2 cups old-fashioned oats
1 cup all-purpose flour
1/2 cup packed light brown sugar
1 tablespoon ground cinnamon
1 tablespoon pure vanilla extract
Pinch of kosher salt
4 Granny Smith apples, peeled and chopped into small pieces
1/4 cup granulated sugar
1 1/2 teaspoons ground cinnamon
50 chewy caramels, unwrapped
1 cup heavy cream
1 cup all-purpose flour
3/4 cup coarsely chopped macadamia nuts
1/2 cup packed light brown sugar
1 stick unsalted butter, melted
1/2 teaspoon ground cinnamon
Pinch of kosher salt
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter a 9-by-13-inch baking dish.
  • Make the crust: Mix the melted butter, oats, flour, brown sugar, cinnamon, vanilla and salt in a large bowl until combined. Press the mixture evenly into the bottom of the prepared baking dish. Bake until the edges start browning, 18 to 20 minutes. Transfer to a rack to cool while you prepare the other layers.
  • Make the filling: Combine the apples, granulated sugar and cinnamon in a large bowl. Combine the caramels and heavy cream in a large microwave-safe bowl. Microwave in 30-second intervals until melted; stir until smooth. Add the apple mixture to the caramel mixture and gently stir to coat. Pour evenly on top of the crust.
  • Make the streusel: Combine the flour, macadamia nuts, brown sugar, melted butter, cinnamon and salt in a large bowl. Squeeze small handfuls of the mixture and scatter over the filling. Bake until the caramel is bubbling and the streusel starts browning, 30 to 35 minutes. Transfer to a rack and let cool at least 1 hour. Serve with ice cream.

5 large Granny Smith apples - peeled, cored, and thinly sliced
½ cup white sugar
1 tablespoon all-purpose flour
½ teaspoon ground cinnamon
1 tablespoon lemon juice
¼ cup water
1 ½ cups all-purpose flour
1 cup brown sugar
1 cup quick cooking oats
1 cup butter, softened
1 (14 ounce) package individually wrapped caramels, unwrapped
1 (5 ounce) can evaporated milk

Steps:

  • Preheat oven to 350 F (175 degree C).
  • In a medium size bowl, toss apples with sugar, flour, cinnamon, lemon juice, and water; spread evenly into a 8x8 inch pan. In another bowl, mix together flour, brown sugar, oats, and butter; spoon mixture evenly over apples.
  • In a heavy sauce pan over low heat, melt the caramels with the evaporated milk. Heat , stirring frequently, until mixture has a smooth consistency. Drizzle the caramel sauce over the top of the crumble.
  • Bake in preheated oven for about 45 minutes (apple mixture will bubble and topping will be golden brown).

1 (14 ounce) can sweetened condensed milk
5 Granny Smith apples - peeled, cored and sliced
1 tablespoon all-purpose flour
1 ½ teaspoons ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon vanilla extract
¼ cup water
2 cups rolled oats
1 cup all-purpose flour
½ cup brown sugar
½ teaspoon baking soda
¼ teaspoon salt
½ cup melted butter

Steps:

  • Place unopened can of sweetened condensed milk in a large pot; fill pot with water to cover. Bring water to a simmer, and simmer can for 3 hours, adding hot water as needed to keep can covered. Remove can from water with tongs; allow to cool, about 20 minutes.
  • Place apples in a large bowl. Whisk 1 tablespoon flour, cinnamon, and nutmeg together in a small bowl; stir mixture into apples. Pour apple mixture into a 9x13-inch baking pan. Stir vanilla extract into water in a bowl; sprinkle over apple mixture.
  • Open cooled condensed milk carefully. Stir caramelized milk until smooth; drizzle evenly over apple mixture.
  • Stir oats, 1 cup flour, brown sugar, baking soda, and salt together until combined; stir in butter until crumbly. Spread crumble mixture over apples and caramel.
  • Bake in the preheated oven until apples are tender and crumble is lightly browned, about 25 minutes.

1 lemon, juiced
2 tablespoons all-purpose flour

1 cup walnuts or pecans, roughly chopped

1 1/4 cups rolled oats
1/2 cup packed dark brown sugar
1 teaspoon ground cinnamon
Pinch fine salt

Steps:

  • Position an oven rack in the center of the oven and preheat to 350 degrees F.
  • Peel, core, and slice apples into 1/4-inch slices. Place apples in a large mixing bowl and toss with sugar, lemon juice, flour, and cinnamon. Pour into a lightly greased 9 by 13-inch baking dish, and spread out into an even layer. Set aside.

The caramel sauce does double duty in this warm, comforting crisp. First, it lends sweetness to the apple filling, and second, it yields a lot of leftovers to serve alongside. Use firm, tart apples like Mutsu, Jonathan or Honeycrisp, which will hold their shape during baking. Room-temperature apples work best here: If your apples are cold from the refrigerator, the caramel sauce may seize a bit. Save any extra caramel sauce in your fridge for a rainy day - that is, of course, if you haven't eaten it all.

1 tablespoon fresh lemon juice

Steps:

  • Make the caramel sauce: Add the granulated sugar and 1/4 cup water to a 3-quart saucepan and stir to combine. Add the butter and set it over medium-high heat, but do not stir. Cook, without stirring, until the butter and sugar have completely melted and started to bubble, 4 to 5 minutes.
  • After the mixture has begun to brown at the edges, use a heatproof spatula to carefully stir it occasionally until it is deep golden brown and beginning to smoke just slightly, about 4 to 5 minutes. Do not walk away from the pan during this process as the caramel will go from perfectly golden to burned in moments.
  • When the mixture is deep golden, remove the pan from the heat, and carefully whisk in the heavy cream. The mixture will expand and sputter before turning into a smooth sauce. Add the vanilla and salt. If the caramel is at all lumpy, return the pan to the stove on low heat and whisk until smooth. You should have about 2 cups. Carefully pour the caramel into a heat-safe container to cool.
  • Prepare the filling: Heat your oven to 350 degrees and set a rack in the center. Peel, core and slice the apples into 1/2-inch slices, removing any bruised bits if necessary. Combine the sliced apples, lemon juice, spices and salt in a large bowl, and stir to combine. Drizzle 1/2 cup caramel sauce over the top and stir again. Scrape the apples and all of their juices into a 9- or 10-inch oven-safe skillet.
  • Make the topping: In the same bowl, combine the flour, oats, pecans, sugar and salt. Stir until well combined, then add the butter and mash it into the dry ingredients with your fingers until crumbs form. Pour the crumb topping evenly over the apples. Bake the crisp until the topping is golden and the juices are bubbling, 40 to 50 minutes. Serve warm with more warm caramel sauce and ice cream. Store any remaining sauce in an airtight container in the refrigerator for about a week. It can be rewarmed for later use in a saucepan over low heat.

6 tbsp Carnation caramel cream (this comes in a can or a squeezy tube)
50g plain flour
50g porridge oat
50g cold butter , diced

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Put the apples into a saucepan with a splash of water, cover, then cook over a high heat for 4-5 mins, stirring now and then until just soft. Stir in 3 tbsp of the caramel, then tip into small ovenproof dishes. Dot small spoonfuls of caramel cream over the apples until only 1 tbsp is left.
  • Mix the flour and oats together, then rub in the butter with your fingers until you have a crumbly mixture. Stir in the remaining caramel, then scatter over the apples. Bake for 18-20 mins until golden and crisp on top.
