Number Of Ingredients 7

12 cups chopped peeled Granny Smith apples (about 6 pounds)
4 cups sugar
2 cups packed brown sugar
1 cup maple syrup
1 teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
2 cups finely chopped walnuts, toasted

Steps:

  • In a stockpot, combine apples, sugars, maple syrup, cinnamon and pie spice; bring to a boil. Cook, uncovered, 20-30 minutes or until apples are tender and mixture is slightly thickened. Stir in walnuts. Return to a boil; cook and stir 5 minutes longer., Carefully ladle hot mixture into 11 hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

Number Of Ingredients 9

4 cups peeled, diced apples {I used a mixture of Granny Smith and Pink Lady}
2 tablespoons lemon juice {I used bottled}
1 1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 box pectin
4 cups granulated sugar
1 cup firmly packed brown sugar
1/2 teaspoon unsalted butter

Steps:

  • Bring a boiling-water caner, 3/4 full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
  • Dice the apples and place in a 4 cup measuring cup. Cover the apples with water to top of the 4 cup measuring mark. Place apples in a 6 -8 quart pot, add spices, lemon juice, butter and pectin and bring to a full rolling boil.
  • Slowly stir in the sugar and return to a full rolling for 1 minute, making sure to stir constantly to avoid boiling over. Remove from heat and skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. {Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.} Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. If lids spring back, lids are not sealed and refrigeration is necessary}. Yields {6} 1/2 pints.

1 cup flour
1/2 cup packed brown sugar (I prefer dark but light works too)
1/2 cup old-fashioned oats
1 teaspoon ground cinnamon
1/2 cup 1 stick cold unsalted butter, cut into small pieces
4-5 large apples (peeled, cored, and cut into 3/4-inch pieces (about 5 cups) (Granny Smith, Golden Delicious, and Gala are all great))
2 cups of your favorite homemade cranberry sauce (or 1 (16-ounce) can whole-berry cranberry sauce)
3/4 cup sugar
1/2 teaspoon vanilla extract
1 teaspoon cornstarch
Also
1 pie crust for the bottom (your favorite recipe or store-bought refrigerated, no judgment!)
Vanilla ice cream

Steps:

  • Preheat the oven to 350° F.
  • Make the crumb topping. Mix the flour, brown sugar, oats, and cinnamon in a medium bowl. Add the butter and cut in with your fingers until the mixture resembles large coarse crumbs.
  • Make the filling. In a large bowl, mix the apples, cranberry sauce, sugar, vanilla, and cornstarch until well mixed.
  • Place the pie crust in a pie dish, and pour the apple filling into the shell. Mound it a little in the middle.
  • Sprinkle the crumb topping over the apples. There will be a lot. Pack it down a bit, if necessary.
  • Place the pie on a baking sheet, and place in the oven. Bake for about an hour and 10 minutes, or until the apples are tender and the crust and top are golden brown.
  • Transfer to a wire rack and cool for at least 15 minutes.
  • Serve with vanilla ice cream.

1 lb tart apple
1/2 cup raisins
1 cup water
1/3 cup lemon juice
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground allspice
4 1/2 cups granulated sugar
1 cup packed light brown sugar
1/2 teaspoon butter
1 packet liquid pectin

Steps:

  • Peel, core and finely chop enough apples to get 2 cups.
  • Place all ingredients except pectin in a large pot and while stirring bring to a full boil.
  • Boil hard for 1 minute.
  • Remove from heat and immediately stir in pectin.
  • Bring to a full rolling boil and boil hard for 1 minute.
  • Remove and skim off foam and then skim again.
  • Ladle into clean hot jars leaving 1/2 inch head space.
  • Seal and process for 10 minutes in a boiling water bath at altitudes up to 1000 feet.
  • Note-the apples will rise to the top so after the"pop" I turn the jars a few times.

This easy apple orange marmalade is made without added pectin. This is a wonderful way to preserve your apple harvest!

3 pounds tart apples, thinly sliced (about 8 cups)
1 orange
1 1/2 cups water
5 cups sugar
2 tablespoons lemon juice

Steps:

  • Fill a boiling water bath canner with water. Add 7 half-pint canning jars to the water and bring to a boil. Reduce heat to low and keep the water simmering while you prepare the fruit.
  • Put the lids in a saucepan and bring to a simmer. Do not boil. Keep the lids hot while you prepare the fruit.
  • Wash, peel, quarter, and core the apples. Slice the apples thinly; measure 8 cups (2 quarts).
  • Quarter the orange, remove the seeds, and slice very thinly.
  • Heat the 1 1/2 cups of water and sugar until the sugar has dissolved. Add the lemon juice and fruit.
  • Boil the fruit and syrup mixture rapidly, stirring constantly, to 9 F above the boiling point of water at your altitude, or about 221 F to 222 F at normal altitude. or until the mixture thickens. If you don't have a candy or jelly thermometer, see the test methods below.
  • Remove from heat; skim off foam.
  • Pour immediately into the hot, sterile canning jars, leaving 1/4-inch headspace. Wipe the rims and threads with a clean damp cloth or paper towels and position the lids. Screw the rings on to fingertip tightness. Do not overtighten.
  • Put the filled jars in the canner. If the water does is not at least 1 inch above the jar tops, add hot water. Bring to a boil; reduce heat to a gently boil. Process for 5 minutes after the water comes to a boil. (10 minutes for altitudes from 1,001 to 6,000 feet, 15 minutes for an altitude above 6,000 feet) Expert Tips Testing for the Jelly Point Two ways to test for jelling if you don't have access to a reliable thermometer are sheeting and the cold plate method. For the sheeting method, dip a cool metal spoon into the boiling marmalade. Raise it out of the mixture and hold it over the pan. Turn the spoon so the mixture will run out. If the marmalade forms drops that combine to form a sheet that hangs off the spoon, it is done. For the cold plate method, place a few small plates in the freezer. When you think the marmalade might be done, take a plate out of the freezer. Drop a teaspoon of hot marmalade on the cold plate. Let it stand for about 30 seconds and then tip the plate to the side. 1/2 cup golden raisin
3 cups cored peeled finely chopped granny smith apples
1/4 cup strained fresh lemon juice
4 cups sugar
1 1/4 cups firmly packed light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon unsalted butter
1 (3 ounce) package liquid pectin

Steps:

  • In a bowl, combine apple juice and raisins; let stand for 1 hour to plump the raisins.
  • In an 8-quart pan, combine the apples and lemon juice, stirring until the apples are well coated; stir in the raisin mixture.
  • In a bowl, combine the sugar, brown sugar, cinnamon, and nutmeg until blended.
  • Stir the sugar mixture into the apple mixture; add in the butter.
  • Over med-low heat, heat the apple mixture, stirring constantly, until the sugar is dissolved.
  • Increase heat to med-high and bring the mixture to a boil; decrease heat and simmer, stirring constantly, for 3 minutes.
  • Increase heat to med-high and bring mixture to a full rolling boil, stirring constantly.
  • Stir in the pectin; return to a full rolling boil, stirring constantly.
  • Boil, stirring constantly, 1 minute.
  • Remove pan from heat; skim off any foam.
  • To prevent floating fruit, allow conserve to cool for 5 minutes before filling jars.
  • Gently stir conserve to distribute fruit.
  • Ladle the conserve into hot jars, leaving ¼ inch headspace.
  • Wipe the jar rims and threads with a clean, damp cloth.
  • Cover with hot lids and apply screw rings.
  • Process half-pint jars in a 200° water bath for 10 minutes, pint jars for 15 minutes.
