SPICED APPLE CAKE

Steps:
- For the apples: Preheat the oven to 350 degrees F. Butter a 9-by-13-inch glass baking pan.
- Mix together the apples, granulated sugar and cinnamon in a medium bowl. Set aside.
- For the cake: Combine the butter and granulated sugar in a large bowl. Using a hand-held mixer, beat on medium high until light and fluffy, about 3 minutes. Beat in the eggs one at a time until fully combined, then add the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, salt and buttermilk. Beat on low speed until a few streaks remain, then fold together with a rubber spatula until fully combined. (Do not overmix.)
- Sprinkle the bottom of the pan with half of the apple mixture. Spread the batter over the top of the apples. Top the batter with the remaining apples, making decorative rows across the cake. Bake, rotating the pan halfway through, until a toothpick inserted in the middle of the cake comes out clean, about 1 hour. Allow the cake to cool slightly before dusting with powdered sugar and serving.
APPLE DAPPLE CAKE
Steps:
- Grease and flour a 9×13-inch baking pan.
- Preheat oven to 325 degrees F. Place rack in upper third of the oven.
- Sift flour, baking soda, cinnamon, nutmeg and salt in a medium bowl then sift a second time.
- In the bowl of a stand mixer with the paddle attachment, mix vegetable oil with both sugars until well mixed.
- With mixer running, add one egg at a time and once mixed, add vanilla and mix and scrape the bowl.
- Slowly add the dry ingredients with mixer running on low. Scrape the bowl again and mix.
- Peel, core and cut the apples into bite sized pieces and fold into the batter.
- Fold the walnuts into the batter then spread the batter evenly into the prepared pan.
- Bake in top third of the oven for 45-50 minutes or until a toothpick comes out clean.
- As soon as the cake comes out of the oven, put all glaze ingredients into a small sauce pan and bring to a boil. Boil and stir with a wooden spoon continuously for one minute.
- Remove from heat and pour over the top of the warm cake.
- Cool the cake or serve warm by cutting into 12 pieces (3 rows X 4 rows).

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour one 10 inch tube pan.
- Combine oil, butter or margarine, and sugar together. Beat well with a mixer. Add eggs, flour, baking soda, salt, and vanilla; mix well. Stir in apples, coconut, raisins, and walnuts. Pour batter in prepared pan.
- Bake for 90 minutes. Remove cake from oven. Let it cool in the pan for a few minutes, and then remove from pan.
- If desired, make glaze. In a small saucepan, heat brown sugar, butter or margarine, and milk. Bring mixture to boil, and stir for 1 minute. Pour over warm cake.

- Beat eggs and mix with sugar, oil and vanilla.
- Combine flour, salt and baking soda and add to egg mixture.
- Fold in apples and pecans. Pour into greased and floured tube cake pan.
- Bake at 350 degrees for 1 hour.
- For Frosting: Bring brown sugar, butter and milk to a boil. Boil only 2 1/2 minutes. Cool and spread on cake.

- Preheat oven to 325. Butter and flour a 10-inch tube pan.
- Sift flour, baking soda, salt, cinammon, and nutmeg. Set aside.
- Mix sugar, oil, sour cream, and applesauce until well blended. Add eggs and vanilla. Mix in dry ingredients. Stir in apples and nuts, if using.
- Pour into prepared pan. Bake at 325 for approximately 1 hour, 10 minutes. Let cool for 10 minutes and remove to rack.
- For icing, mix sugar, milk, and butter in saucepan. Let come to a boil and cook, stirring, for 5 minutes. Remove from heat and beat until smooth. Spoon over cake.

- Position oven rack in middle position; preheat oven to 350°; grease a 16 cup tube pan.
- Whisk the flour, cinnamon, baking powder, baking soda, and salt together in a bowl.
- In a big bowl, beat the sugar, oil, eggs, and vanilla together using an electric mixer on medium speed until thick and glossy, about 2 minutes.
- Decrease mixer speed to low and slowly beat in the flour mixture, in 3 additions, until just incorporated.
- Stir in apples and nuts.
- Scrape batter into prepared pan; smooth the top.
- Wipe any drops of batter off the sides of the pan and gently tap the pan on the counter to settle the batter.
- Bake for 50-60 minutes, until a wooden pick comes out with a few moist crumbs attached, rotating the pan halfway through baking.
- Let the cake cool in the pan for 10 minutes; run a small knife around the edge of the cake to loosen, then flip it out onto a wire rack.
- Turn the cake rightside up and let it cool completely, about 2 hours.
- The glaze: boil all of the glaze ingredients together in a small saucepan over med-high heat until thick and syrupy, about 1-2 minutes.
- Drizzle the thick glaze over the top and sides of the cake, let the glaze set, about 25 minutes before serving.

MENNONITE APPLE DAPPLE CAKE
This recipe appeared in the September 2008 issue of 'Taste of the South' magazine and it hails from the 'Mennonite Country-Style Recipes book. It is a little different than the other posted 'Zaar recipes, saving it here for later use!! **Be sure to read my note about 'Vanilla' at the bottom of this recipe!!

- Preheat the oven to 350*, Grease a 9 inch tube or Bundt pan and set aside.
- In a large mixing bowl beat eggs with an electric mixer. Add the vanilla and sugar, beating well.
- MIx 1/4 cup flour with the apples, nuts and coconut and set aside. Add remaining dry ingredients to the egg mixture and combine. Fold the fruit mixture into the batter and pour into the prepared pan. Bake for 70 minutes, remove from oven and allow to cool for 5 minutes. Remove cake from pan. Meanwhile combine topping ingredients in a saucepan and boil for 2-3 minutes, pour hot topping over warm cake.
- **This recipe can also be baked in a 13x9 inch pan plus a 9x5 loaf pan for 40-45 minutes.

- Mix oil, sugar, eggs, and vanilla together.
- Sift the plain flour, salt, soda, & cinnamon together and then add to the wet mixture.
- Fold in the pecans and apples last.
- Mix by hand as batter is very stiff.
- Bake in a greased & floured 13x9 pan at 350 for 40-45 minutes.
- To make topping: Mix the brown sugar, milk & margarine and bring to a boil on the stove. Boil for 3 minutes.
- Punch holes in the cake with a wooden spoon and then pour the topping over the cake.
- Allow the cake to sit until cool.
- Enjoy!

My college roommate's grandmother used to send us slices of this delicious cake while we roomed together. I begged my roommate to get the recipe from her grandmother. I copied this recipe down during a long distance phone call to her grandmother. Since that day, I've made this many times over. My children today love this one and call it Mom's "college cake".

Steps:
- Mix eggs, oil and sugar; blend well.
- Add flour, salt and soda.
- Mix well.
- Fold in vanilla, chopped apples and nuts.
- Place into a greased (Pam sprayed) 8-9" tube pan.
- Bake at 350* for one hour.
- Meanwhile, prepare the topping: Combine all topping ingredients in saucepan and cook for 2 1/2 minutes.
- While cake is still in the tube pan and still hot, pour warm topping over it.
- Let cake set in pan until cool, or room temperature.
- Invert cake with topping onto serving dish.
- Store covered.
