1 14-ounce can artichoke hearts in water, drained and patted dry
1/2 cup extra-virgin olive oil
1 pound small tomatoes, quartered
1 1-pound ball fresh mozzarella cheese, sliced
8 thin slices prosciutto (about 1/4 pound)
1 cup fresh basil leaves
1/2 cup green olives (preferably Sicilian), smashed and pitted

Steps:

  • Mix the flour with 1/4 teaspoon each salt and pepper in a large bowl. Add the artichoke hearts and toss. Heat the olive oil in a large skillet over high heat. Add the artichoke hearts and fry until golden brown and crisp, about 3 minutes per side. Transfer to a paper towel-lined plate to drain. Remove the skillet from the heat and reserve the frying oil.
  • Season the tomatoes with salt and pepper. Divide the mozzarella, tomatoes, prosciutto and fried artichokes among plates. Top with the basil and olives and drizzle with some of the reserved frying oil.

1/4 cup soy sauce
1/2 teaspoon dried thyme

1/2 pound fresh mushrooms, quartered
1 can (14 ounces) water-packed artichoke hearts, rinsed and drained
12 cherry tomatoes, halved
5 green onions, chopped
2 heads Bibb lettuce, separated into leaves
2 hard-boiled large eggs, cut into wedges

Steps:

  • In a jar with a tight-fitting lid, combine the first seven ingredients; set aside. , Grill or broil steak until a thermometer reaches at least 145° (medium-rare). Slice across the grain into thin strips. , In a bowl, combine the steak, mushrooms, artichokes, tomatoes and onions. Shake dressing; pour over steak mixture and toss to coat. Cover and refrigerate for at least 4 hours, stirring occasionally. , Line a serving platter with lettuce; top with steak mixture and dressing. Garnish with eggs.

I have seen this recipe on my favorite channel (food network) and it looked so colorful with all the veggies , that I decided to make it in the same day for my parent in laws together with Acharuli xachapuri (Georgian Cheese bread) that made a great combination. Thank God, all went well and they loved both dishes:). I made some changes in the original recipe as always and it worked pretty well. The saltiness of capers and marinated peppers and artichokes is balanced with nice chunks of fresh mozzarella and little pieces of celery give crunch and great texture to the softness of those veggies. Here it is my artichoke salad with basil pesto dressing and grilled chicken breasts.

1/2 lb artichoke heart, cleaned and cut into quarters, you can use frozen package
1/2 cup capers
3 -4 pieces marinated roasted red peppers
1 cup fresh mozzarella cheese (cut into cubes)
10 cherry tomatoes
2 stalks celery
2 grilled chicken breasts

Steps:

  • 1. place artichoke hearts into the pan, drizzle with some olive oil and roast them in the oven for about 20-25 minutes.
  • 2. sprinkle salt and pepper on the chicken breasts and grill or pan roast them, let them cool down little bit and then slice into bite size pieces.
  • 3. cut cherry tomatoes into halves.
  • 4. slice the peppers into stripes.
  • 5. chop celery sticks into small cubes.
  • 6. cut mozzarella into 1 inch size pieces.
  • 7. Mix all the ingredients in the large bowl, add capers, salt, pepper and pesto, stir well and let it sit for about 30 minutes in the fridge so that every ingredient absorbs the flavor.

  • • ½ cup of olive oil.
  • • 1 table spoon of viniger.
  • • ½ lemon juice.
  • • ½ cup of pine nuts or walnuts.

  • • chop garlic and basil roughly and place them in the food processor.
  • • add walnuts and keep processing.
  • • add lemon juice, vinegar, oil, salt and pepper.
  • • after all ingredients are well incorporated and mixed, turn the food processor off and check the taste.
  • • If you are happy with the taste, toss pesto over the salad mix and let it sit for about 30 minutes to incorporate the flavor.

I put this together for dinner tonight, and it was so good! It was very hearty and filling, with bread and cheese as an accompaniment. Amounts are just estimated guidelines. Use a good quality Dijon mustard, ideally a strong, but not too vinegary, mustard. Prep time is an estimated time for all the chopping etc listed in the ingredients. You can prepare the vegetables, steak, and vinaigrette in advance and refrigerate until ready to use--I'd say use the same day, though, or there will be some loss in quality.

2 -4 tablespoons olive oil

1/2 large shallot, minced finely
4 tablespoons red wine vinegar

1/2 lb tiny new potatoes, boiled, drained, and cooled to room temperature (optional)

Steps:

  • Brush steak with olive oil and season to taste with salt and pepper. Grill over medium-high heat to a little rarer than desired doneness (around 10-15 minutes for rare). Set steak aside.
  • In a pint size mason jar (or other non-reactive container with a tight lid), combine shallots and red wine vinegar. Let sit for 5-10 minutes, then add chives, salt & pepper to taste, and mustard. Pour in olive oil, close lid, and shake vigorously until emulsified. Taste and correct as needed.
  • Cut steak into bite-size pieces.
  • To assemble salad, place 2-3 cups of salad greens on each of 4 large plates. Place cucumber, bell pepper, artichoke hearts, and red onion rings on top. Divide steak among salads. Top with chopped tomato. If using potatoes, place around edge of salad. Drizzle vinaigrette over salad. If desired, top with blue cheese crumbles.

1 tbsp dried pink peppercorn , crushed with a rolling pin
1 tbsp olive oil , plus a drizzle
250g grilled baby artichoke heart , drained and halved if whole

balsamic vinegar (look for a good one, aged for about four years)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Place a non-stick frying pan over a medium heat, season the beef with salt, then rub in the crushed peppercorns. Add the oil to the pan, then brown the steaks for 1 min each side. Place on a roasting tray and put in the oven for 5-8 mins. Remove, wrap tightly in foil, then leave to rest while making the salad.
  • Arrange the artichoke pieces on two serving plates. Put the salad leaves in a mixing bowl with the peppers and tomatoes, drizzle in a little olive oil, season, then arrange on top of the artichokes. Drizzle some balsamic over the top. Remove beef from the foil, slice, then place on the plate and serve.

1 lemon, halved
4 tablespoons butter
4 tablespoons olive oil
2 tablespoons white wine
2 tablespoons lemon juice

Spicy Smoked Tomato Mayonnaise, recipe follows
2 tomatoes, halved
2 pasilla peppers, halved
1/4 cup garlic cloves
1/2 pound onions, large, sliced thin
1/2 teaspoon cayenne pepper
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon salt
2 cups mayonnaise

Steps:

  • Preheat an outdoor grill to medium heat.
  • Break off the artichokes' small outside leaves. Cut off the top with a knife and trim the sharp points of the leaves with scissors, rubbing with cut lemon as you go to avoid discoloration. Squeeze the lemon halves into a bowl of cold water, soak the artichokes for 10 minutes, then wash with cold water to remove sand.
  • Place artichokes in a large steamer insert over simmering water and steam until heart is tender, about 25 to 35 minutes depending upon size. Allow to cool. Cut in half lengthwise and remove choke with a spoon.
  • Meanwhile, in a small saucepan over medium heat, melt the butter with the olive oil. Stir in the white wine and lemon juice, keep warm.
  • Grill the artichokes, basting with the butter mixture, until until golden on the surface and heated through, about 5 to 10 minutes. Season with salt and pepper. Serve with the Spicy Smoked Tomato Mayonnaise.
  • Special equipment: smoker/dehydrator
  • Chef's Note: If you do not have access to a smoker/dehydrator, you can substitute 4 sun-dried tomatoes and 2 teaspoons ancho or pasilla powder for the tomatoes and pasillas, eliminating the tomatoes and pasilla peppers from the recipe.
  • Dry the tomatoes and pasilla peppers in an oak smoker/dehydrator overnight.
  • Preheat an outdoor grill, preferably wood fired with oak wood, for indirect heat cooking.
  • Wrap garlic and onions loosely in 2 separate foil packets and roast/grill over indirect heat until they are soft, being careful not to burn them. The garlic should take about 1 to 1 1/2 hours; the onions should take about 30 to 45 minutes.
  • In a food processor, puree the smoked pasilla peppers and tomatoes with the garlic and onions. Add the cayenne, chili powder, paprika and salt. Mix in the mayonnaise. Leftover mayonnaise will keep, refrigerated, for up to 3 or 4 days.

Place the cleaned artichokes in a medium saucepan and cover with cold water. Add the vinegar, bay leaves, and about 1½ tablespoons salt; the water should be just slightly less salty than the sea. Place a piece of parchment paper cut to fit just inside the pan over the artichokes, pressing it down so it touches the water. Bring to a boil over medium-high heat. Reduce the heat and simmer until the artichokes can be easily pierced through the heart with a knife, about 30 minutes. Remove the pot from the heat, remove the parchment from the pan, and let cool completely.
  • Bring a pot of salted water to a boil and prepare a bowl of ice water. Snap the fibrous ends off the asparagus. Add the asparagus to the boiling water and cook until slightly tender but still with good bite, about 1 minute. Drain the asparagus and plunge it into the ice water to stop the cooking and retain the green color. When cool, dry the asparagus on a clean kitchen towel. Cut on a slant into 1½-inch pieces. Set aside.
  • Juice the remaining lemon and mix with the shallot in a small bowl. Set aside to macerate for 10 minutes. Add a pinch of salt and, whisking constantly, slowly pour in the olive oil. Set the dressing aside.

Stir to combine. In a small bowl, combine the seasoned rice vinegar, vegetable oil, fish sauce, lime juice, sugar and crushed red pepper flakes and stir until sugar is dissolved.   • Once the artichokes are tender, use tongs to pull from the hot water and place upside down on a platter to drain. The leaves will have some of the mustard and peppercorn seeds stuck in between them, and that's okay.
