Healthy Apricot Walnut Muffins image

Delicious combination of three whole grains, sweet tangy apricots, and crunchy walnuts. Great for breakfast or a make ahead snack to eat when you are on the go. Easy to make, preparation and cooking time total 30 minutes.

1 1/2 cups white whole wheat flour or 1 1/2 cups white bread flour
3/4 cup uncooked oatmeal, any kind
1/2 cup wheat germ or 1/2 cup another 1/2 cup flour
1/2 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
2 eggs, lightly beaten
3/4 cup buttermilk or 3/4 cup milk
3 tablespoons melted butter
1/2 cup chopped dried apricot
1/2 cup chopped walnuts

Steps:

  • In large bowl mix together flour, oatmeal, wheat germ, brown sugar, baking soda, baking powder, salt, cinnamon, and mix all well together.
  • Add eggs, buttermilk, mix in flour mixture. Next add melted butter and mix well. Line muffin pan with liners or spray with nonstick spray. Divide muffin batter evenly between 12 muffin liners. Top each muffin with chopped walnuts and lightly sprinkle with additional cinnamon and granulated sugar over each.
  • Bake muffins in 375 degrees preheated oven for 20 minutes. Test muffins for doneness with a toothpick, set toothpick in middle of muffin and if the tooth pick comes out clean the muffins are done, otherwise bake a couple additional minutes and test again. 3/4 cup Gold Medal™ all-purpose flour
1/2 cup quick-cooking or old-fashioned oats
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup packed brown sugar
1/3 cup milk
3 tablespoons vegetable oil
1/2 teaspoon vanilla
1 egg
1/3 cup finely chopped dried apricots
1 tablespoon quick-cooking or old-fashioned oats, if desired

Steps:

  • Heat oven to 400°F. Grease bottoms only of 6 regular-size muffin cups with shortening or cooking spray, or line with paper baking cups.
  • In medium bowl, mix flour, 1/2 cup oats, the baking powder and salt. In small bowl, mix brown sugar, milk, oil, vanilla and egg with fork or wire whisk until blended. Stir milk mixture into flour mixture just until flour is moistened. Fold in apricots. Divide evenly among muffin cups. Sprinkle each with about 1/2 teaspoon oats.
  • Bake 23 to 25 minutes or until toothpick inserted in center comes out clean. Remove from pan to cooling rack. Serve warm or cool.

These are so tasty and very easy to make. And you can eat them as early as phase II on the SBD, but they'd be a nice addition to anyone's breakfast table. Oh, and this recipe doubles very well to freeze.

1 cup buttermilk (low fat)
3/4 cup rolled oats (do not use instant or quick cooking)
1 1/4 cups whole wheat pastry flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
2/3 cup walnuts, chopped
1/3 cup Splenda brown sugar blend
1/3 cup canola oil
1/4 cup egg substitute
1 teaspoon vanilla extract
1 teaspoon butter substitute
1/4 teaspoon cinnamon
1/4 cup rolled oats
1 teaspoon Splenda brown sugar blend

Steps:

  • Preheat oven to 425°F; spray 12 cup non stick muffin pan with cooking spray or line with paper baking cups.
  • In a small bowl, combine oats and buttermilk. Set aside for 30 minute.
  • In a medium bowl, combine flour, baking powder, soda, cinnamon and salt. Stir in walnuts.
  • In a large bowl, stir together brown sugar substitute, egg substitute, oil and vanilla until well blended.
  • Stir oat mixture into the egg mixture, then stir flour mixture into that. stir until all ingredients are just combined. Do not over mix.
  • Divide batter evenly between 12 muffin cups.
  • In a small bowl, mix topping ingredients together. Spoon over muffin batter.
  • Bake for 11 to 15 minutes.
  • Transfer pan to a rack to cool for 5 minutes; remove from pan and allow to cool completely.

No-Flour No-Sugar Oat Walnut Fruit Muffins image

This recipe is adapted from a friend's--it makes hearty, moist muffins that are good for South Beach Phase 2 because they have no refined carbs or sugar--just oats, oat bran, flax seed, and walnuts. I make them for my partner who has high cholesterol. The flax seed substitutes for oil/butter and also makes them really fluffy; for SB you can substitute fresh/frozen blueberries or cranberries for the craisins. Note: These are NOT SWEET--they are more like a walnut-fruit bread than a sweet muffin, we prefer this. You can make them sweeter by using vanilla soy milk, but that adds sugar to this no-sugar delight. The fruit is also optional--I've made them with just walnuts and they are still delicious. Enjoy!

1 banana, mashed (can substitute 1/2 c. unsweetened applesauce)
3 eggs, lightly beaten (or egg whites equal to 3 eggs)
1 cup soya milk

2 tablespoons ground flax seeds
1/2 teaspoon baking powder

Steps:

  • Preheat oven to 350 degrees.
  • Grease a 12 cup muffin tin.
  • Mix the wet ingredients together in a small bowl.
  • Mix all the dry ingredients (except the fruit) together in a larger bowl.
  • Add the wet ingredients to the dry ingredients, mix well.
  • Add the dried or fresh/frozen berries, if desired.
  • Spoon into the muffin tin--fill each cup about 3/4 of the way up.
  • Bake 18-20 minutes.
  • Let cool 2 minutes in the pan, then cool completely on rack.
  • Muffins can be frozen and thawed if you aren't going to eat them right away.

⅓ cup packed brown sugar
1 teaspoon baking powder

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a muffin tin or line with paper liners.
  • Spread oats on a rimmed baking sheet and place in the preheating oven until toasted and fragrant, 5 to 8 minutes.
  • Mix toasted oats, flour, brown sugar, baking powder, baking soda, ginger, cinnamon, salt, and allspice in a large bowl. Add walnuts, apricots, and dates.
  • Whisk melted butter, buttermilk, egg, and vanilla extract together in a separate bowl. Pour over the flour mixture and mix briefly until batter is combined. Scoop batter into the prepared pan.

Steps:

  • Pre-heat oven at 450°F.
  • Cover 12 muffin bowls with oven-safe paper.

Steps:

  • In a bowl, combine the first four ingredients. In anther bowl, combine the oats, apricots, butter and boiling water; stir until butter is melted. Cool for 5 minutes. Stir in eggs, milk and orange zest if desired. Stir into dry ingredients just until moistened., Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 20-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to wire racks.
