1/4 cup reduced-calorie or regular mayonnaise
2 tablespoons sour cream
2 cloves garlic, minced
2 teaspoons minced fresh ginger
1 tablespoon fresh lime juice
1/4 teaspoon salt
1/3 cup low-sodium soy sauce
3 tablespoons honey
1 tablespoon rice vinegar
1 tablespoon cornstarch
1 tablespoon plus 1 glass chilled Sutter Home Sauvignon Blanc
1 egg
2 tablespoons aioli
2 tablespoons sour cream
1 tablespoon fresh lime juice
1 teaspoon Asian hot chili sauce or bottled hot sauce
1 1/4 pounds skinless salmon fillets, chopped finely
2 green onions, thinly sliced
2 tablespoons chopped fresh mint leaves
2/3 cup bread crumbs
1 teaspoon salt
Vegetable oil
4 sesame buns, split
1/2 cucumber, peeled, seeded, and julienned
Radish or soy bean sprouts for garnish, optional

Steps:

  • Prepare grill with a medium fire for direct-heat cooking. In a small bowl, combine aioli ingredients. Reserve 2 tablespoons for burgers and chill remainder until serving time.
  • Combine soy sauce, honey, and rice vinegar in a small, heavy saucepan. Mix cornstarch and 1 tablespoon wine in a small bowl until smooth and add to soy mixture. Place over grill and stir mixture until glaze boils and thickens slightly, about 3 minutes. Meanwhile, sip a glass of Sutter Home Sauvignon Blanc, saving remainder for grilling. Set glaze aside. In a large bowl, whisk together egg, aioli, sour cream, lime juice, and chili sauce. Stir in salmon, onion, mint, bread crumbs, and salt to combine. Coat hands with vegetable oil and form 4 patties. Brush grill with vegetable oil and grill patties until browned on bottom, about 3 minutes. Turn patties and brush cooked side with soy glaze. Cook 3 minutes, turn, and brush other side with glaze. Grill just until done, about 4 to 6 minutes, turning and brushing with glaze frequently. During the last few minutes of cooking toast buns, cut side down, on outside of grill. Place cucumber strips on bottom half of bun, top with burgers, aioli, and bun tops. Garnish with sprouts, if desired.

2 green onions, including 2 inches of green tops, very thinly sliced

1 teaspoon kosher salt
1 1/2 tablespoons fresh lemon juice
2 tablespoons soy sauce
1/2 cup cracker meal
2 large eggs, lightly beaten
2 tablespoons vegetable oil
4 slices sargento deli style sliced provolone cheese
4 hamburger buns with sesame seeds, split and toasted
lettuce leaves or baby spinach leaves
1/2 cup mayonnaise
1 green onion, including green tops, very thinly sliced
1 teaspoon fresh lemon juice
2 teaspoons soy sauce

Steps:

  • For salmon burgers, in a food processor fitted with the metal blade, pulse the salmon until coarsely ground, scraping down the sides of the work bowl once or twice. (Be careful; it's easy to go from chopped to a mashed paste in seconds!) Transfer the salmon to a medium bowl. Add the ginger, garlic, green onions, cilantro, salt, lemon juice and soy sauce. Using a rubber spatula, mix to combine. Mix in the cracker meal; add the eggs. Stir to combine.
  • Dividing the salmon mixture evenly, form into 4 1-inch-thick patties. Refrigerate for at least 20 minutes before cooking. (The patties can be prepared up to 8 hours ahead. Transfer to a covered container and refrigerate.).
  • In a large, heavy skillet, preferably cast-iron, heat the oil over medium-high heat and swirl to coat the pan. (You can also use a grill pan.) Add the salmon patties and cook until golden brown on one side, about 3 minutes. Turn and cook until opaque throughout and golden brown on the other side, about 3 minutes longer. Top each burger with a slice of cheese. Serve the salmon burgers on the toasted buns with the lettuce and Green Onion and Soy Sauce Mayonnaise.
  • For the Green Onion and Soy Sauce Mayonnaise, in a small bowl mix the mayonnaise, green onion, lemon juice and soy sauce until well blended. Cover and refrigerate for up to 1 day.

1 1/4 pounds center-cut salmon fillet, skin and pin bones removed
2 tablespoons dijon mustard
1 tablespoon mayonnaise
1 tablespoon lemon juice
1/2 teaspoon grated lemon zest
Pinch of cayenne pepper
2 scallions, chopped
1 cup plus 2 tablespoons panko (Japanese breadcrumbs)
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil, plus more for brushing
4 brioche buns, split
Tartar sauce and arugula, for topping

Steps:

  • Cut three-quarters of the salmon into 1/4-inch pieces. Put in a large bowl. Cut the rest of the salmon into chunks; transfer the chunks to a food processor along with the mustard, mayonnaise, lemon juice, lemon zest and cayenne. Pulse to make a paste. Add the pureed salmon mixture to the bowl with the diced salmon. Add the scallions, 2 tablespoons panko, 1/2 teaspoon salt, and black pepper to taste. Gently mix until just combined.
  • Line a baking sheet with parchment paper and brush with olive oil. Divide the salmon mixture into 4 mounds on the parchment paper. With damp hands, pat into 4-inch-wide, 3/4-inch-thick patties. Cover loosely with plastic wrap and refrigerate at least 30 minutes.
  • Preheat the broiler. Spread the remaining 1 cup panko on a plate. Press both sides of the salmon patties in the panko. Heat the olive oil in a large nonstick or cast-iron skillet over medium-high heat. Add the patties (in batches if necessary) and cook until browned on the bottom, 3 to 4 minutes, adjusting the heat if necessary. Turn and cook until the other side is browned and the patties feel springy in the center, 3 to 4 more minutes. Transfer to a paper towel-lined plate to drain; season with salt.
  • Meanwhile, arrange the buns, cut-side up, on a broiler pan and broil until toasted, 1 to 2 minutes. Serve the patties on the buns; top with tartar sauce and arugula.

Steps:

  • Preheat grill over medium-high heat.
  • Make the slaw. In a large bowl, combine the green cabbage, red cabbage, carrots, orange juice, ginger, garlic powder, soy sauce, sesame oil and pepper. Cover and chill.
  • In a large bowl, combine the salmon, green onions, lime juice, eggs, garlic, pepper flakes, ginger, sesame oil, pepper, brown sugar, soy sauce, and breadcrumbs. Form into 4 patties. Lightly sprinkle both sides of the patties with salt.
  • Grill 4 minutes per side, or to desired doneness. Assemble the burgers. Give the Asian slaw a stir. Place the salmon burgers on the hamburger buns, top with the slaw and sliced tomato.

½ red bell pepper, minced
¼ cup minced sweet onion
¾ cup bread crumbs

400 g chicken breasts or 400 g chicken thighs
1 large daikon radishes or 2 large turnips
1 Chinese cabbage
2 large leeks
2 medium carrots
1/4 cup fresh trefoil (mitsuba) or 1/4 cup fresh coriander leaves
15 snow peas
8 halved dried shiitake mushrooms
8 mochi rice cakes
3/4 cup soy sauce

Steps:

  • Soak shiitake in a bowl of lukewarm water.
  • Chop daikon and chinese cabbage in 3 inch pieces.
  • Cut leeks in 2 inch diagonal pieces.
  • Cut carrots thinly in 2 inch long diagonal pieces.
  • Roughly chop mitsuba leaves.
  • Top and tail snow peas.
  • Cut chicken into 2 inch pieces.
  • In a large pan, boil 10 cups or so of water.
  • Add dashi (unless you have dried kelp, in which case boil the kelp to make dashi manually, then remove after 5 mins).
  • Add shiitake and the water in which they were soaking.
  • Add vegetables that take longer to cook first: daikon, radish.
  • Proceed to add the rest of the vegetables and chicken, leaving peas and mitsuba till last minute so they don't lose their colour.
  • After 15 minutes or so, add mochi and soy sauce.
  • Once mochi is soft and gooey, the zoni is ready to serve.

1 egg

6 sesame rolls or 6 poppy seed rolls, toasted

6 slices tomatoes
6 tablespoons relish (I used Zucchini Relish Zesty Zucchini Relish )

Steps:

  • Mix wasabi with lemon juice mix in mayonnaise and chill till ready to use.
  • Place onion in a food processor with blade attachment and pulse to mince onion.
  • With processor running add garlic chives and garlic and follow with the remaining ingredients in order as stated. When you get to the salmon start to pulse till all is coarsely chopped as a ground beef and all ingredients are mixed. Form 6 patties and lightly spray olive oil on them.
  • Preheat grill to very hot.
  • Place patties on grill and reduce heat to medium. Grill for 3 minutes and flip grill for 4 more minutes.
  • Spread 1/6 of the mayo on the bottom of each roll, top with lettuce, tomato, burger, and spread relish on burger. Top with bun and enjoy.
