APPLE PECAN MUFFINS
This is an old favorite of mine that I've made for the last 20 years or so. I think the original came from a magazine, and I tweaked it a bit to suit my tastes. If you don't have pecans, feel free to use walnuts.

Steps:
- Preheat oven to 375*. Grease or line 12 muffin cups.
- Mix the 2 tablespoons of sugar and 1 1/2 teaspoons cinnamon together for topping and set aside.
- Mix flour, sugar, cinnamon, baking powder, baking soda and salt together in a large bowl.
- Whisk eggs, then add milk and oil - mix. Stir this into dry ingredients until just mixed.
- Fold in the apples and pecans.
- Spoon batter into muffin cups & sprinkle with the cinnamon sugar.
- Bake @ 375* for 20-25 minutes.

- Preheat oven to 400ºF and grease or line a 12-cup muffin tin.
- In a large bowl, beat together the eggs, oil, buttermilk/yogurt, molasses, and honey.
- Stir in the wheat bran.
- In medium bowl, mix together the pastry flour, oats, baking powder, baking soda, cinnamon, ginger, and nutmeg.
- Stir the flour mixture into the bran mixture, being careful not to overmix.
- Fold in the apple and pecans.
- Spoon the batter into muffin tin and bake 20 to 25 minutes, or until toothpick inserted into the center of a muffin comes out clean.

APPLE MUFFINS

- Preheat the oven to 400 degrees F. Coat a 12-capacity standard muffin pan with cooking spray.
- In a small bowl, mix together the pecans, 2 tablespoons of the brown sugar and the cinnamon.
- In a medium bowl, whisk together the all-purpose and whole wheat flour, baking soda and salt.
- In a large bowl, whisk the remaining 3/4 cup sugar and the oil until combined. Add the eggs, one at a time, whisking well after each addition. Whisk in the applesauce and vanilla.
- Whisk in the flour mixture in two batches, alternating with the buttermilk. Whisk just until combined. Gently stir in the apple chunks.
- Pour the batter into the prepared muffin pan and sprinkle with the pecan mixture. Tap the pan on the counter a few times to remove any air bubbles. Bake until a wooden pick inserted in center of one of the muffins comes out clean, 20 to 25 minutes.
- Let cool on a wire rack for 15 minutes. Run a knife around the muffins to loosen them and unmold. Cool completely on the rack.

- In a skillet, saute apples in butter until tender, about 10 minutes. Combine cereal and water in a large bowl; stir in buttermilk, eggs, sugar, raisins and apples with butter. Combine dry ingredients; stir into apple mixture just until moistened. Refrigerate in a tightly covered container for at least 24 hours (batter will be very thick). Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

Our neighbors often give us oranges from their trees, so I revised this muffin recipe to make use of this delicious and vitamin-rich fruit.

- In a large bowl, combine first four ingredients. Set aside. Remove the peel from two of the oranges. Cut all the oranges into eighths and remove seeds; puree in a blender or food processor If necessary, add enough water to puree to equal 2 cups. Stir oranges, eggs, oil, cereal and pecans into the dry ingredients. Blend only until mixed. Fill greased muffin tins 3/4 full. Bake at 375° for 10-25 minutes.

- Preheat oven 200°C and line muffin pan with paper cases or grease them.
- Combine apples, sugar, oil, eggs, vanilla and orange peel, mix well.
- Add raisins and nuts.

- Preheat oven to 400 degrees F (200 degrees C). Line 12 muffin cups with paper liners.

HEART HEALTHY APPLE OAT BRAN MUFFINS
Steps:
- Preheat oven to 375 degrees.
- Make the streusel topping first by mixing together the brown sugar, ground flaxseed and chopped pecans.Cut in the cold butter until the mixture resembles coarse crumbs.
- Combine flour, oat bran, brown sugar, ground flaxseed, cinnamon, baking soda, baking powder, and salt well with a whisk. Stir in diced apples and golden raisins.
- In another bowl whisk together milk, applesauce, vanilla extract, egg whites and coconut oil.
- Add the milk mixture to the flour mixture and stir together until combined.

APPLE BRAN MUFFINS
This is a nice change from a plain bran muffin. It's somewhat healthier, because it's made with yogurt. I always double the cinnamon sugar on top (personal preference). Sometimes I add some chopped pecans (or walnuts). Don't let the long list of ingredients scare you - these come together fast.
