GRANDMA'S APPLESAUCE CAKE

- Place raisins and hot water in a small bowl; set aside. , In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, salt and spices; add to creamed mixture alternately with applesauce and water. Drain raisins; fold into batter with the walnuts. , Transfer to a greased 13x9-in. baking pan. Bake at 300° for 40 minutes or until a toothpick inserted in the center comes out clean. Place pan on a wire rack. Dust with confectioners' sugar if desired. Serve warm or cold.

In our house "certain members" (I'm not naming names) eat everything with a side of applesauce. Pork chops, eggs, steak, pancakes, everything. So we have many jars and many types. This is from my grandma Elsie, though she calls for shortening instead of butter. How embarrassing!

- Preheat oven to 350 degrees F.
- In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
- In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce. Fold in the raisins and walnuts. Pour batter into a greased and floured loaf or tube pan and bake until firm to the touch, about 40 to 45 minutes. Let cool in the pan, then turn it out, and dust with powdered sugar.
GRANDMA'S SPICY APPLESAUCE CAKE
Grandma used to bring this cake to picnics and potlucks. It travels well, keeps well, and holds together if you're eating with your fingers. My mother makes it for my father's birthday every year.

- Cream together butter and sugar.
- Add eggs and vanilla.
- Dust raisins in cocoa and set aside.
- Mix in dry ingredients and applesauce.
- Stir in raisins and nuts.
- Grease and dust a 9" tube pan or bundt pan with cocoa.
- Bake at 350 degrees for 70-80 minutes, until cake tests done with a toothpick.
- Cool slightly before removing from pan.

- Preheat oven to 350 degrees.
- Cream Earth Balance, shortening or other oil with sugar. In small bowl, mix together vanilla extract, applesauce, spices and baking soda. Combine applesauce mixture with creamed margarine and sugar, and gradually add flour until all is combined. Fold in dried fruit, nuts or whatever you may be adding. Sprinkle with sliced almonds, if using, and spread batter into a well greased 9 x 13 pan. Bake 20-25 minutes, until top is golden, and knife inserted in middle comes out clean. The top will be spongy to the touch... which makes it pretty fun to poke.
- If using smaller pan, recommended 8″-9″ pan, bake about 40-50 minutes, or until top is golden brown, and knife inserted in center comes out clean. Muffin cups should take a little less time than the 9 x 13 inch pan... watch until they have risen and are golden brown.
- Let cool and serve.

GRANDMA'S ONE BOWL MOLASSES APPLESAUCE CAKE
My Mom has been making this for 20 years. This is a very dense, moist cake, maybe closer to a pound cake, but that's what I like about it. We added the raisins to the recipe, so you could omit them. I also like to add Walnuts, some day I may also add some coconut. This is great warm or cold.

GRANDMA FLORENCE'S APPLESAUCE CAKE
This was made by my grandmother every Holiday. She would make three or four of these at Thanksgiving and Christmas. Her mom, Grandma Florence, made these for her when she was growing up. It has been passed down now to me, the fourth generation. Enjoy.

- Preheat oven to 350 degrees. Thoroughly cream shortening, sugars, and vanilla. Add eggs and beat thoroughly; stir in peanut butter. Stir dry ingredients into creamed mixture. Form into 1" balls, place on ungreased cookie sheet. Press each with back of a fork to make crisscross. Bake 10 to 12 minutes or until lightly browned. Remove from oven and allow cookies to cool on cookie sheet for 1 minute. Remove to wire rack and cool completely. Variations: Monster Cookies: Use an ice cream scoop to measure dough. Roll into balls. Place about 5 cookies on large cookie sheet. Make crisscross design. Bake for 16 to 18 minutes or until lightly browned. Remove from oven. Allow to cool on cookie sheet for 1 to 2 minutes. Remove to wire rack and cool completely. Soft Peanut Butter Cookies: Decrease shortening to 1/2 cup and add 1 stick of softened butter with the shortening. Glazed Cookies: Melt 1 cup of peanut butter chips and 1 tablespoon of shortening over low heat or in the microwave. Using a spoon, drizzle over cooled cookies.
