APPLE CINNAMON SCONES
I landed my first job in a bakery when I was sixteen. I would come in after school and make huge batches of scone mix to help the morning baker. After I graduated from high school, I became the principal baker --and spent the summer waking up at 2 a.m. Even though I had to go to bed at 7 p.m., I felt like the coolest kid in town. The bakery offered a bunch of different flavors of scones, and I could never decide on a favorite.

- Preheat the oven to 400 degrees F (204 degrees C), with racks in the upper and lower thirds. Line two baking sheets with parchment paper.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon and salt. Add the butter and toss to coat the cubes with flour. Cut the butter into the flour by rubbing it between your forefingers and thumbs until the butter pieces are between the size of peas and walnut halves. Add the chopped apples and toss gently to combine.
- Make a well in the center of the dry ingredients and pour in the cream. Toss the mixture with your fingers to combine, then knead gently to ensure everything is evenly moistened.
- Scoop 1/4-cup mounds of the dough onto the prepared baking sheets (I do this by hand because I like them to look craggy, but you can use a No. 16 (1/4-cup scoop)), leaving at least 1 1/2 inches between them. Brush the tops of the scones with the egg wash and sprinkle generously with turbinado sugar.
- Bake the scones, switching the sheets from front to back and top to bottom at the halfway mark, for 20 to 22 minutes, until the tops and edges are golden brown. The scones can be served warm or at room temperature.
HEALTHY CINNAMON SCONES
These healthy pastries are surprisingly simple to make, and they're perfect for lazy weekend brunches or even quick weekday breakfasts! These scones are really moist with plenty of cozy spice flavor, and the sweet glaze makes them taste even more irresistible. Leftover scones will keep for at least 5 days, if not longer, if stored in an airtight container in the refrigerator, and the undrizzled scones also freeze and reheat really well!

- Preheat the oven to 425°F, and line a baking sheet with a silicone baking mat or parchment paper.
- In a medium bowl, whisk together the flour, cinnamon, baking powder, and salt. Cut in the butter with a pastry cutter (highly recommended!) or the back of a fork until the mixture resembles fine crumbs. Stir in the Greek yogurt, maple syrup, 3 tablespoons of milk, and vanilla.
- Shape the dough into a ¾" tall circle on the prepared baking sheet, and brush with the remaining milk. Slice the circle into 8 triangular segments with a sharp knife. Bake at 425°F for 23-27 minutes, or until the tops are deep golden and the center feels firm to the touch. Cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
CINNAMON-APPLE SCONES
A moist scone round made with apples. Can be served with cheese or with butter, or why not go the whole hog and serve with butter, strawberry jam, and whipped cream!

- Preheat the oven to 300 degrees F (150 degrees C). Grease a baking sheet.
- Sift flour, baking powder, baking soda, cinnamon, and salt into a mixing bowl and rub in butter. Add apples and 6 tablespoons brown sugar. Add 1/2 cup milk and work into a dough.
- Press into a 6- to 7-inch round on the prepared baking sheet. Brush with 1 tablespoon milk and sprinkle with remaining 1 tablespoon brown sugar. Score into 8 segments without cutting all the way through.
- Bake in the preheated oven until golden, about 1 hour.

- In a large bowl, combine the flours, baking powder, and salt.
- Cut in the margarine until the mixture resembles coarse crumbs.
- Stir in walnuts.
- In a separate bowl, combine the applesauce, milk, syrup, and maple flavoring.
- Add the wet ingredients to the dry and mix until you've formed a dry soft dough.
- Flour your work surface generously and scrape the dough out of the mixing bowl onto the floured surface.
- Divide the dough in half.
- Gently pat each half of dough into a 7 inch circle about 7/8 inch thick.
- Transfer dough onto a lightly greased cookie sheet (or Silipat mat).
- Brush the tops with the egg white and sprinkle with Splenda to your likeing.
- Using knife, divide each dough circle into eight wedges.
- Gently separate the wedges so that they're almost touching in the center, but are spaced about an inch apart at the edges.
- bake the scones for 15-18 minutes at 425, or until they're golden brown.

- Mix the apple sauce, lime juice and non dairy milk in a bowl and put it in the freezer for 20-25 mins. Prep the ingredients and slice the apple in the meanwhile.
- Toss the sliced apple with maple syrup in a bowl and set aside. In a large bowl, mix the dry ingredients really well.
- Take the milk apple sauce mix bowl out of the freezer. Break any frozen portions into smaller bits. Reserve 2 tbsp and add the rest to the flour bowl and mix. Press and mix. the larger frozen bits of the milk mixture will make the dough sticky later, so press to break those bits and mix. Add in the apples and vanilla extract if using and mix.

Transfer the dough to parchment lined baking sheet or stoneware/ceramic dish. Using flour, shape the dough into a somewhat circle of about 3/4 inch height.
