Baby's Applesauce Cake with Peanut Butter Frosting (smash cake) image

This recipe for my baby's Applesauce Cake with Peanut Butter Frosting is tested tried and true. It's baby approved and mama approved. The cake is simple and only lightly sweetened with maple syrup and the frosting has no sugar. This recipe makes a perfect 4 inch "smash cake" or 2 jumbo muffin-sized mini cakes. This is a birthday cake you'll be happy to serve to your baby, and you won't mind stealing a bite yourself. (makes one 4" layer cake)

Number Of Ingredients 14

¼ cup all purpose gluten free flour (I used Bob's Red Mill)
¼ cup gluten free oat flour
1 Tbs. maple syrup
¼ cup unsweetened organic applesauce
1 Tbs. melted coconut oil
1 egg
¼ tsp. baking soda
1/8 tsp. baking powder
¼ tsp. vanilla extract
¼ tsp. cinnamon
1/8 tsp. nutmeg
pinch of Kosher salt
½ cup coconut cream, cold*
2 Tbs. creamy peanut butter

Steps:

  • Preheat your oven to 350 degrees F. Spray your jumbo muffin tin or 4" cake tins with nonstick spray. In your mixer, combine the egg, coconut oil and maple syrup. Mix on medium speed for 30 seconds. Then add the applesauce. Next, with the mixer off, add all of the dry ingredients and spices. Turn the mixer on medium low and mix until the dry ingredients are fully incorporated. Pour the batter into your prepared tins. Bake for 20-24 minutes, or until golden brown and a test stick comes out clean. Let the cakes cool on a wire rack.
  • In your clean mixer, whip the cold coconut cream on medium high until very smooth. Then add the peanut butter and whisk until incorporated. Make sure you scrape down the sides of the bowl so all of the peanut butter is mixed in. Frost your cooled cakes. Serve, enjoy!

Beat for 2 minutes with an electric mixer on medium speed. Beat in eggs. Fold in 3/4 cup chopped nuts. Pour batter into a greased and floured 9 x 13 inch pan.
  • Bake at 350 degrees F (175 degrees C) for 50 minutes.
  • Mix confectioners' sugar, cream cheese, and vanilla until smooth. Melt 1/4 cup butter over medium heat, and add 1 cup chopped pecans. Keep stirring until browned. Stir cooled pecans into cream cheese mixture. Frost the cooled cake.

There are many different recipes for applesauce cake this one has remained a favorite, it's a really moist cake with tons of flavor, there is really no need for frosting just top with a couple of tablespoons of whipped cream or Cool Whip topping --- if you are using sweetened applesauce I suggest to maybe cut down the sugar slightly unless you prefer a sweeter cake --- I think you will really enjoy this cake!

This recipe came from a box of Duncan Hines cake mix, but I've added some vanilla and extra spices to make it memorable! Being from Duncan Hines means to use a cake mix without pudding. Also, I like to start with a smooth, bland commercial applesauce and sweeten it with brown sugar, then jazz it up with some extra cinnamon and cardamom - whatever spices suit your fancy - so the applesauce tastes really good to start with. A smooth applesauce allows the cake to remain light. If you don't have cardamom, try some five-spice powder. For frosting, use a cream cheese frosting by itself or sprinkled with chopped nuts. For a diffferent flavor, add some dulce de leche (caramel sauce) to your cream cheese frosting along with a little maple flavoring. This is one of my favorite cakes!
