A quick and easy cake--we eat it for breakfast at our house.

Steps:
- Cream butter or margarine with sugar. Add applesauce; beat well. Stir in flour, soda, and spices. Add nuts and raisins.
- Pour the batter into a greased and floured 8 inch square pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until done. Serve warm.

APPLESAUCE RAISIN & NUT SPICE CAKE
I loved the regular applesauce cake so much that I decided to go in search of an applesauce bundt cake!!

Steps:
- 1. Heat oven to 350. Grease and flour (or spray) bundt pan generously.
- 2. Combine flour, soda, cinnamon, and allspice. Set aside.
- 3. In large bowl, mix together butter, brown sugar and sugar until creamy. Beat in egg. Add applesauce and mix until just combined. Add flour mixture one cup at a time until fully incorporated. Stir in raisins and nuts by hand.
- 4. Spoon into bundt pan. Cook 60-70 minutes until wooden skewer inserted comes out clean. Cool in pan for about 10 minutes before removing.
- 5. To make glaze, melt butter in microwave. Add all remaining ingredients, mixing well until smooth. Let cool slightly before spooning over cooled cake.
APPLESAUCE, RAISIN AND NUT CAKE
This is an old recipe that my grandma got off of a VB apple sauce can. She always iced it with plain boiled icing. If you can't find pastry flour, you can mix you own by combining cake flour and all-purpose flour in a ratio somewhere between two parts cake flour to one part all-purpose and one part cake flour to one part all-purpose.

- First sift flour, spices and soda.
- Then cream the shortening, add sugar gradually and eggs well beaten.
- Add flour and spices alternately with the applesauce and beat throughly until smooth.
- Dust raisins and nuts lightly with flour and stir in last.
- Bake in a shallow, well greased pan about an hour in a 325 degree oven.
- Ice with your choice or icing or frosting.

- Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. APPLESAUCE NUT CRUMB CAKE
This is easy to prepare and is good for all of you on weight watchers. Each serving is 4 points. The original recipe called for pecans but I used walnuts. You can substitute your favorite.

- Preheat oven to 350 degrees F.
- In a large bowl, combine first six ingredients (flour through nutmeg).
- In a separate bowl, mix buttermilk, applesauce, 1 Tbsp butter, egg and egg white.
- Make a well in the center of the dry ingredients and stir in the wet mixture until moist.
- Spray a 9" round cake pan with cooking sptay.
- and spoon in the batter.
- In a small bowl combine chopped nuts and remaining ingredients.
- Stir with a fork until the mixture resembles coarse meal.

- Preheat the oven to 350 degrees F. Adjust the racks to the center of the oven. Spray a Bundt pan with nonstick spray.
- Whisk together the flour, baking soda, cinnamon, salt, ginger, cloves and nutmeg in a large bowl. Beat together the butter and brown sugar in a separate bowl with an electric hand-held mixer until light and fluffy, about 4 minutes. Add the eggs, one at a time, until incorporated. Alternate adding the flour mixture and the applesauce, ending with the flour, being careful not to over-mix. Transfer the batter to the prepared Bundt pan and bake until a toothpick inserted into the middle of the cake comes out clean, 55 minutes. Cool completely before inverting. Sprinkle with powdered sugar if using.
APPLESAUCE CAKE
In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

- In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.

- Spray a 13 X 9-inch baking pan with nonstick cooking spray.
- In a small bowl, combine flour, rolled oats, baking soda, cinnamon, salt and cloves; set aside.

- Preheat oven to 350 deg.
- Grease well and flour a 9-by-9-by-2 inch baking pan.
- Into a large bowl of electric mixer, sift flour with baking soda, cinnamon, allspice, nutmeg, cloves, salt.
- Then add eggs, sugar, butter, and 1 cup applesauce; at low speed, beat just until ingredients are combined.
- At medium speed, beat 2 minutes longer, occasionally scraping side of bowl and guiding mixture into beater with rubber scraper.

- Bake 50 minutes, or until cake tester inserted in center comes out clean.
