Steps:
- In a large saucepan, bring water and rice to a boil. Reduce heat; cover and simmer for 45-50 minutes or until rice is tender. Drain if necessary. Transfer to a large bowl; cool completely., Meanwhile, place apricots in a small bowl; cover with boiling water. Let stand for 5 minutes; drain. Stir the apricots, cherries and walnuts into rice. In a small bowl, whisk the oil, lemon juice, maple syrup and salt. Pour over rice mixture and mix well. Refrigerate for at least 30 minutes.

BASMATI RICE PILAF WITH APRICOTS

Steps:
- Put the apricots and lemon zest in the 2 cups of cold water. Melt the butter in a medium saucepan over medium heat, add the garam masala, and toast, stirring, until fragrant, about 1 minute. Add the onion and 1/4 teaspoon of the salt and cook, stirring occasionally, until the onion is tender and translucent, about 6 minutes.
- Stir in the rice and cook, stirring occasionally, until it begins to brown, about 4 minutes. Stir in the water along with the apricots, lemon zest, the remaining 1 teaspoon salt, and pepper to taste. Bring to a simmer. Reduce the heat to low, wrap a clean dish towel around the saucepan lid, and cover saucepan. Cook for 10 minutes, set aside for 5 minutes undisturbed, then remove lid and fluff with a fork. Mound the pilaf on a serving platter or in a shallow bowl, tear the mint over, and top with the nuts.
- Game Plan: Toast the nuts while the rice cooks.
WILD RICE AND APRICOT SALAD
Steps:
- Wash wild rice in 3 changes of hot water; drain. Combine rice and 3 c water in a saucepan; bring to a boil. Cover, reduce heat, and simmer 45 mins. Drain and set aside. Toss shallots with 1 tsp oil in a shallow baking dish. Bake at 400 degs for 20 mins or until shallots are softened and edges are dark brown. Combine rice, shallots, green onons, apricots and parsley in a bowl; toss gently, and set aside. Combine remainng tsp oil, 2 Tbsp water and next 4 ingredients in a bowl; stir with a wire shisk. Pour over rice mixture; toss gently.
WILD RICE SALAD

Steps:
- Rinse wild rice in a sieve under cold water, then combine with cold water to cover by 2 inches in a 5-quart pot. Simmer, covered, until tender, 45 minutes to 1 hour.
- Make vinaigrette while wild rice is simmering:
- Whisk together juice, shallot, vinegar, mustard, and garlic. Gradually whisk in oil until emulsified and season with salt and pepper.
- Cook white rice:
- After wild rice has been simmering 20 minutes, boil white rice and 1 1/2 cups water in a 1 1/2-quart heavy saucepan, uncovered and undisturbed, until steam holes appear on surface, about 8 minutes. Reduce heat to very low and cook, covered and undisturbed, 15 minutes more. Remove from heat and let stand, covered, 5 minutes.
- Assemble salad:
- Rinse cooked wild rice in a sieve under cold water and drain. Stir together rices, vinaigrette, nuts, parsley, dried fruit, and salt and pepper to taste.
- Serve at room temperature.

- Preheat oven to 350. Clean chicken, discarding giblets and neck. Tie legs together and place, breast-side up, in a Dutch oven.
- Spread honey over chicken. Sprinkle with onion, garlic, turmeric, and lemon juice. Cover and bake for 1 hour. Drain off all fat and liquid.
- Sprinkle contents of rice and seasoning packets from rice mix around and under chicken. Pour water over rice. Add apricots.
- Cover and bake 35-45 minutes or until rice is tender and chicken is cooked through.
- Mix pecans into rice. Cut chicken into pieces and serve over rice.

Steps:
- Combine rice, water and salt together in a large pot and bring to a boil, reduce heat and simmer for 50 to 60 minutes.
- Drain rice and chill.
- Combine the chilled rice with the vegetables, fruit, and nuts.
- Whisk vinegar, oil, garlic, salt, pepper, oregano, mustard and honey.
- Starting with 1/3 cup of the dressing add to the rice mixture and blend.
- Taste and adjust with more or less to suit your personal tastes.
