½ cup all-purpose flour
¾ cup brown sugar
½ cup butter, softened
2 cups peeled and diced apples
2 cups peeled and diced pears
¾ cup brown sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix oats, flour, 3/4 cup brown sugar, and butter together in a bowl until crumbly.
  • Mix apples, pears, 3/4 cup brown sugar, and cinnamon together in a separate bowl; spread into the bottom of a 9x9-inch glass pan. Sprinkle oat mixture atop apple-pear mixture; top with almonds.
  • Bake in the preheated oven until the top is golden brown, about 40 minutes.

3/4 cup dried cranberries
1 teaspoon grated orange zest

2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel and core the pears and apples and cut them into large chunks. Place the fruit in a large bowl and toss with the cranberries, zests, juices, granulated sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch baking dish.
  • For the topping:
  • Combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with a paddle attachment. Mix on low speed for 1 to 2 minutes, or until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
  • Place the baking dish on a parchment-lined sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

2 Comice pears - peeled, cored, and cubed

  • Substitute peaches or pears when they are in season. Microwave method: Place apples in a microwave baking pan and sprinkle with lemon juice, maple syrup, and cornstarch, and toss to combine. In a small bowl, melt butter at High for 30 to 45 sec. Stir in rolled oats, brown sugar, nuts and cinnamon. Combine well. Sprinkle evenly over apples. Microwave at High for 8 to 10 min. Allow 5 to 7 min after cooking time. Oven method: Preheat the oven to 350℉ (180℃) F. Butter a 9-by-9 or similar capacity baking dish . It is easy to make and to play with, try adding some chopped walnuts to the crisp or use a completely different fruit for the filling, such as peaches. It's great warmed up in the microwave but it's equally good straight out of the fridge. Wonderful comfort food for winter or exam time. Very easily converted into vegan by substituting margarine for butter.

3 medium-large apples, peeled and sliced (about 4-5 cups)
1/2 cup brown sugar, packed
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1 1/2 teaspoon ground cardamom
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
1 tablespoon lemon juice
1/4 teaspoon kosher salt
3/4 cup all-purpose flour
1/3 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon kosher salt
1 stick cold unsalted butter, cubed (*see recipe notes)
3/4 cup gingersnap cookie crumbs (*see recipe notes)
1/4 cup old-fashioned oats
1/2 cup pecans, chopped (optional)

Steps:

  • Preheat oven to 350 F. Lightly spray or grease a 9 x 13 inch baking dish or other 3 quart baking dish.
  • In a large bowl mix together all of the filling ingredients: pears, apples, brown sugar, flour, spices, vanilla, lemon juice and salt. Spread evenly into your baking dish.
  • For the topping: In a medium bowl whisk together flour, brown sugar, cinnamon and salt. Cut in the cold butter with either a pastry cutter, two forks or with your hands. The mixture should resemble pea-sized crumbs. Stir in the gingersnap crumbs, oats and nuts (if using).
  • Evenly spread topping on top of pear-apple mixture.
  • Bake for 40-50 minutes or until the top is golden brown and the juices inside are bubbling. Remove and let cool at least 5 minutes before serving.
  • Serve warm or room temperature with vanilla ice cream or whipped cream, if desired.

2 tablespoons white sugar

1/3 cup ground flax seed
1/4 cup brown sugar, packed
1/3 cup quick-cooking oats

Steps:

  • Preheat oven to 350-degrees.
  • Combine apples and lemon juice in a baking dish, coated with nonstick spray, and toss gently to coat.
  • Combine sugar, cornstarch and 1 teaspoon cinnamon. Stir with a whisk to blend.
  • Add cornstarch mixture to apple mixture and toss well to coat.
  • Combine flax, remaining cinnamon, brown sugar, and oats in a separate bowl. Sprinkle evenly over apple mixture.
  • Bake for approximately 40 minutes or until apples are tender and topping golden brown.
