COPYCAT APPLEBEE'S QUESADILLAS
This is a copycat version of Applebee's famous quesadillas. Using the Pico de Gallo recipe #83371 (thank you EdsGirl), you won't be able to tell the difference between these and the ones from the restaurant. Please note, the recipe is for one serving, adjust accordingly to suit your needs.

Steps:
- Be sure to have everything handy, as these move quickly.
- Spread butter lightly on one side of flour tortilla.
- Place buttered side down on heated non-stick skillet.
- Immediately add bacon bits, cover with cheese and spoon on pico de gallo.
- Spread butter lightly on one side of another flour tortilla.
- Place second tortilla buttered side UP on top of fixings in skillet.
- Check underside of first flour tortilla.
- If browned to your satisfaction, carefully flip quesadilla over to brown second tortilla.
- When second tortilla is browned sufficiently, remove quesadilla from skillet.
- Serve warm, with dipping condiments of your choice.

I have never eaten Applebees Quesadilla burgers but I can say that these burgers are awesome! You can adapt this to make as many burgers as you need. I used a little over a pound of hamburger for 4 burgers and had left over seasoning.

- For hamburgers:.
- Combine all seasoning ingredrients. Use one heaping Tblsp of seasoning mix per pound of hamburger meat. Mix into hamburger meat until well combined. Fry or grill. ( I used George Foreman grill).
- Assembling the complete burger:.
- Heat a large frying pan over medium heat. Spread butter on one side of each tortilla. Put one tortilla, butter side down in the hot pan. Sprinkle the cheeses evenly onto the center of the tortilla in the pan- but not all the way to the edges. Put the tomato, onion, bacon and jalapeno over the cheese, add the cooked seasoned burger and cover with the other tortilla butter side up (like a grilled cheese sandwhich). When the bottom is browned, about 45-90 seconds, flip the quesadilla and grill the other side. Remove the quesidilla from the pan and using a pizza cutter, cut throught the middle. Serve.

- Preheat a griddle to medium-high heat, and spray with nonstick cooking spray. Place the 4 balls of beef on the griddle and press the balls down to form burger patties. Find something that is flat in your kitchen to help press down on the patties.
- Cook patties to your desired doneness, about 4 minutes per side for medium. Transfer to a plate.
- Spray the griddle again with cooking spray, Add a flour tortilla and top with a cheese slice and lettuce.
- Place a cooked burger on top, then top with more cheese, and cup pico de gallo and a drizzle of sour cream.

- Mix ground beef with salt & pepper then form into 2 large round patties. Add to a skillet over med-high heat and cook for 3 minutes per side. Meanwhile, mix ingredients for Mexi-ranch sauce together in a medium-sized bowl.
- Remove burgers from heat. Add 1/2 cup cheese to one tortilla, then layer on pico de gallo. Place burger on top, then add another 1/2 cup cheese and finish with another tortilla. Repeat process one more time to form a second quesadilla.
- Fry one quesadilla at a time in a large frying pan covered with a lid over med-high heat for 3-4 minutes per side, flipping very carefully. Once cheese is melted, remove from heat.

- Form 2 pounds of ground beef into 6 hamburger patties. To make them fit the flour tortillas better, make the patties thinner, with a diameter of about 4-5 inches. Grill the burgers on a preheated grill (400º Fahrenheit). The internal temperature should be at least 165º Fahrenheit.
- While the burgers are grilling, spray a frying pan with cooking spray. With the stove on medium-low, lightly toast the flour tortillas for about 2-3 minutes on each side. They should be light brown, and still a little chewy on the inside.
- Put one slice of cheese on a toasted flour tortilla. Place a burger over the cheese with another slice of cheese on top of the burger.
- For the sauce, mix the ketchup and mayonnaise. Mix in 3/4 cup Pico de Gallo to the mayonnaise/ketchup mixture.
