Flaky browned butter biscuits and tender spiced apples are a winner fall match in this unbelievably easy apple cobbler that's the perfect way to use up all those fall apples!

Number Of Ingredients 15

6 medium apples (peeled, cored, and thinly sliced)
2 tablespoons cornstarch
1/2 cup coconut sugar (or brown sugar)
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 cups white whole wheat flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup coconut sugar (or brown sugar)
1/2 cup butter (melted and browned on stove until a deep golden brown.)
1 cup milk
2 tablespoons half-and-half cream

Steps:

  • Preheat oven to 350F. Lightly grease a 9x13 baking pan. Set aside.
  • In a small bowl, combine all filling ingredients. Transfer to a medium skillet and cook over medium heat until apples are just slightly softened, but not entirely cooked. Transfer to prepared pan and set aside.
  • Make the filling: In a medium bowl, combine flour, baking powder, baking soda, salt, cinnamon, and sugar. Stir browned butter and milk into dry mixture until just combined.
  • Scoop biscuit dough over apples and gently spread a little bit to cover the apples. Brush biscuit topping with cream.
  • Bake cobbler at 350F 25-30 minutes or until biscuits are golden and apples are tender and bubbly. Cool cobbler 10 minutes then serve warm. Enjoy!

1 tube (7-1/2 ounces) refrigerated flaky buttermilk biscuits
Whipped topping and mint, optional

Steps:

  • Place pie filling in an ungreased 9-in. pie plate. Sprinkle with cinnamon. Separate each biscuit into three layers and arrange over apples. , Bake at 400° for 12-14 minutes or until the biscuits are browned. Top with whipped topping and mint if desired.

3 cups apples, in 1/2-inch slices (about 1 pound)
5 ounces sugar (about 3/4 cup)
1 teaspoon lemon juice
4 tablespoons unsalted butter
3 ounces flour (about 3/4 cup)
1 1/2 teaspoons baking powder
1/8 teaspoon salt
3/4 cup buttermilk
1/4 cup sliced almonds
1/4 teaspoon nutmeg, freshly grated
2 tablespoons demerara sugar

Steps:

  • Preheat oven to 350°F.
  • In a saucepan over medium heat, stir together apples, 1/4 cup sugar, and lemon juice: stir constantly until mixture comes to a simmer, then remove from heat.
  • In a small saucepan over medium heat, melt the butter and cook, swirling the pan occasionally, until it becomes golden in color and takes on a nutty aroma, about 2 to 3 minutes; pour brown butter into an 8 x 8 inch baking dish.
  • In a mixing bowl, combine flour, 1/2 cup sugar, baking powder and salt; pour in the buttermilk and mix just until dry ingredients are moistened.
  • Spoon the batter on top of the brown butter, using a spatula to smooth out the batter, but being careful to not mix it into the brown butter.
  • Scatter the apples and juice on top of the batter; sprinkle almonds over top and dust with nutmeg and demerara sugar.
  • Bake until golden, 50 to 55 minutes; transfer pan to wire rack to cool.
  • Serve warm.

7 1/2 ounces medium brown sugar (1 cup packed)

8 large apples, peeled, cored, and sliced 1/4 inch thick (3 1/2 pounds prepped)
1 lemon, juice of
1/4 cup unsalted butter
10 ounces all-purpose flour (2 cups)

2 teaspoons baking powder
1/2 teaspoon fine sea salt
1/4 lb grated extra-sharp cheddar cheese (2 cups)
1 1/3 cups cold buttermilk (or more)

Steps:

  • Preheat oven to 375°F Place a rack in the bottom third. Butter a 3-quart baking dish.
  • Rub the brown sugar, cornstarch, sea salt and cinnamon together in a large bowl, breaking up clumps. Add apples and toss well to coat. Gently stir in lemon juice. Let stand at room temperature for 15 minutes until juices begin to release. Stir again, then pour into prepared baking dish. Cut butter into small cubes and scatter over apples.
  • Cover pan with foil and bake 20 minutes.
  • Meanwhile, whisk flour, 1 tbsp sugar, baking powder and sea salt together. Add cheese and toss until coated. Form a well and add buttermilk. Stir with a fork, a rubber spatula, or your hand, until ingredients just come together; the dough will be shaggy and wet. If dough seems dry, add more buttermilk, 1 tbsp at a time, until it reaches the proper consistency.
  • Remove pan from oven and remove foil. Scoop dough into 1/4-cup portions, about 9 scoops. Distribute evenly over fruit. Return pan to oven and bake another 30-40 minutes, or until the apples are tender, the juices bubbling, and the biscuits browned.

1 tablespoon cornstarch
1/8 teaspoon salt
1/2-3/4 teaspoon cinnamon
3/4 cup water
1 1/2 teaspoons lemon juice
2 tablespoons butter
4 1/2 cups sliced peeled apples
1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 tablespoons sugar
1/4 teaspoon salt
1/4 cup butter
1/4 cup fat-free half-and-half
1 egg, slightly beaten

Steps:

  • Preheat oven to 400°F.
  • For easier cleanup, spray a 2-quart dish with non-stick cooking spray.
  • In a large saucepan combine the sugar, cornstarch, salt and cinnamon.
  • Slowly add water, stirring constantly.
  • While continuing to stir, bring to a boil.
  • Add lemon juice, butter and apples.
  • Cook 2 minutes.
  • To prepare the biscuit crust, mix the flour, baking powder, sugar and salt together in a mixing bowl.
  • Cut in butter until mixture resembles coarse crumbs.
  • Combine the milk and egg, add to dry ingredients, stirring with a fork until it forms a soft dough.
  • Turn onto floured board and knead 7 times.
  • Roll out to 1/4 inch thickness, cut out biscuits with a 2-inch cutter.
  • Pour the cooked apple mixture into prepared dish, top with biscuits and bake for 25 minutes or until golden brown.
  • Serve hot.
