ASIAN-STYLE TURKEY MEATLOAF
A twist on classic meatloaf, this Asian-Style Turkey Meatloaf has crunchy water chestnuts, umami mushrooms, and loads of flavor from herbs and spices like cilantro, ginger, and sriracha. Modifiable to your family's preferences, this recipe is also freezer friendly and can be made ahead.

- To Make Glaze: Combine rice vinegar, soy sauce, honey, and sriracha in a small saucepan and bring to a boil. Immediately reduce heat to simmer sauce for 2 to 3 minutes until sauce coats the back of a spoon. Turn off heat and set aside.
- Preheat oven to bake at 375 degrees F. Line a 5x10-inch loaf pan with parchment paper and set aside.
- Heat olive oil in a large sauté pan over medium-high. When oil is hot, add onions and peppers and sauté 1 to 2 minutes. Add mushrooms and sauté another 5 to 7 minutes. Add water chestnuts, ginger, and garlic and sauté 1 minute more. Remove pan from heat and set vegetables aside.
- In a large bowl, combine the turkey, cilantro, soy sauce, sesame oil, and sautéed vegetables. Transfer meatloaf mixture into the loaf pan.
- Brush prepared glaze over top of meatloaf. Bake for 1 hour and 15 minutes, brushing top of loaf with glaze once or twice.
- Transfer loaf to lined baking sheet and bake another 15 minutes, until thermometer registers 165 F. Let rest about 5 minutes before slicing. Serve with extra honey-soy glaze drizzled on top.

- Preheat the oven to 425 degrees F. Line a baking sheet with foil.
- Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
- Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined. Form the mixture into a 10-by-5-inch loaf on the foil-lined baking sheet. Coat the top and sides with the ketchup.
- Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.
ASIAN STYLE MEATLOAF
This is the most moist, fabulous tasting meatloaf--everyone loves it! The Hoisin sauce is available in the Oriental Food Section of the grocery store... it is like cross between soy and ketchup, and makes a wonderful glaze for this moist meatloaf. We love this dish. Very moist. Serve with rice and steamed broccoli. A wonderful dinner. Leftovers make great sandwiches.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together the beef, pork, bread crumbs, eggs, onion, and celery. Season with 3 tablespoons soy sauce, ginger, and 2 tablespoons hoisin sauce. Pat mixture into a shallow 2 quart baking pan.

TURKEY MEATLOAF WITH KOREAN FLAVORS

- Preheat oven to 400 degrees F.
- Toast sesame seeds until golden in a hot dry nonstick skillet. Set aside to cool. Mix the ground turkey with the remaining ingredients in a medium size bowl, add 2 tablespoons sesame seeds. Form a small meatball sized patty and saute on stove top; taste and adjust spices and herbs. Make a loaf out of the meatloaf mixture, season with salt and pepper. Prepare a roasting pan by spraying with cooking spray. Place the meatloaf in the roasting pan and roast in the oven for about 30 minutes, or until the internal temperature reaches 155 degrees F on an instant-read thermometer. Remove from oven and allow the meatloaf to sit for 15 minutes to absorb all the juices and flavors.
- While the meatloaf is sitting combine the ingredients (including the remaining 2 tablespoons of toasted sesame seeds) for the dipping sauce and whisk to combine all the flavors and to dissolve the honey.
- Slice the meatloaf into 1-inch slices and drizzle the dipping sauce over it.

- In a big bowl, combine all the ingredients EXCEPT 2 cups of rice, the glaze, and the

- Heat oven to 375 degrees. Heat 2 tablespoons oil in a large skillet, add 2 tablespoons panko and sauté until panko is golden. Remove and reserve.
- Place walnuts, mint, parsley and basil in a food processor. Pulse until all are finely chopped. Remove and reserve. Without washing processor, turn on and drop garlic in through feed tube and process until minced. Stop, place onion and green pepper in processor and pulse until finely chopped.
- Add remaining oil to skillet and sauté garlic, onion and green pepper mixture over medium heat until soft but not brown. Remove from heat and stir in walnut mixture. Mix remaining panko with 1/2 cup water to soften and add. Place turkey in a large bowl, add contents of skillet and mix until well blended. Season with salt (at least 1 teaspoon) and pepper. Pack into a 9-by-5-by-3-inch loaf pan. Spread sautéed panko on top and bake 1 hour 20 minutes.
- Serve hot or at room temperature, with yogurt on the side, or chill and serve cold, in pita with yogurt and cucumbers.
