ASIAN TUNA SALAD
You'll love this twist on classic tuna salad. It has the most amazing flavors! Perfect for a light lunch or snack.

Steps:
- Combine the first 5 ingredients in a large mixing bowl and stir to combine.
- Next add the tamari, chili powder, cayenne, and sesame oil to taste. Sometimes I like it spicier, sometimes I like more salt, etc.
- Finally, add the cranberries and sesame seeds and serve.
- I like to eat it on a bed of lettuce or in individual romaine leaves like a tuna salad burrito. My favorite way to serve it is on top of lettuce, but you can also serve it with your favorite gluten-free bread.

- Mix tuna, cranberries, carrot, green onions, cilantro, sesame seeds, ginger, ground chile pepper, and kosher salt together in a large bowl.
- Whisk mayonnaise, chile paste, sesame oil, soy sauce, and honey together in a separate bowl; add to tuna mixture and stir to coat.

Steps:
- Whisk the dressing ingredients in a medium bowl until blended.
- Press any excess liquid from the tuna. Add the tuna and shredded carrots to the dressing. Toss to coat.
- Place the lettuce cups on a platter or plate. Stuff each lettuce leaf with equal amounts of the ginger dressed tuna. Top with toasted sesame seeds and green onions.Serve immediately.

KETO TUNA SALAD CUPS

- Cover the eggs with about an inch of water in a medium pot. Bring to a boil, remove from the heat, cover and let stand for 8 minutes. Drain and submerge in ice water. When cool enough to handle, peel the eggs and chop.
- Meanwhile, cook the bacon in a large nonstick skillet over medium heat until golden and crisp, about 4 minutes per side. Remove to a paper towel-lined plate. Crumble into bite-size pieces.
- Whisk together the mayonnaise, sour cream, lemon zest and juice, celery, reserved tuna oil, three-quarters of the scallions, 1/4 teaspoon salt and several grinds of pepper in a medium bowl. Add the tuna and three-quarters of the bacon and egg and gently fold together (do not overmix). Season with additional salt and pepper if needed.
- Sprinkle the tomato slices with salt and pepper.
- Double-up the lettuce leaves and fill each with some tuna salad. Tuck in a tomato slice. Sprinkle with reserved scallions, bacon and egg.

ASIAN CHICKEN LETTUCE CUPS
Steps:
- Make the sauce: Combine all the ingredients in a bowl and set aside. Stir again just before using.
- Prepare the cups: Heat 2 tablespoons canola oil in a skillet over high heat. Add the chicken and stir-fry until cooked through, about 3 minutes. Add the carrot, celery, bell pepper, peas and red onion and stir-fry about 3 minutes. Add the ginger, garlic, sprouts and shiitakes. Add 1/4 cup of the prepared sauce and cook until thickened, about 30 seconds, scraping up any browned bits. Transfer the stir-fry to a bowl; top with the scallions and peanuts.
- Wipe out the skillet. Heat the remaining 4 tablespoons canola oil over high heat. Fry the wontons until golden and crisp, about 15 seconds per side. Transfer to paper towels and season with salt.
- Fill the lettuce leaves with the stir-fry. Sprinkle with the sesame seeds. Crumble the wontons on top or serve alongside. Serve with the remaining sauce.

- Make the spicy mayo by mixing the sriracha, mayo and Asian red chili paste together; refrigerate to chill.
- Empty drained tuna into a large bowl. Break up tuna into large chunks.
- Add 2/3 of the green onions to the tuna; reserve the rest for garnish.
- Add the jalapeno, red bell pepper, red onion, shredded carrot, Thai basil and cilantro to the tuna and gently mix together, being careful not to break the tuna apart too much.
- In a small bowl whisk together lime juice, sesame oil, Asian chili paste, sesame seeds, sugar, garlic, salt, and pepper. Pour dressing over tuna and mix carefully.
- Spoon tuna mixture onto lettuce leaves and top with Spicy Mayo and reserved green onions.
- Garnish with cilantro or Thai basil if you like.
