- Make your flax egg. Mix flax meal with 2 tablespoons warm water in a small bowl and let it rest for 20 minutes while you prepare the rest of the ingredients.
- Preheat oven to 350 degrees Fahrenheit. You will need a 10x15-inch baking tray. Roast almonds in the baking tray until golden brown (about 12 minutes).
- Remove almonds from tray, allow tray to cool, then lightly grease the baking tray and set it aside until needed.
- Place all ingredients, except the flax egg and apricot jam into a food processor. (To do this by hand, chop almonds finely, blend oats into course flour, and combine with remaining ingredients.)
- Remove half the mixture and set aside. Add the flax egg to the remaining mixture and mix to combine.
- Transfer the mixture with egg into the prepared baking tray and press down evenly to create a bottom crust. Bake for 15 minutes until the crust is firm to the touch and lightly browned around the edges.
- Allow crust to cool slightly, then gently spread the apricot jam evenly over the entire surface. Sprinkle the remaining oat mixture over the top and return to the oven.
- Bake for 25 minutes, until the top crust is golden brown and inviting. Cool and cut into bars.

Steps:
- Preheat oven to 350°F (180° C). Line an 8x8-inch (2 L) baking pan with parchment paper. Place apricots and water in a large saucepan. Bring to a simmer, cover, stirring occassionally until apricots have absorbed water, about 7 minutes. Stir in jam. Remove from heat, then puree in a food processor. It doesn't need to be perfectly smooth. Meanwhile, in a large bowl, stir oats with flour, brown sugar, baking powder and salt. Stir in peanut butter. Mixture should be clumpy and will not be smooth. Using your fingers, work in butter until mixture is crumbly. Place slightly more than half the mixture, about 1¾ cups (425 mL), onto the parchment paper in the pan. Press firmly to form a single layer. Top with apricot mixture then gently spread to cover. Toss peantus into remaining oat mixture, keeping the crumble as best you can. Crumble evenly over apricot mixture. Bake in centre of preheated oven 30 to 35 minutes, or until golden. Cool completely before cutting into bars.

- Preheat the oven to 350 degrees. Line a nine-inch square pan with aluminum foil and spray the aluminum foil with cooking spray.
- Measure the oats, sugar, flour, salt, and baking soda into a medium-sized bowl. Stir these dry ingredients together using a fork until they are thoroughly mixed. The mixture will be somewhat dry and crumbly.
- Measure out two cups of the butter, sugar, and oatmeal mixture and press this firmly into the bottom of the prepared baking dish. Reserve the remainder of the crust mixture to be used as the top layer of the Apricot Oatmeal Bars. Using the bottom of a measuring cup or a flat-bottomed bowl can make this go very quickly.
- Use a spoon to scoop the apricot preserves over the bottom layer of crust. Use a spatula to spread the preserves over the bottom crust. Stop about ¼ of an inch from the edges of the pan.
