APPLEBEE'S BROCCOLI CHEESE SOUP RECIPE

Steps:

• Place a stockpot over medium heat.
• Add butter and heat until melted and hot.
• Place onion in pot and cook until softened.
• Stir in broccoli.
• Cover with chicken broth. Allow to simmer until broccoli is tender, about 10 to 15 minutes. Reduce heat.
• Add cheese cubes. Cook, stirring constantly, until melted.
• Add milk and garlic powder. Mix well.
• In a small bowl, stir cornstarch into water until dissolved. Stir into soup.
• Continue to cook, stirring frequently, until soup thickens.

APPLEBEE'S CHICKEN CHEESE TORTILLA SOUP - COPYCAT

Steps:

• Sauté garlic and onions in oil in large pan or Dutch oven until soft.
• Add next 10 ingredients to pot, bring to a boil, reduce heat, and simmer 20 minutes.
• Whisk flour/w ater mixture into soup.
• Bring to a boil, reduce heat, and simmer for 5 minutes.
• Add chicken and simmer for 5 minutes.
• Add cream, sour cream, and cheese; stir until cheese is melted.
• Deep-fry tortilla strips in 350 degree oil OR spray with non-stick cooking spray and bake in a 400 degree oven until crisp.
• Sprinkle with salt if desired.
• Pour soup into bowls, pile tortilla strips into a "haystack" shape on top of the soup, garnish with cilantro.

Steps:

• Bring water and chicken bouillon granules to a boil in a pot. Add broccoli and onion; cook at a boil until tender, 10 to 12 minutes.
• Combine milk, margarine, flour, and cream cheese in a large pot over medium heat; cook and stir until the margarine melts and the mixture begins to thicken, about 5 minutes.
• Stir Cheddar cheese into the milk mixture; cook and stir until the Cheddar melts completely.
• Pour the broccoli mixture into the cheese mixture in the large pot; stir well.
