ARROZ TAPADO (RICE-ON-TOP)

A fun Peruvian dish that looks cool and is always a hit with the kids! Seasoned meat is the surprise center to the rice on top. Makes great leftovers!

2 cups uncooked white rice
4 cups water
1 egg
1 potato, peeled and cubed
1 cup vegetable oil for frying
3 small tomatoes, coarsely chopped
½ cup water
1 tablespoon vegetable oil
½ large onion, finely chopped
3 cloves garlic, chopped
1 teaspoon ground dried aji chile
½ teaspoon ground cumin
¼ teaspoon ground black pepper
2 teaspoons chopped fresh oregano
1 pound lean ground beef
2 large carrots, peeled and cubed
¼ cup frozen peas
1 tablespoon peanut butter
1 teaspoon chopped fresh cilantro
1 teaspoon chopped fresh tomato
1 teaspoon ketchup

Steps:

  • Bring the rice and 4 cups of water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes.
  • Place the egg into a saucepan, and cover with water by 1 inch. Cover the saucepan and bring the water to a boil over high heat. Once the water is boiling, remove from the heat and let the egg stand in the hot water for 15 minutes. Pour out the hot water, then cool the egg under cold running water in the sink. Peel once cold. Chop the egg and set aside in a small bowl.
  • Heat 1 cup of vegetable oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Deep fry the potato cubes until golden brown, about 5 minutes; drain on paper towels, and set aside.
  • Place tomatoes and 1/2 cup of water in a blender, and puree until tomatoes are liquefied (peel and seed first, if desired).
  • Heat 1 tablespoon of vegetable oil in a large skillet over medium heat, and cook and stir the onion, garlic, aji chile powder, cumin, black pepper, and oregano until the onion begins to brown, 8 to 10 minutes; pour in the pureed tomatoes, and simmer for 5 more minutes, stirring often. Mix in the ground beef and carrots, and cook until the meat is no longer pink and the carrots are tender, about 10 minutes. Break the meat up into small chunks as it cooks. Mix in the chopped hard-cooked egg, peas, and peanut butter until thoroughly combined. Finally, gently stir in the cubes of fried potato.
  • To assemble the dish, oil a flexible plastic bowl (at least 1 cup size) and press cooked rice into the bottom to fill 1/3 of the bowl. Layer about 3/4 inch of meat mixture over the rice, and top with more cooked rice to fill the bowl. With an oiled hand, gently press on the rice to compact the mixture; place a serving plate on top of the bowl, flip, and turn out the rice and meat-filled form. Repeat with remaining ingredients. Garnish with sprinkles of cilantro, chopped tomato, and dollops of ketchup on each serving.

1 tablespoon lard or solid vegetable shortening
1 1/2 cups long grain rice
1/4 large onion, finely chopped
2 or 3 cloves garlic, finely chopped
2 whole tomatoes from a 15-ounce can
1/4 cup liquid from canned tomatoes
One 40-ounce can chicken broth (30 ounces used total)

Steps:

  • Open can of tomatoes and chicken broth and set aside. These ingredients have to be added quickly, so have them ready.
  • Heat lard or shortening in a saucepan on medium-high. Add rice, stirring constantly. When rice is brown, immediately add the onion and garlic and stir so it is evenly mixed. Quickly add the 2 tomatoes (squish them with your hand). Add 1/4 cup of liquid from the can of tomatoes and 3/4 of the entire amount of chicken broth. Bring to a full boil, cover and reduce heat to medium-low. Let simmer until rice is tender and most of broth has evaporated, about 20 to 30 minutes. (The remaining broth can be added if rice is still a little hard) Remove rice from heat and leave covered until ready to serve.

1 tablespoon whole achiote seeds
1/2 cup olive oil
2 green bell peppers, roughly chopped
2 tomatoes, roughly chopped
1 bunch fresh cilantro
1 white onion, roughly chopped
Salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
1/2 tablespoon achiote powder
1/2 tablespoon turmeric
1 cup long-grain rice
2 cups chicken stock, heated

Steps:

  • For the achiote oil: Heat the oil and achiote seeds in a saute pan over low heat for 5 minutes. Strain the oil and let cool. Set aside 3 tablespoons for the refrito, and reserve the remaining oil for another use.
  • For the refrito: Place the peppers, tomatoes, cilantro and onions in a food processor and pulse until blended. Add in 3 tablespoons of the achiote oil and season the mixture with salt and black pepper. Stir everything together and chill until needed. Set aside 1/2 cup for the arroz amarillo, and then reserve the rest for another use.
  • For the arroz: Heat the oil in a pot over medium heat. Add 1/2 cup refrito, achiote powder and turmeric and saute for 2 to 3 minutes. Stir in the rice until evenly coated with the refrito mixture. Stir in the hot chicken stock and bring to a boil. Boil for about 10 minutes, and then reduce the heat to a simmer, cover the pot, and continue to cook the rice for 20 minutes. Chill the rice before serving.

3 lbs boneless skinless chicken thighs
3 lbs lean pork, in large squares
1 1/2 achiote paste, bars
1/2 cup red wine vinegar
1 tablespoon paprika
1 tablespoon chili powder
1 tablespoon oregano
1 tablespoon cumin
1 tablespoon black pepper
1/2 cup Spanish onion
4 garlic cloves
4 bitter oranges
salt

Steps:

  • In a blender, add the juice of the bitter oranges.
  • Then add half to an entire large Spanish onion.
  • Also add two tablespoons of garlic or four cloves.
  • They will be blended, along with the other items.
  • Now add the black pepper, cumin, dried oregano, chili powder and paprika.
  • Season with a little bit of salt to taste.
  • Pour half cup of red wine vinegar.
  • And finish by adding the Achiote bars, you can find these at Latin supermarkets or ask at a Specialty store for condimented Annatto.
  • Blend of the ingredients, to create a deep red sauce.
  • Put chicken and pork in a large pot.
  • Pour in the blended ingredients and make sure to mix them well.
  • Cook,covered at a low to medium heat for two hours.
  • To plate, place a cup of cooked white or yellow rice and then a cup of the Cabezón sauce over the top.
  • You can also use the Achiote sauce to marinate other meats -- like fish.

  • Paella. Paella is, undoubtedly, the best-known Spanish rice dish across the world. That said, not all paellas are created equal—not even in Spain! Many restaurants—even some that are otherwise good—know that tourists are eager to try paella, so they draw them in with bright posters and signs featuring it outside their establishment.
  • Arroz Negro. Arroz negro—literally, “black rice”—starts with white rice. So how does it get its signature dark color? The answer: squid ink. Not only does this contribute to the aesthetic quality of the dish, but it also serves to enhance the flavor of the seafood.
  • Arroz Caldoso. While paella is dry—every last drop of liquid having been soaked up by that mighty bomba rice—arroz caldoso falls on the opposite end of the spectrum.
  • Arroz al Caldero. Tucked in between the Valencian Community and Andalusia on southeastern Spain’s Mediterranean coast is a sun-drenched gem of a region that’s often not on most tourists’ radar.
  • Arroz Meloso. Arroz meloso falls somewhere between paella and arroz caldoso on the soupiness spectrum. It’s far from dry, but with just enough liquid to give it a creamy, comforting touch.
  • Arròs a Banda. As the story goes, Valencian fishermen traditionally made a sort of seafood and potato stew using the fish they were unable to sell. They later took the leftover liquid from that dish and used it to cook rice.
  • Arroz al Horno. Valencia, as you might have noticed, does some pretty spectacular things with rice. In addition to paella, arròs a banda and more, it’s also home to arroz al horno, or baked rice.
  • Arroz con pollo. Another one of the most famous Spanish rice dishes abroad, versions of arroz con pollo are hugely popular in Latin America as well. It originally developed in Spain and made its way to the New World over the years.
  • Arroz con Costra. Arroz con costra is one of the hidden gems of the Spanish rice world. It’s also one of the oldest Spanish dishes with rice ever recorded—a recipe dating from the year 1220 still exists!
  • Arroz a la Cubana. A favorite among children throughout Spain, arroz a la cubana is rice smothered in plenty of tomato sauce (preferably homemade). It’s often served with fried eggs and plantains or bananas.

  • Put a large, heavy pot over medium heat (I use a cast iron pan or a Dutch oven). Add the olive oil and slowly cook the diced onion and pepper until tender and browned (about 10 minutes).
  • Add the rice and stir for a couple of minutes, allowing the rice to coat itself in the oil but making sure it never burns or sticks.
  • Start adding the fish stock little by little. Cover the rice with about 1/2 an inch of stock and stir every couple of minutes. When it looks dry add more stock. It should take about 20 minutes to add it all.
  • Add the shellfish after about 15 minutes. They will cook through and open up before the dish is done. If any happen to remain closed, discard.
