Cinnamon Roasted Sweet Potatoes and Apples image

This cinnamon roasted sweet potatoes and apples recipe is a healthy and easy fall side dish. Made with only 6 nutritious ingredients including pure maple syrup and ground cinnamon, it's a perfect dish to serve on Thanksgiving.

2 medium sweet potatoes (4 cups, cut into 1" cubes)
2 medium apples (about 2 cups, cut into 1" cubes)
3 TBS coconut oil (melted & divided)
1 tsp sea salt
2 TBS pure maple syrup
1 tsp ground cinnamon

Steps:

  • Preheat oven to 425 degrees F.
  • Grease a large baking pan, set aside.
  • In a large bowl, toss cubed sweet potatoes with 2 TBS of melted coconut oil. Stir until coated.
  • Add sea salt and stir until evenly distributed.
  • Bake in the preheated oven for 20 min, stirring halfway through, until sweet potatoes just barely start to brown.
  • While the sweet potatoes are baking: stir the remaining 1 TBS of coconut oil into the apples. Add maple syrup and cinnamon and stir to combined.
  • After 20 minutes, or the sweet potatoes have begun to brown, remove the sweet potatoes from oven and add the apple mixture and stir to combine.
  • Return to the oven and bake for 20 more minutes, stirring halfway through.
  • Once the sweet potatoes and apples are browned and the maple syrup has caramelized on them remove them from the oven and serve immediately!

1 (20 ounce) can apple pie filling (sugar free is fine too)
1 teaspoon cinnamon
1/2 teaspoon nutmeg (optional)
2 tablespoons brown sugar
1 (24 ounce) can yams, drained and cut into bite-sized pieces

Steps:

  • Cut apples in the pie filling into bite-sized pieces.
  • In a medium bowl, mix the pie filling, cinnamon, and brown sugar until well blended.
  • Gently stir in the cut-up yams.
  • Grease a two-quart casserole dish and pour in apple-yam mixture.
  • You may either microwave for approx 8-10 minutes until warmed through or you can put it into a 350F oven and bake approximately 15 minutes until warmed.

3 cups peeled sliced yams
3 cups peeled sliced tart apples
3/4 cup packed brown sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/8 teaspoon allspice
1/4 teaspoon salt
1/8 teaspoon pepper
4 tablespoons butter

Steps:

  • In greased 2 qt casserole, layer half the yams and half the apples.
  • Mix brown sugar and spices together.
  • Sprinkle half over yams and apples.
  • Dot with half the butter.
  • Repeat layers.
  • Cover and bake at 375* for 15 minutes.
  • Uncover, baste with the juices,and bake 15 minutes more.

2 tart apples, sliced
1/3 cup chopped pecans (or chopped almonds)
1/2 cup brown sugar, packed
3/4 teaspoon cinnamon
1 (24 ounce) can yams (or 6 pre-cooked yams)
1/4 cup butter (or margarine)
2 cups mini marshmallows

Steps:

  • Combine brown sugar and cinnamon.
  • Toss apples and nuts with the brown sugar mix.
  • Alternate layers of apples and yams in a 2 quart casserole dish.
  • Dot with butter between each layer.
  • Cover and bake at 325 degrees for 30 minutes.
  • Uncover and bake for an additional 30 minutes.
  • Remove and sprinkle top with marshmallows.
  • Place back in oven on "broil" until marshmallows are lightly browned.

2 garnet yams, peeled and cut into 1/2-inch dice
Extra-virgin olive oil
Kosher salt
4 to 6 slices thick cut bacon, cut into lardons
1 large onion, cut into 1/2-inch dice
2 Granny Smith apples, cored and cut into 1/2-inch dice
4 scallions, white and green parts separated, thinly sliced
1/2 cup green pumpkin seeds (pepitas), toasted

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large bowl, add the yams, drizzle with olive oil, and sprinkle with salt. Toss to coat and arrange them on a baking sheet. Roast the yams until they are soft but not mushy, 10 to 15 minutes. Remove from the oven and reserve.
  • Coat a large saute pan with olive oil. Add the bacon and put the pan over medium heat. When the bacon has started to get crispy and brown, add the onions, season with salt, and saute until the onions are very soft and aromatic. Add the apples and the scallion whites and saute for 3 to 4 minutes. Stir in the yams and saute until they are cooked through and starting to become crispy, 7 to 8 minutes.
  • Transfer to a serving platter and garnish with the scallion greens and pumpkin seeds.
  • Fantastico!

MAPLE YAMS WITH APPLES & CRANBERRIES

I had some beautiful organic jewel yams from my store that just begged for some love, and I searched all over the internet for a yam recipe that was just right. I didn't find anything that was exactly what I wanted: something with less sugar and more flavor, no nuts, and definitely no marshmallows! This is what I came up with.

4 lbs jewel yams, baked (or sweet potatoes)
2 apples (preferably Granny Smith)
1/8 cup lemon juice
1/4 cup butter
1/4 cup pure maple syrup
1/4 cup sucanat (can also use turbinado, rapadura, or brown sugar)
3/4 teaspoon ground cinnamon
1/3 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/8 cup crystallized ginger, finely chopped (optional)
1/2 cup unsweetened orange juice
2 cups cranberries (fresh or frozen)

Steps:

  • Scrub yams thoroughly, place on baking sheet and bake at 400 degrees F until cooked but still somewhat firm, about 30-40 minutes.
  • Set yams aside to cool.
  • Slice apples thinly. Leave the skin on, for its color, its wonderful nutritional value, and so the apples keep their shape. I used Granny Smiths because they have a nice tartness and don't fall apart in baking, but Golden Delicious or similar would also be good.
  • Toss apples with lemon juice and set aside.
  • Combine all remaining ingredients EXCEPT for cranberries in small saucepan, and cook until sugar is dissolved, creating a thin sauce.
  • Set aside.
  • Preheat oven to 350 degrees F.
  • Slice sweet potatoes into thick slices, or cut into chunks as desired, leaving the skins on. (Remember--fiber is good!).
  • Assemble casserole in a greased 9x13x2-inch baking dish (stoneware or glass), layering the yams, then apples, then the cranberries. There should be enough for two layers of each.
  • Pour sauce over the top of the casserole.
  • Bake uncovered casserole for 30-45 minutes, basting intermittently with its own juices (or with extra fruit juice for a more moist casserole--I used some apple cider I had on hand) until apples are tender and dish is hot.
  • Let sit for 10 minutes before serving, if possible, so the juices can thicken up a bit.
  • Variation: Drizzle lightly before serving with some warm maple syrup and/or flax oil.
  • Alternatively: if you're preparing it ahead of time, cover dish with foil and refrigerate overnight, and bake as usual the next day.
  • Note on the "maple syrup": you must use natural maple syrup, not pancake syrup! I used Grade B--it has a higher nutrient content and a richer flavor. If you don't have maple syrup on hand, just use honey instead. The taste won't be as rich, but it will still be yummy.

2 (15 ounce) cans cut yams, drained
¼ cup margarine
2 cups mini marshmallows

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Toss apple, pecans, brown sugar, and cinnamon together in a bowl. Alternate layers of coated apple and cut yams in an 11x7-inch pan. Dot with margarine and cover.
  • Bake in the preheated oven until reduced and bubbly, 30 to 40 minutes. Cover with marshmallows and continue to bake until golden, 10 to 20 minutes more.
