½ cup butter, softened
¼ cup white sugar
1 cup all-purpose flour
⅔ cup dried apricots
1 cup water
2 eggs
1 cup packed light brown sugar
⅓ cup all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
1 teaspoon vanilla extract
1 teaspoon lemon juice
1 cup chopped walnuts
¾ cup flaked coconut
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). In a medium bowl, mix together butter, sugar, and 1 cup flour. Press into the bottom of an ungreased 9x13 inch pan.
  • Bake for 25 minutes in preheated oven. In small saucepan, bring apricots and water to a boil, and cook for 10 minutes. Drain, chop, and set aside to cool.
  • In a medium bowl, beat eggs and brown sugar. Stir in 1/3 cup flour, baking powder, salt, vanilla, and lemon juice. Fold in nuts and chopped apricots. Stir in coconut, if desired. Pour over the prepared crust.
  • Bake for an additional 20 minutes in the preheated oven, or until firm. Cool, and dust with confectioners' sugar before cutting into squares.

1 (250 g) packet plain cookies
1 cup dried apricot, finely chopped
1 1/2 cups finely shredded coconut (desiccated)
1 (395 g) can sweetened condensed milk
125 g butter
1 1/4 cups milk chocolate chips

Steps:

  • Line base of a 18cm x 28cm pan with baking paper.
  • Put the cookies in a food processor or blender and grind to crumbs.
  • Combine the crumbs with the chopped apricots and coconut in a bowl.
  • Pour the condensed milk into a medium saucepan and add the butter.
  • Stir over a medium heat until butter is melted and ingredients are combined.
  • Pour into dry ingredients and mix thoroughly.
  • Press mixture into pan and refridgerate until set.
  • Melt the milk chocolate chips gently in a microwave on a low setting.
  • Spread melted chocolate over the top of the squares and allow to set.
  • Once chocolate is set, cut into squares or bars to serve.

1 1/2 cups water
1/2 cup sugar
1 1/2 cups dried apricots, finely diced (10 oz.)
1/2 cup unsalted butter (1 stick)
1/3 cup brown sugar
1/4 cup honey
1 pinch salt
1 1/2 cups sweetened flaked coconut (4 oz.)
3/4 cup almonds, sliced, blanched (2 1/2 oz.)
2 1/2 cups old fashioned oats
1/2 cup all-purpose flour

Steps:

  • Preheat oven to 350*F. Butter a 10"x15" cookie sheet.Combine water, sugar and apricots in a medium saucepan.Bring to a boil, and simmer over moderate heat, stirring occasionally, until the apricots are tender and plump(about 15 minutes). Drain apricots and return to the pan. Add butter, brown sugar, honey and salt and cook until butter is just melted. Transfer to a bowl.
  • Spread the coconut and almonds on separate baking sheets and toast for 6 to 7 minutes, until lightly golden. Stir the coconut and almonds into the apricot mixture along with the oats and flour. Spread the mixture in the cookie sheet in an even layer. Bake for about 25 minutes, until golden. Let cool on a rack, then cut into 16 bars.

  • The bars can be stored in an airtight container for up to 2 days.

1/2 cup butter, softened (1 stick)
1/4 cup sugar
1 1/3 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs, well beaten
15 ounces condensed milk
1/2 cup flaked coconut
6 ounces dried apricots, finely chopped

Steps:

  • Preheat oven to 350 degrees.
  • Place butter, sugar and 1 cup flour in a large bowl.
  • Cut butter in with a pastry blender until coarse crumbs form.
  • Press crumbs firmly into bottom of a greased 9 inch square pan to make a crust.
  • Bake for 25 minutes.
  • Remove pan from oven to a wire rack to cool.

1 cup oatmeal
1 cup Rice Krispies
3 tablespoons unsweetened coconut
1 pinch sea salt
1/3 cup almond butter or 1/3 cup sun butter
3 tablespoons brown rice syrup
3 tablespoons date syrup
2 tablespoons coconut oil
3 tablespoons dark chocolate chips, frozen
3 tablespoons dried tart cherries
3 tablespoons pumpkin seeds
3 tablespoons apricots, dried
3 tablespoons pumpkin seeds
3 tablespoons unsweetened coconut
3 tablespoons sunflower seeds
1/2 teaspoon cinnamon
6 tablespoons raisins, golden

Steps:

  • Line an 8x8 baking pan with parchment and set aside.
  • In a mixing bowl, add oatmeal, brown rice crisp cereal, coconut and salt. Salt is not needed if using the No Sugar Added SunButter because it already contains salt.
  • In a small microwave safe bowl, add SunButter, brown rice syrup, date syrup, and coconut oil. Mix to combine, and then microwave for 30 seconds, or until the mixture begins to bubble. Stir well, and then microwave for another 15-20 seconds until it's bubbling again. This can also be done on a stovetop if you do not want to use a microwave.
  • Pour the mixture over the dry ingredients, and stir well to fully coat.
  • Add desired mix ins. If you have other creative ideas, use whatever you'd like. If using chocolate chips, do not mix until you have the mixture in the 8x8 pan and the mixture has cooled, otherwise the chocolate chips will melt. When I add chocolate chips, I add the mixture to the pan, slightly flatten it with my hands, and then allow it to cool a few more minutes before I sprinkle on frozen chocolate chips, and then press them inches.
  • Use a pastry roller or the flat side of a drinking glass to compress and smooth the tops of bars.
  • Place in the freezer or refrigerator to set for at least 30 minutes before slicing.
  • Store in the freezer for best results. These can be packed if the weather is cool. They will crumble if the weather is very warm. Try packing on an ice pack if adding to school lunches.
  • RAW DATE SYRUP.
  • 8-9 medjool dates, pitted.
  • 1 1/4 cups filtered water, plus more for soaking dates.
  • 1 1/2 tsp lemon juice.
  • Place the dates in a small bowl; cover with warm water (not the filtered water called for in the recipe) and let sit for 30 minutes. Once the dates have soaked, drain the water then add the dates, filtered water, and lemon juice to the container of a high speed blender, such as a Vitamix. Blend for 45-60 seconds, or until smooth. Transfer to an air tight container and store in the refrigerator for up to two weeks.
