2-1/2 pounds medium red potatoes, cut into 1-1/2-inch cubes
2 packages (8 ounces each) frozen artichoke hearts
8 garlic cloves, halved
3 tablespoons olive oil
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup lemon juice
2 tablespoons minced fresh parsley
1 teaspoon grated lemon zest

Steps:

  • Place the potatoes, artichokes and garlic in a 15x10x1-in. baking pan coated with cooking spray. Combine the oil, salt and pepper; drizzle over vegetables and toss to coat., Bake, uncovered, at 425° for 35-40 minutes or until tender, stirring occasionally. Transfer to a large bowl. Add lemon juice, parsley and lemon zest; toss to coat. Serve warm.

I found this one web surfing and thought it sounded intersting, since I love both artichokes and potatoes. ;) It didn't specify the size of can for the artichokes, but this is what I found for average non-marinated - adjust to taste. ;)

4 large idaho potatoes, peeled and quartered
1 (14 ounce) can artichoke hearts (non-marinated)
3 tablespoons butter
1/4 cup milk
salt & pepper

Steps:

  • Boil potatoes for 15-20 minutes or until potatoes are tender when pierced with a fork; Drain.
  • In a large mixing bowl, pureé artichoke hearts with half the butter and milk, using a hand blender or mixer.
  • Add potatoes and remaining butter and milk and mix until smooth.
  • Add salt and pepper to taste.
  • Enjoy! ;).

500g large red potatoes chopped into 2.5cm chunks
4 tbsp butter
4 tbsp milk
2 tbsp chopped flat-leaf parsley
400g tin artichoke hearts , drained and sliced
1 tbsp olive oil
2 garlic cloves , crushed

Steps:

  • Place the potatoes in a large saucepan and cover with cold salted water. Bring to the boil and cook for 15 mins or until tender, then drain. Return to pan and add butter, milk and some seasoning. Mash until light and fluffy. Stir in the parsley.
  • While the potatoes are cooking, pat the artichoke slices dry with kitchen paper. Heat the olive oil in a medium frying pan. Cook the garlic for 1 min, then add the artichoke hearts and some seasoning. Cook for 5 mins until golden and crisp. Mash the cooked artichokes into the potatoes, reserving a few for the top, and warm through again on low heat until piping hot. Serve with the rest of the artichokes on top.

3 cups peeled and diced Jerusalem artichokes
1/2 cup heavy cream
2 tablespoons unsalted butter
1/2 teaspoon salt
1/4 teaspoon ground white pepper

Steps:

  • Place the Jerusalem artichokes in a 2-quart saucepan, and cover with water. Set over high heat and bring to a boil. Once the water comes to a boil simmer for 15 minutes, or until easily pierced with a knife. Remove from the heat, drain, and place the Jerusalem artichokes in a food processor with the heavy cream, butter, salt and white pepper. Process for 10 to 15 seconds, or until a smooth puree is formed. Remove from the bowl of the food processor, and place in a heat resistant bowl set over a water bath to keep warm for serving.

1 pound russet potatoes, peeled, cut into 2-inch pieces

3 tablespoons butter

Steps:

  • Combine Jerusalem artichokes and potatoes in large pot. Pour enough cold water over to cover; add 1 tablespoon coarse salt. Bring to boil; reduce heat and boil gently until all vegetables are tender when pierced with knife, about 18 minutes. Drain, reserving cooking liquid. Return vegetables to pot. Mash vegetables, adding reserved cooking liquid by 1/2 cupfuls to moisten until chunky mixture forms. Stir in butter. Season to taste with salt and pepper. Transfer to bowl and serve. DO AHEAD: Can be made 2 hours ahead. Transfer mash to large heatproof bowl. Let stand at room temperature. Rewarm in same bowl set over simmering water, stirring occasionally, before serving.

1 (15 ounce) can artichoke hearts in water, drained
1 teaspoon minced garlic, or to taste
½ cup hot milk
¼ cup softened butter
salt and pepper to taste

Steps:

  • Place potatoes in a large pot with enough water to cover. Bring to a boil over high heat, then reduce heat to medium-low. Cover and simmer until tender, 15 to 20 minutes; drain.
  • Meanwhile, puree the artichokes and garlic with the milk until smooth.
  • Place drained potatoes in a mixing bowl and mash with a potato masher until smooth. Stir in softened butter and artichoke puree until the butter has melted. Season to taste with salt and pepper.

This robust Provençal ragout is more of a cool weather recipe than Tuesday's ragout with peppers and tomatoes.

Number Of Ingredients 14

1 ounce (about 1 cup) dried porcini mushrooms
1 lemon, for trimming the artichokes, plus fresh lemon juice for seasoning
12 baby artichokes, or 6 medium or large artichokes
2 tablespoons extra virgin olive oil
1 large onion, thinly sliced
4 to 5 large garlic cloves, sliced
1 tablespoon tomato paste
1/2 cup dry white wine
1 bay leaf
A generous sprig of thyme
Salt
freshly ground pepper
1 pound small potatoes, scrubbed and quartered
1/4 cup chopped fresh parsley

Steps:

  • Place the mushrooms in a bowl or large Pyrex measuring cup. Bring 2 cups water to a boil, and pour over the mushrooms. Let sit 30 minutes.
  • Meanwhile, prepare the artichokes. If small, cut in half; quarter if large.
  • Place a strainer lined with cheesecloth or paper towels over a bowl, and drain the mushrooms. Squeeze the mushrooms over the strainer to extract liquid, then rinse in several changes of water to rid them of grit. Set aside. Add enough water to the bowl to make 3 cups of soaking liquid.
  • Heat the olive oil over medium heat in a large, heavy casserole or lidded nonstick skillet. Add the onion, and cook, stirring, until tender, about five minutes. Stir in the garlic and mushrooms, and cook together, stirring, until fragrant, about one minute. Add the tomato paste and cook, stirring, until it darkens and begins to caramelize in three to five minutes.
  • Drain the artichokes, and add with the potatoes. Stir together for another minute, then stir in the wine. Bring to a boil, and cook until most of the liquid is gone. Add the soaking liquid from the mushrooms, the bay leaf, thyme, salt and pepper. Bring to a simmer, reduce the heat, cover and simmer 40 minutes, until the potatoes and artichokes are tender. Uncover, turn up the heat, and reduce the liquid in the pan to thicken. Remove from the heat, taste and adjust salt and pepper. Stir in a teaspoon or more of fresh lemon juice, if desired, and the parsley. Serve hot or at room temperature.
