Steps:
- Whisk together the flour, confectioners' sugar, baking powder, cinnamon, allspice, salt and nutmeg in a large bowl. Pour in the cider and vanilla extract, and whisk to make a smooth batter.
- Preheat the oven to 200 degrees F.
- Pour enough oil into a heavy-bottomed soup pot so it comes about a third of the way up the sides. Heat the oil over medium heat until a deep-frying thermometer inserted in the oil registers 360 degrees F.
- Peel, core and slice the apples into rounds, about 1/3-inch thick. Put some flour in a shallow bowl. Working in batches, dust the apple slices in the flour, then dip in the batter to evenly coat. Carefully add to the oil. Fry, turning once, until golden and crisp, about 5 minutes. Transfer to a rack set on a baking sheet, and keep warm in the oven. Repeat the process until all of the apples are cooked, allowing the oil to return to 360 degrees F between batches.
- Dust with confectioners' sugar or cinnamon sugar and serve immediately.
AMERICA'S TEST KITCHEN SKILLET APPLE CRISP
If your skillet is not ovensafe, prepare the recipe through step 3 and then transfer the filling to a 13 by 9-inch baking dish. Top the filling as directed and bake for an additional 5 minutes. We like Golden Delicious apples for this recipe, but any sweet, crisp apple such as Honeycrisp or Braeburn can be substituted. Do not use Granny Smith apples in this recipe. While rolled oats are preferable in the topping, quick-cooking oats can be substituted. Serve the apple crisp warm or at room temperature with vanilla ice cream or whipped cream.

Steps:
- FOR THE TOPPING: Adjust oven rack to middle position and heat oven to 450 degrees. Combine flour, pecans, oats, brown sugar, granulated sugar, cinnamon, and salt in medium bowl. Stir in butter until mixture is thoroughly moistened and crumbly. Set aside while preparing fruit filling.
- FOR THE FILLING: Toss apples, granulated sugar, and cinnamon (if using) together in large bowl; set aside. Bring cider to simmer in 12-inch ovensafe skillet over medium heat; cook until reduced to ½ cup, about 5 minutes. Transfer reduced cider to bowl or liquid measuring cup; stir in lemon juice and set aside.
- Heat butter in now-empty skillet over medium heat. When foaming subsides, add apple mixture and cook, stirring frequently, until apples begin to soften and become translucent, 12 to 14 minutes. (Do not fully cook apples.) Remove pan from heat and gently stir in cider mixture until apples are coated.
- Sprinkle topping evenly over fruit, breaking up any large chunks. Place skillet on baking sheet and bake until fruit is tender and topping is deep golden brown, 15 to 20 minutes. Cool on wire rack until warm, at least 15 minutes, and serve.
GLAZED APPLE FRITTERS
Thanks to a yeasted dough and a blend of flours, these glazed apple fritters strike the perfect balance between crisp and doughy, and are a decadent way to start the day or end a meal. Giving diced Granny Smith apples a quick sauté in butter before incorporating into the dough benefits the recipe in two ways: it avoids extra moisture from seeping into the dough when frying (which causes gumminess), and it ensures a fritter with a concentrated apple flavor in every bite.

Steps:
- Filling: Using a paring knife, scrape out the vanilla seeds. Place half of the pod, half of the seeds, and 2 tablespoons butter in a 12-inch skillet; set over medium-high heat. Cook until butter is bubbling. Add half of the apples; toss to coat. Add 1/4 teaspoon cinnamon and 2 tablespoons sugar; saute, stirring occasionally, until apples begin to soften, about 5 minutes. Add 2 tablespoons vinegar and 1/2 cup cider; increase heat to high. Cook until liquid has been absorbed and apples start to brown, about 8 minutes. Remove from heat. Remove and discard pod. Transfer apples to a baking sheet. Wash skillet, and repeat with the remaining ingredients.
- Dough: Place yeast in the bowl of an electric mixer. Heat milk in a pan over medium heat until warm to the touch. Pour milk over yeast; sprinkle 2 cups pastry flour on top. Set aside until flour begins to crack, 15 to 20 minutes.
- Place the egg yolks and sugar in a medium bowl; whisk to combine. Add the cider, butter, salt, cinnamon, vanilla extract, the remaining 1/4 cup pastry flour, and 1 cup bread flour; whisk to combine.
- Add flour mixture to the yeast mixture. Using the dough-hook attachment, mix on low speed 30 seconds. (The dough should look very soft but still have structure; if it appears liquidy, add remaining 2 tablespoons bread flour.) Increase speed to medium and mix dough 3 to 4 minutes.
- Lightly oil a large bowl. Sift an even layer of pastry flour onto a clean work surface, and lightly flour your hands. Turn out dough, and gather into a ball. Transfer dough to oiled bowl, and cover with plastic wrap. Set aside in a warm place to rise until doubled in size, about 1 1/2 hours.
- Lightly dust a baking pan with flour, and line a second one with paper towels. Set both pans aside.
- Turn out dough onto a lightly floured work surface. Using your hands, stretch the dough into a 10-by-15-inch rectangle, about 1/2 inch thick. Spread half of the reserved apple mixture over dough, and fold dough, like a letter, into thirds. Pat down with your hand, forming another 10-by-15-inch rectangle. Spread the remaining apples over the dough, and fold into thirds again; the apples will be evenly distributed throughout the dough. Gather the dough into a ball, and return dough to oiled bowl. Re-cover, and set aside in a warm place until doubled in size again, about 30 minutes.
- Turn out dough onto a lightly floured work surface; pat into a 10-by-15-inch rectangle, about 1 inch thick. Using a 2 1/2-inch round cutter, cut out fritters as close together as possible, dipping cutter in flour before each cut. Transfer fritters to floured baking pan. Set aside to rest 10 minutes, but not longer.
- While dough rests, heat oil in a low-sided six-quart saucepan over medium-high heat until a deep-frying thermometer registers 375°F.
- Flour your hands. Lift a fritter, pulling the ends to make a 4-inch oval; carefully drop into oil. Repeat with two more pieces of dough. Cook until fritters begin to brown, about 2 minutes. Using a slotted spoon, turn fritters over; cook until evenly browned, 2 minutes more. Transfer fritters to lined pan. Repeat with remaining dough.
- Coat fritters with white glaze. Transfer to a wire rack, and let glaze set. Serve warm or at room temperature.

Steps:
- ROLL OUT DOUGH 1. Lay one disk of dough on generously floured counter and roll dough outward from its center into 12-inch circle. 2. Between every few rolls, give dough a quarter turn to help keep circle nice and round. 3. Toss additional flour underneath dough as needed to keep it from sticking to counter. 4. Loosely roll dough around rolling pin. 5. Gently unroll dough over 9-inch pie plate, letting excess dough hang over edge. 6. Cover with plastic wrap and refrigerate for at least 30 minutes. 7. Roll other disk of dough into 12-inch circle on generously floured counter. 8. Transfer dough to parchment-lined baking sheet. 9. Cover dough with plastic wrap and refrigerate for at least 30 minutes. PREPARE APPLES AND LEMON 10. Use vegetable peeler to remove peels from 2 1/2 pounds tart apples and 2 1/2 pounds sweet apples. 11. Cut away four sides of apples, leaving behind core. Discard cores. 12. Turn each piece of apple on flat side and cut into 1/4-inch-thick slices. 13. Use rasp grater to remove enough zest from 1 lemon to yield 1/2 teaspoon. 14. Juice lemon to yield 2 teaspoons juice. COOK APPLES 15. Toss apples, 1/2 cup granulated sugar, 1/4 cup brown sugar, lemon zest, 1/4 teaspoon salt, and 1/8 teaspoon cinnamon together in large Dutch oven. 16. Cover and cook over medium heat, stirring frequently, until apples are tender when poked with fork but still hold their shape, 15 to 20 minutes. 17. Transfer apples and their juice to rimmed baking sheet. 18. Let cool to room temperature, about 30 minutes. ASSEMBLE PIE 19. Adjust oven rack to lowest position and heat oven to 425 degrees. 20. Drain cooled apples thoroughly through colander set in large bowl, reserving 1/4 cup of juice. 21. Stir lemon juice into reserved 1/4 cup apple juice. 22. Spread apples into dough-lined pie plate, mounding them slightly in middle. 23. Drizzle apples with lemon juice mixture. 24. Loosely roll second piece of dough around rolling pin and gently unroll it over pie. 25. Using scissors, trim all but 1/2 inch of dough overhanging edge of pie plate. 26. Press top and bottom crusts together. 27. Tuck edges of dough underneath. 28. Crimp dough evenly around edge of pie, using your fingers. 29. Cut 4 vent holes in center of top crust with paring knife. 30. Lightly beat 1 egg white in small bowl. 31. Brush crust with egg white. 32. Sprinkle with remaining 1 tablespoon sugar. BAKE PIE 33. Place pie on foil-lined baking sheet and transfer to oven. 34. Bake until the crust is golden, about 25 minutes. 35. Reduce oven temperature to 375 degrees. 36. Rotate baking sheet. 37. Continue to bake until juices are bubbling and crust is deep golden brown, 25 to 30 minutes longer. 38. Let pie cool on a wire rack until filling has set, at least 2 hours. 39. Cut into wedges and serve.
