1/2 cup apricot preserves
1/4 cup balsamic vinegar
1/4 teaspoon pepper
Dash salt
1 bone-in turkey breast (5 pounds)

Steps:

  • Preheat oven to 325°. Combine preserves, vinegar, pepper and salt. Place turkey breast on a rack in a large shallow roasting pan., Bake, uncovered, 1-1/2 to 2 hours or until a thermometer reads 170°, basting every 30 minutes with apricot mixture. (Cover loosely with foil if turkey browns too quickly.) Cover and let stand 15 minutes before slicing.

This is a simple glaze for roasted turkey that makes a wonderful sweet rich gravy from the drippings.

1 cup apricot preserves
1/2 cup Kahlua
1 (12 -14 lb) whole turkey
1/4 cup unsalted butter, softened

Steps:

  • I prefer to brine my turkey before roasting so just about any brine recipe will do. There are several very good ones posted on Recipezaar.
  • After brining rinse turkey and pat dry with paper towels. Rub turkey with softened butter and sprinkle inside and out with salt and pepper. Place in roasting pan with a cup of water (or broth) in the bottom of the pan.
  • In a bowl combine preserves and Kahlua mixing well.
  • Spread half of the mixture over the turkey and place in 350 degree oven.
  • About half way through the roasting spread the other half over bird. Basting often with juices.
  • Continue roasting until bird is cooked through and golden brown. If the breast is getting too brown tent with foil.

1 (14 -16 lb) whole turkey
1 1/2 teaspoons mixed-up salt, divided (I use Jane's Krazy Original Mixed-Up Salt)
1 1/2 teaspoons garlic powder, divided
1 1/2 teaspoons poultry seasoning, divided
1 teaspoon ground sage
1 teaspoon pepper
5 (14 ounce) cans chicken broth, divided
1/2 cup butter, melted
2 carrots, sliced
3 celery ribs, sliced
1 medium yellow onion, sliced
1/2 cup chopped fresh parsley
1/2 cup all-purpose flour
1/2 cup water
fresh parsley
orange slice
fresh cranberries

Steps:

  • Remove giblets and neck from turkey, and chill for gravy. Rinse turkey with cold water; pat dry with paper towels.
  • Combine 1 teaspoons each mixed-up salt, garlic powder, poultry seasoning, sage, and pepper; sprinkle cavity and outside of turkey with mixture.
  • Place turkey, breast side up, in a large roasting pan, tucking wingtips under. Pour 2 cans chicken broth into roasting pan; drizzle melted butter over turkey.
  • Bake, uncovered at 450°F for 1 hour. reduce heat to 425°F, shield with aluminum foil to prevent excessive browning. Bake 3 1/2 to 4 hours or until a meat thermometer inserted in thigh registers 180F, basting every 45 minutes with pan drippings.
  • Bring remaining 3 cans broth, neck, giblets, carrots, and next 3 ingredients to a boil in a saucepan. Cover, reduce heat, and simmer 45 minutes or until vegetables are tender.
  • Remove turkey to a serving platter, reserving drippings in roasting pan. Skim excess fat from drippings in pan, if desired.
  • Pour giblet mixture through a wire-mesh strainer into drippings in roasting pan, discarding solids. Bring to a boil in roasting pan over medium-high heat, stirring constantly to loosen browned bits on bottom of pan.
  • Stir together flour and 1/2 cup water until smooth; add to giblet mixture, and over medium-high heat, stirring constantly, 10 minutes or until thickened. Stir in remaining 1/2 teaspoons each of mixed-up salt, garlic powder, and poultry seasoning. Serve with turkey. Garnish if desired.

8 quarts water or 32 cups water
3/4 cup unseasoned meat tenderizer
6 tablespoons msg
prepared turkey stuffing (1/2 - 1 Savory Herbed Poultry Dressing)
1/2 cup soft unsalted butter
2 tablespoons seasoning (KFC Original Recipe Breading Mix (Copycat))
2 cups water
2 quartered large onions
6 crosswise-halved peeled carrots
6 crosswise-cut celery ribs
1 bunch fresh sage
3 bay leaves

Steps:

  • NOTE: FOR THIS RECIPE YOU MUST BEGIN WITH A VERY CLEAN OVEN! (STEP ONE): PLACE one fresh (or properly, completely thawed) 16 lb turkey in a large colander in sink; REMOVE neck and gizzards from one fresh (save neck and gizzards for stuffing and/or gravy if desired); RINSE turkey inside and out under cold running water above colander; ALLOW to drain; MEASURE the BRINE BASE ingredients into a sterilized 5 gallon bucket: 8 quarts (32 cups) water, 3/4 cup unseasoned meat tenderizer, 6 tablespoons Accent seasoning; SLOWLY lower turkey into the bucket with brine; COVER; ADJUST refrigerator racks to fit the 5 gallon bucket; PLACE bucket in refrigerator between 12 to 24 hours (if desired you may inject the brine solution into turkey evenly, using a poultry brine injector).

  • ADD the prepared onions, carrots and celery to the bottom of a large roasting pan; ARRANGE the sage sprigs and bay leaves over vegetables; POUR 2 cups water into roasting pan to cover herbs completely; PLACE a roasting rack over vegetables and herbs in pan; PLACE turkey onto rack; RUB the outer surfaces of turkey evenly and generously with the remaining RUB; PLACE turkey into preheated 450°F oven on low rack.
  • FIRST, set oven timer for 45 minutes; ROAST turkey at 450°F until timer sounds; REDUCE oven temperature to 325°F; SET oven timer for 1 hour and 15 minutes.
  • INSERT an instant-read thermometer without touching bone into the thickest part of the breast to read 165°F -- and in the thigh -- 180°F; OTHERWISE, continue roasting at 325°F and basting if desired) and reading temperature of turkey, until the temperatures are reached.
  • TRANSFER turkey to a serving platter; COVER turkey loosely with foil; ALLOW turkey to set between 20-30 minutes before carving.

This is my mom's recipe. It is roasted, not steamed like you get when you cover the turkey in foil. The results are very tasty. Even the dark meat is delicious and moist. You do have to baste it often in the middle of its cooking. Make sure you use lots of butter so the cloth won't take the skin off. Recipe is for a 12 pound bird. Adjust butter and water accordingly for different size birds.

12 lbs whole turkey
1/2 lb butter, as needed
1/4 cup flour, as needed
1 cup hot water, as needed

Steps:

  • Clean and stuff turkey as usual.
  • Cover turkey completely and thickly with butter.
  • Dust completely with flour.
  • Take a clean white cotton cloth or a triple layer of cheese cloth large enough to completely drape over turkey and soak it in a mixture of hot water and the remaining butter (melted). If you want to, you can substitute broth or vegetable oil when you soak the cloth.
  • Tie up turkey's wings like a belt with cotton twine and also tie legs together.
  • Place in roasting pan with wings down and legs on top.
  • Cover loosely with the cloth, covering all exposed parts. You can cut a hole in the cloth to stick in the thermometer.
  • Pour any remaining liquid into the bottom of the pan.
  • Baste every 15 minutes with juice in the bottom of the roasting pan. If there is no juice, use hot water/broth with oil/melted butter to baste.
  • Remove cloth for last 1/2 hour if necessary to brown skin. You can salt and pepper the bird at this stage if you want to.
  • Cook at 350 degrees for 15-18 minutes per pound.
  • Let set for 15-20 minutes after cooking so juices will settle back into the meat. You can cover it with the pan lid or foil at this point to keep it warm. This is when you make the gravy.

1 cup apricot nectar
1 cup apricot preserves
2 tablespoons minced peeled fresh ginger
1 tablespoon honey
3/4 cup unsalted butter
3 tablespoons chopped fresh thyme or 1 tablespoon dried thyme
3 tablespoons chopped fresh sage or 1 tablespoon dried rubbed sage
1 1/2 teaspoons salt
1 teaspoon ground black pepper
2 tablespoons unsalted butter
3 large onions, thinly sliced (about 2 pounds)
6 ounces shallots, thinly sliced (about 6 large)
21 -22 lbs turkey
1 (14 1/2 ounce) can low sodium chicken broth (or more)
1 teaspoon chopped fresh thyme or 1/2 teaspoon dried thyme
1/2 teaspoon chopped fresh sage or 1/4 teaspoon dried sage
1 (14 1/2 ounce) can low sodium chicken broth (about)

Steps:

  • For Glaze: Combine all ingredients in small saucepan and bring to boil.
  • Reduce heat to medium-low and simmer until thickened and reduce to 1 1/4 cups, about 15 minutes.
  • For Herb Butter: Blend all ingredients in small bowl.
  • Set aside.
  • For Onion Mixture: Melt butter in large skillet over medium heat.
  • Add onions and shallots and sauté until very soft and light brown, about 20 minutes.
  • Cover separately and chill.
  • For Turkey: Place rack in lowest third of oven and preheat to 400° F.
  • Pat turkey dry with paper towels.
  • Season turkey cavity with salt and pepper.
  • Place turkey on rack set in large roasting pan.
  • Slide hand under skin of turkey breast to loosen skin.
  • Spread half of herb butter over breast under skin.
  • If stuffing turkey, spoon stuffing into main cavity.
  • Place remaining herb butter in small saucepan.
  • Stir over low heat until melted.
  • Brush butter over outside of turkey.
  • Tie legs together loosely to hold shape of turkey.
  • Roast turkey 30 minutes.
  • Reduce oven temperature to 325° F.
  • Roast turkey 1 hour 30 minutes, basting occasionally with pan drippings.
  • Tent turkey with heavy-duty foil; roast 45 minutes longer.
  • Add onion mixture, 1 can broth, thyme and sage to pan.
  • Roast 15 minutes.
  • Bring glaze to simmer.
  • Brush 1/2 cup glaze over turkey.
  • Continue to roast turkey uncovered until meat thermometer inserted into thickest part of thigh registers 180° F.
  • or until juices run clear when thickest part of thigh is pierced with skewer, brushing occasionally with glaze and adding more broth to pan if liquid evaporates, about 40 minutes longer for unstuffed turkey (about 1 hour 10 minutes longer for stuffed turkey).
  • Place turkey on platter, tent with foil.
  • Let stand 30 minutes.
  • Reserve mixture in pan for gravy.
  • For Gravy: Pour contents of roasting pan into strainer set over large bowl.
  • Spoon fat from pan juices in bowl.
  • Transfer onion mixture in strainer to blender.
  • Add 1 cup pan juices to blender and puree until smooth, adding more pan juices and chicken broth if necessary to thin sauce to desired consistency.
  • Transfer sauce to heavy large saucepan and bring to boil.
  • Cook until color deepens, skimming off any foam, about 5 minutes.
  • Season with salt and pepper.
  • Serve turkey with gravy.
