Provided by Sandra Lee

Categories     appetizer

Time 28m

Yield 4 to 6 servings

Number Of Ingredients 7

2 (8 1/2-ounce) cans artichoke hearts
2 large eggs
1/2 cup all-purpose flour
1/4 cup yellow cornmeal
2 teaspoons Italian seasoning
1 1/2 cups light olive oil
Salt and pepper

Steps:

  • Drain the artichokes, pat dry, and cut them in half, lengthwise. In a small shallow bowl, beat the eggs. In another bowl, mix the flour, cornmeal, and Italian seasoning.
  • In a small skillet, heat the oil on medium-high until hot. Dip the artichoke halves into the egg mixture, allowing excess to drain off, then into flour mixture, turning to coat. Drop a few at a time into the hot oil. Fry, turning once, until golden, about 6 minutes, total. Repeat with remaining artichokes. Serve immediately.

ARTICHOKE CHICKEN ( SANDRA LEE, SEMI-HOMEMADE )

Artichoke Chicken ( Sandra Lee, Semi-Homemade ) image

This recipe is from the August/September issue of Sandra Lee's magazine. It is so delicious and so unique. This is great for having company over as it is a great presentation, is tasty and is pretty easy to make. The lemon zest makes it as does the capers, spinach and bacon pieces. Oh so good. Impress the in-laws, dinner party guests or just you. Enjoy ChefDLH

CREAMY ARTICHOKE AND LEEK DIP

Creamy Artichoke and Leek Dip image

I was at my friend Kym's place yesterday and we shared some of this for lunch... it was so good, we ended up eating almost 3/4 of a box of crackers with this yummy dip! This recipe was originally from Homebasics.ca, but was altered slightly. I hope you enjoy it as much as we did!

Categories     Cheese

Time 35m

Yield 3 cups, 12 serving(s)

Number Of Ingredients 6

1 cup Hellmann's mayonnaise or 1 cup Hellmann's light mayonnaise
1 (1 7/8 ounce) package Knorr Leek mix (the recipe recommends the 1.8 oz. pkg of Knorr Cream of Leek soup mix... but 'Zaar doesn't recognize)
1 cup sour cream
1 (14 ounce) can artichoke hearts, drained and chopped
1 cup mozzarella cheese, shredded
1 -2 garlic clove, minced

Steps:

  • Mix all ingredients and spread into a 1 L casserole dish. Bake uncovered in a preheated 350ºF oven for approximately 30 minutes (or until heated).
  • Serve with sliced crusty French bread, crackers or tortilla chips.
  • (As my friend and I learned, this recipe is also wonderful served cold the next day - but we did find that it was a little oily [from the cheese], so make sure you mix it really well or drain off some of the oil if you're re-serving this.).
  • Note: I have no idea how many servings there actually are - I'm "guesstimating" 1/4 cup per person, but that's completely a guess!
