i love going to my sisters house and she makes this wonderful dessert it's so good i don't know when to quit eating it

Ingredients

1 pouch (17.5 oz) sugar cookie mix
1 egg
1 stick butter, softened
1 tsp cinnamon
1/2 c toffee bits (bit o' brickle)
1 c apples, peeled, cored and chopped finely
FOR THE FROSTING:
1/4 c butter
1/2 c brown sugar
2 Tbsp milk
1 c powdered sugar
1/ tsp vanilla extract

Steps:

1. Preheat oven to 350. Line a 9x9 inch pan with foil and spray with cooking spray.
2. Using a hand mixer or stand mixer, beat sugar, cookie mix, egg, butter and cinnamon until fluffy.
3. Stir in toffee bits and apples. Press into prepared pan and bake 35-40 minutes, until lightly browned. Cool completely before making the frosting.
4. To make the frosting, add butter, milk and brown sugar in a medium saucepan over medium heat.
5. Bring to a boil and remove from the heat. Cool slightly and stir in powdered sugar and vanilla.
6. Remove foil from the bottom of the cookie bars. Pour frosting over the top of the bars, smoothing out to the edges.
7. The top of the frosting will dry quickly. Let set before cutting into bars, about 30 minutes to 1 hour.

Ingredients

40ml Somerset brandy 5yr (Calvados will do - nothing with too much age as it will start to lose some of its apple-y character)
20ml lemon juice
20ml egg white
10ml toffee syrup (Biona Caramel Agave Syrup is great, or see the recipe below)
Breton cider to top up (about 40-50ml)

Steps:

Put all the ingredients, except the cider, into a cocktail shaker and dry shake (no ice).
Add ice to the shaker and shake again. Strain into a small wine glass and top with the Breton cider.
