- Combine 1 cup Applesauce with a pinch of minced garlic, 2 tablespoons soy sauce, and a dash of black pepper.
- Cover chicken and marinate for 1/2 hour.
- Bake chicken covered in mixture at 350 degrees until cooked through.
- So yummy and juicy. I like to serve it with a little rice and sauted green beens.

- Sprinkle chicken with pepper.
- In a large skillet, brown chicken in oil on both sides.
- In a small bowl combine the remaining ingredients; pour over chicken. Cover and cook 7-10 minutes longer or until a meat thermometer reads 170.
- Serve desired amount. Cool leftovers, transfer to a freezer container and freeze for up to 3 months.
- TO USE FROZEN CHICKEN: Thaw them in refrigerator overnight. Cover and microwave on high for 8-10 minutes or until heated through, stirring once.

VERMONT MAPLE-GLAZED FREE RANGE CHICKEN WITH ROASTED VEGETABLES, POTATO PANCAKES AND APPLESAUCE

- Preheat oven to 325 degrees F
- Once you've prepared all of your vegetables, toss them together with the thyme and some salt and pepper. Put the veggies into a 2-inch deep roasting pan.
- Wash the bird inside and out and dry with a towel. Sprinkle it all over with salt and pepper. Rub a couple of teaspoons of olive oil all over the skin. Place it on top of the vegetables. Put it into the oven.
- Pour the stock and syrup into a small saucepan. Bring to a boil and reduce it by half: Use this mixture to baste the chicken generously and frequently.
- While the chicken is cooking, make the pancakes and the applesauce.
- Grate the potatoes in the food processor. Put them in a bowl and add the egg and onion. Mix slightly. Add the flour and mix some more, but not too much. Add the salt and white pepper and olive oil. Mix a little more.
- Heat the Canola oil in a nonstick pan. When it starts to smoke a little, add one sixth of the mixture. Turn down the heat to medium. When the potatoes start to brown around the edges, flip them over and cook for almost 3 to 4 minutes more. Repeat until you are out of batter. You may hold these warm and put them in the oven just before you sit down for dinner
- Cook the apples on the stovetop with a little water and the sugar. When soft, mash with a potato masher or puree in the food processor for a smoother sauce.
- FINISHING UP AND SERVING:
- You will know that the chicken is done when the leg moves somewhat freely and the juices are running clear between the breast and the thigh. Take it out of the oven, move it to the cutting board and allow it to rest for 20 minutes.
- While the bird is resting, spoon the veggies into a serving dish and keep warm. Put the roasting pan with the cooking juices on the stove and add 1/2 cup of white wine. Reduce all of this together just a little and pass in a pitcher with the chicken. Carve the chicken into large pieces; cut the pancake into wedges. Top with warm applesauce. Serve all family style and enjoy.
- For a quicker dinner you may roast a whole cut up chicken, basting all pieces in the same manner. You will have to cut the vegetables into smaller pieces so that they are done when the chicken is
APPLE-ORANGE GLAZED CHICKEN FOR TWO
Adapted from Betty Crocker's Cooking for Two (2002). Quick, easy recipe. The original recipe only called for sauteing the chicken in butter, so I added a few ingredients to customize it and make the chicken more flavorful. Goes great with steamed green beans and rice. Note: Can substitute orange marmalade or other jams for the apple-butter.

- Salt and pepper chicken breasts.
- Melt butter in an 8-inch skillet or 3-qt. saucepan over medium heat. Cook chicken in butter about 5 minutes, then add red wine vinegar (vinegar will smell awful when reducing, but taste great in the end). Cook another 10 minutes, turning once, or until juice of chicken is no longer pink when center of thickest piece is cut.
- While chicken is cooking, mix cornstarch and mustard in a small bowl. Stir in remaining ingredients.
- Place chicken on serving plate; cover to keep warm.
- To make the glaze, pour orange mixture into skillet. Heat to boiling over medium heat, stirring constantly. Boil about 1 minute, stirring constantly, until glaze is thickened. Pour over chicken.

This recipe gives grilling a new twist. My family and I love it. I'm sure of prep & cook time but I gave a guess. We grill a lot through out the year and this is one of our favorites. - In a medium saucepan, heat oil and sauté onion until soft.
- Add applesauce, ketchup, vinegar, brown sugar, Worcestershire sauce and pepper. Bring to a boil while stirring. Reduce heat and let simmer. Remove from heat when thickened.
- Place chicken on grill, skin side down. Grill for about 15 minute Turn and cook for another 10 minutes.

JUICY GRILLED GLAZED AUTUMN CHICKEN WITH APPLE PUMPKIN SAUCE
Don't close up the grill yet! Juicy Autumn Chicken with flavors of apples, pumpkin and spices. This recipe has choices of wings, legs or breasts. An American dish with hints of Indian cuisine. Would be great with pork or salmon. Prep the chicken sauce and glaze the day before so cooking the chicken before dinner is quick and easy.

- Marinade:.
- Mix all the marinade ingredients together.
- Pour half of the marinade over the chicken. Place the chicken in the refrigerator overnight turning often to ensure all sides get coated and penetrates the meat.
- Heat the other half of the marinade and reduce to 1 cup. If more heat is desired add 1 tablespoon sriracha sauce. To be used to glaze the chicken. Can be prepped the day.
- Remove from marinade and let drip away removing excess marinade.
- Whisk together pumpkin puree, apple juice, sugar, cloves, ginger, cinnamon, cardamom and optional pepper flakes in a saucepan until smooth. Bring to a boil, then reduce heat to medium-low, and simmer until the mixture has reached the consistency of applesauce. About 30-60 minutes. Depending if you use fresh or canned pumpkin. Add liquor off the fire stir, cover and set aside. Can be prepared the day before good chilled or warm.
- Heat grill and oil grates.
- Grill chicken legs until well browned on all sides, turning once, 30 to 40 minutes. Glaze the chicken the last 5 minutes with the reduced marinade.
- Test:.meat near thigh bones should no longer be pink when tested with the tip of a knife.
- Boneless chicken breasts will cook quicker so turn after 5-7 minutes glazes the flip after 5-7 minutes and glaze.
- Wings over medium flame. You don't want too high of a temperature. You will also need to turn the wings frequently to avoid burning. It will mean standing by the grill, but you can cook a lot of chicken wings in about 15 to 20 minutes. Just before removing brush glaze over wings.
- Serve with warmed Autumn Pumpkin Sauce for dipping.
- FYI.
- All grills are different temperatures.
- Take advantage of indirect heat!
- If the chicken browns quickly finish over Brown over direct then move to indirect heat.indirect heat.
- All grills have hot spots so watch and be sure to move the chicken to spots on the grill so not to burn and completely cook the chicken.
