Steps:

  • Cream butter and sugar, add eggs and vanilla, mix well.
  • Stir in applesauce.

1/2 cup vegetable oil or melted coconut oil
2 eggs (room temp if using coconut oil)
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour

Steps:

  • Preheat oven to 350°F.
  • Line muffin pan with muffins liners and set aside.
  • In a large bowl combine both sugars, baking soda, spices, and salt.
  • Add the applesauce and mix well (mixture should be completely smooth).
  • Beat in the oil, eggs, and vanilla extract.
  • Add the flour and mix until incorporated. Do not over mix!
  • Scoop the batter into the muffin pan filling the cups to the top.
  • Bake for 20 - 21 minutes until a toothpick inserted comes out with a few crumbs.
  • Cool in pan 5 minutes then transfer to a wire rack (or large plate if you don't have a rack) to continue cooling.
  • Serve warm or cooled completely.

1 teaspoon vanilla extract
2 cups applesauce

Steps:

  • Preheat oven to 350°. In a bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Stir in applesauce. Combine flour, baking soda and spices; stir into creamed mixture. If desired, fold in nuts. , Fill greased or paper-lined muffin cups three-fourths full. 2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt

1 cup unsweetened applesauce

crystal sugar

Steps:

  • Heat oven to 375 degrees.
  • Spray muffin tins with nonstick spray.
  • Mix flour, sugar, baking powder, cinnamon, and salt in a bowl.
  • Mix in beaten eggs, applesauce and melted butter. (by hand, do not need mixer).
  • Evenly scoop mixture into muffin pans.
  • Sprinkle crystal sugar sprinkles on tops of muffins.
  • Bake for 18 to 20 minutes. Test to see if toothpick comes out clean.

  • Set oven to 350°F.
  • Set oven rack to second-lowest position.
  • Butter 12 muffin tins or line with paper liners.
  • For muffins: in a small bowl mix together first 7 dry ingredients.
  • In another large bowl whisk together eggs and brown sugar until well combined.
  • Add in melted butter whisking continuously until mixture is creamy.
  • Stir in applesauce.
  • Fold in flour mixture until JUST combined.
  • Stir in nuts.
  • Divide the batter evenly between muffin tins.
  • To make the topping: stir together all ingredients then sprinkle over tops of muffin batter.

1 cup unsweetened applesauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 12 muffin cups with paper liners.
  • Mix flour, baking soda, allspice, nutmeg, cinnamon, cloves, ginger, and salt together in a bowl.
  • Beat shortening with an electric mixer in a separate large bowl until smooth; add honey and mix for 2 minutes. Stir flour mixture into shortening mixture, alternating with applesauce, until batter is smooth. Fold in raisins and walnuts. Spoon about 2 1/2 tablespoons batter into each muffin cup.

3 tbsp oil OR applesauce or mashed banana
2 tbsp milk of choice
2 tsp pure vanilla extract
2 tsp white or cider vinegar
1 cup spelt,
1/4 cup sugar or unrefined sugar
1/2 tsp salt
1/2 tsp each: baking soda and baking powder
1/4 tsp cinnamon
optional handful raisins, (crushed walnuts, shredded coconut, etc.)

Steps:

  • *If you want to make mini muffins, bake only 10 minutes. I recommend this mini muffin pan.Whisk all liquid ingredients together. Preheat oven to 350, and line a muffin tin. In a new bowl, stir remaining ingredients very well. Pour dry into wet, and stir until just evenly mixed. Fill each liner about 2/3 of the way, leaving a little room because they will rise. Bake on the center rack, 20 minutes or until muffins have domed and a toothpick inserted into the center of a muffin comes out mostly clean. Let cool. (If you loosely cover overnight on the counter or refrigerated, the liners peel off easily the next day and flavor and texture are even better.) Leftovers can be frozen if desired. 1/2 teaspoon baking soda
1 teaspoon baking powder

1 cup unsweetened applesauce (I used two 4 ounce containers which came to 223 g)
2 tablespoons (30 ml) light olive oil (or other oil)

2 tablespoons (10 g) quick oats
1/2 teaspoon ground cinnamon
2 tablespoons (24 g) brown sugar

Steps:

  • Preheat oven to 350ºF. Prepare a muffin pan by spraying the cavities with cooking spray or lining them with parchment paper liners. Set aside.
  • In a large mixing bowl, stir dry ingredients (flour, baking soda, baking powder, salt and cinnamon).
  • Make a well in the center of the dry ingredients. Add wet ingredients to the center (eggs, honey, applesauce, olive oil and vanilla). Mix wet ingredients together and then combine all ingredients. Stir only until just combined.
  • Divide the batter evenly among the 12 muffin cups, filling them 3/4 full.

1 tsp Salt
1 tsp Baking powder

1 1/2 Cups North Coast Organic Applesauce
1/2 Cup Sugar
1/4 Cup Avocado oil ((or any neutral flavored oil))
1/4 Cup Coconut or brown sugar
2 Eggs
1 tsp Vanilla
1 Tbsp Raw organic cane sugar

Steps:

  • Heat oven to 400 degrees and grease a muffin pan
  • In a medium bowl, whisk the flour, spices, salt, baking powder and baking soda.
  • In a separate, large bowl whisk all the remaining ingredients except the raw sugar.
  • Add the dry ingredients into the wet and stir until just combined.
  • Scoop into the muffin pan (I like using an ice cream scoop) and sprinkle with the raw sugar.
  • Bake for 5 minutes. Then, reduce the heat to 350 degrees and bake another 13-15 minutes, or until a toothpick inserted in the center comes out clean.
