Sweetening the apples with apricot jam and orange juice makes it twice as fruity and adding a little syrup to the oaty crumble makes great little chewy clusters

1.1kg eating apples , such as Coxes
3-4 tbsp apricot jam
juice 1 large orange
140g porridge oats
100g plain flour
1 tsp ground cinnamon
100g butter
100g light muscovado sugar
1 tbsp golden syrup

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Peel, core and thinly slice the apples and mix with the jam and orange juice. Spread evenly over a buttered 1.5-litre ovenproof dish, not too deep.
  • Mix the oats, flour and cinnamon in a large bowl. Add the butter in small chunks and rub in gently. Stir in the sugar and rub in again. Drizzle over the syrup, mixing with a knife so it forms small clumps. Sprinkle evenly over the apples and bake for 30-35 mins until the juices from the apples start to bubble up. Cool for 10 mins, then serve with custard, cream or ice cream.

50g butter, plus a little extra for greasing
2 tbsp smooth peanut butter
3 tbsp honey or maple syrup
2 ripe bananas, mashed
1 apple, peeled and grated
250g rolled oats
85g dried apricot, chopped
100g raisin
85g mixed seed (we used pumpkin and sunflower)

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 20cm square tin with baking parchment. Heat the butter, peanut butter and honey or maple syrup in a small pan until melted. Add the mashed banana, apple and 100ml hot water, and mix to combine.
  • Tip the oats, the dried fruit and the seeds into a large bowl. Pour in the combined banana and apple and stir until everything is coated by the wet mixture. Tip into the cake tin and level the surface. Bake for 55 mins until golden. Leave to cool in the tin. Cut into 12 pieces to serve or store in an airtight container in the fridge. They will keep for up to 3 days.

175g butter, plus extra for the tin
2-3 apples (about 350g), peeled, cored and chopped into small pieces
200g golden syrup
150g light brown soft sugar
300g porridge oats
50g apples, chopped
1/2 tsp ground cinnamon (optional)

Steps:

  • Heat the oven to 180C/160C fan/ gas 4. Butter the base of a 20 x 20cm square tin and line with baking parchment. Tip the chopped apples into a small saucepan with 2 tsp water and cook over a medium heat for 3-4 mins until the apples are just soft enough to crush, but there's still a little water left in the pan. If needed, add a little more water and cook the apples for slightly longer. Remove from the heat and crush the apples using a potato masher or a fork to break up slightly, then tip into a bowl and set aside.
  • Tip the butter, golden syrup and sugar into the pan and warm through over a low heat until the butter has melted and the sugar has dissolved. Remove from the heat and set aside.
  • Combine the oats, dried apple and cinnamon, if using, in a large bowl. Tip in the buttery syrup mix and cooked apples, then stir to combine. Tip the flapjack mixture into the prepared tin and press down firmly. Level the surface using a spatula, then bake for 25-30 mins until golden and bubbling at the sides. Leave to cool. Cut into 16 pieces. Will keep in an airtight container for three days.

2 Bramley Apples (peeled and chopped into small pieces.)
2 tbsp Caster Sugar
1 tsp Water
200 g Butter (unsalted)
5 tbsp Golden Syrup
50 g Light Brown Sugar
75 g Demerara Sugar
400 g Oats
1 tsp Cinnamon

Steps:

  • Preheat the oven to 180°c (160 fan/ Gas 4/ 350F) and line a 20cm square baking tin with baking paper.
  • Place the chopped Bramley apples into a saucepan with 2 tablespoons of caster sugar and 1 teaspoon of water. Cook on a low heat for 4-5 minutes, stirring often, until the apple starts to soften. Set aside.
  • In another saucepan, melt the butter, sugars and syrup on a low heat for a few minutes.
  • Stir in the oats and cinnamon.
  • Press half the mixture into a lined baking tin and press down firmly with the back of a spoon.
  • Spread over the apples, pressing them down lightly with your hand or a spoon.
  • Top the apples with the other half of the flapjack mixture, firmly press it down with the back of spoon and bake in the oven for 25-30 minutes.
  • Score into bars lightly then allow to cool completely in the tin. I often place the tin in the fridge for an hour to help the flapjack set.

100g porridge oats
1 tsp mixed spice
50g light muscovado sugar
50g butter
7-8 Cox's or russet apples , depending on size
25g butter
25g golden caster sugar
2 tbsp blackcurrant coulis (you will find it in small bottles in the chiller cabinet alongside the creams, or by the canned fruit)
500g carton fresh custard
284ml carton double cream

Steps:

  • Mix the oats, spice and sugar. Melt the butter in a frying pan, add the oats and fry for about 5 minutes, stirring all the time, until they are lightly toasted and crisp (they become crispier still on cooling). Tip into a bowl and leave to cool.
  • Peel, core and thickly slice the apples. Melt the butter in the frying pan until it is foaming, add the apples and fry quickly over a fairly high heat, flipping them over when they start to colour. Sprinkle over the sugar and cook for a further 2-3 minutes, until the apples are slightly softened. Leave to cool.
  • Layer half the apples and almost half the oats in a glass serving dish, repeat, setting aside a few oats. Drizzle over the coulis, then spoon over the custard. Whip the cream until stiff, then spoon over the custard. Scatter over the remaining oats. Serve straight away or chill for up to 6 hours.
