in-law Marie, and we have been making it for years. It is so easy and just delicious! The bacon fat gives it a great flavor.

- 1. saute onion in bacon fat for 3-5 minutes
- 2. add to this, 2 cups of whole milk, 2 cups of evaporated milk, 2 cans of creamed corn, salt, pepper and parsley flakes. I use 1 can of evaporated milk which is almost 2 cups, and I pour whole milk to make it two cups.
- 3. cook potatos separately for about 10 minutes
- 4. drain and add to chowder
- 5. simmer til ready to eat

- Preheat a heavy bottomed pot over medium high heat.
- Add bacon and cook slowly until crisp and golden, strain off fat.
- Add butter, diced onions, celery, minced garlic, fresh thyme and bay leaves.

Add the scallion bulbs, bell pepper, and celery and cook, stirring occasionally, until the vegetables start to soften, about 10 minutes.
