RAISIN-NUT MONKEY BREAD
I made this for the first time for Christmas breakfast. My husband loved it so much that he keeps asking me to make it again! It's a fun recipe to make, especially if you have little ones - they can help. Please note that the preparation time includes the time that it takes for the dough to rise.

Steps:
- In a 1-quart saucepan heat the milk until it just comes to a boil; stir in 1/4 cup butter until melted.
- Cool until just warm (105 - 115°F).
- In a large mixer bowl, dissolve the yeast in warm water.
- Add the cooled milk mixture, 2 cups flour, 1/4 cup sugar, egg and salt.
- Beat at medium speed, scraping the bowl often, until smooth (1 to 2 minutes).
- By hand, stir in enough of the remaining flour to make the dough easy to handle.
- Turn the dough onto a lightly floured surface; knead until smooth and elastic (about 10 minutes).
- Place in a greased bowl; turn the greased side up.
- Cover, let rise in a warm place until doubled in size (about 1-1/2 hours.).
- The dough is ready if an indentation remains when touched.
- Punch down the dough; divide in half.
- With floured hands, shape each half into 24 balls.
- In a small bowl stir together 1 cup sugar, pecans and cinnamon.
- Dip the balls first into the melted butter, then into the sugar mixture.
- Place 24 balls in the bottom of a greased 10-inch tube pan or Bundt pan - if using the tube pan, line the bottom with aluminum foil.
- Sprinkle with raisins.
- Top with the remaining 24 balls, after dipping them into the butter and sugar mixtures.
- Cover; let rise until doubled in size (about 45 minutes).
- Heat the oven to 375°F.
- Bake for 35 to 40 minutes or until the monkey bread sounds hollow when tapped.
- Immediately invert the pan onto a heatproof serving plate.
- Let the pan stand 1 minute to allow the sugar mixture to drizzle over the monkey bread.
- Remove the pan; serve warm (leftovers can be reheated nicely in the microwave).

- Heat oven to 350°F. Grease 12-cup fluted tube cake pan with shortening or cooking spray. Set aside icing tubs from cinnamon rolls. Separate each can of dough into 5 rolls; cut into quarters. Place apple in small bowl. In another small bowl, mix sugar and cinnamon. Add 1/4 cup sugar mixture to apple; toss to coat. Sprinkle half of apple pieces in pan. Roll half of dough pieces in sugar mixture; place on apples in pan. Sprinkle with remaining apple pieces. Roll remaining dough pieces in sugar mixture; place on apples. Pour melted butter over top. Bake 40 to 45 minutes or until golden brown across top. Cool 10 minutes; run knife around edge of pan to loosen. Place heatproof serving plate over pan and turn over; remove pan. Cool 10 minutes longer. Drizzle reserved icing over top of bread, allowing some to drizzle down sides. Pull apart to serve; serve warm.

I had a whole bunch of apples recently and needed to use them up so I took a zucchini bread recipe that I had and switched it up a but. What I got is a yummy, moist and healthy quick bread made from apples.

Steps:
- Preheat oven 350 degrees.
- Spray loaf pan with nonstick spray.
- In large bowl combine flour, sugars, baking soda, baking powder, salt, nutmeg and cinnamon.
- In small bowl combine wet ingredients, egg whites, vanilla, applesauce and apples.
- Add wet ingredients to dry ingredients and mix until just blended.
- Pour mixture into loaf pan and spread evenly-sprinkle with cinnamon and sugar or streusel topping if desired.
- Bake 35-45 minutes.

APPLE-CINNAMON RAISIN BREAD
This is a slightly sweet bread with a marvelous subtle flavor. I got the recipe from a fellow teacher years ago.

Steps:
- Combine 1 1/2 c.
- flour, yeast, sugar, salt and cinnamon; mix well.
- Heat apple juice, oil and water to 120-130 degrees F; add to flour mixture.
- Blend at low speed until moistened, then beat 3 minutes at medium speed.
- Gradually stir in remaining flour and raisins to make a firm dough.
- Knead until smooth and elastic, about 5 minutes.
- Place in a greased bowl, turning to grease top.
- Cover and let rise until light and doubled, about 1 hour; punch down dough.
- On lightly floured surface, roll or pat to a 14x7 inch rectangle.
- Starting with the shorter side, roll up tightly, pressing dough into roll with each turn.
- Pinch edges and ends to seal.
- Place in greased 9x5 inch loaf pan; cover and let rise until light and doubled, about 1 hour.
- Bake at 375 for 35-40 minutes, until golden brown and loaf sounds hollow when tapped.
- Remove from pan and cool on rack.

EASY CINNAMON APPLE RAISIN BREAD
This is an easy and delicious bread to prepare. Even better you only need one mixing bowl because you can throw all of the ingredients right in! Feel free to tweak the ingredients to your liking...add more cinnamon...add nuts, etc. I hope you enjoy it! Edited: I have also tried out the bread by using 1/2 whole wheat pastry flour and 1/2 regular flour, a tbl of wheat germ and less sugar to make it a tiny bit "healthier". It came out just as nice as the original.

- Preheat oven to 350 degrees.
- Take peeled and chopped apples and place them in a micowave safe bowl.
- Add water to the apples and microwave for 1 to 1 1/2 minutes.
- Combine apples and all remaining ingriendients and mix thoroughly.
- Pour mixture into a greased loaf pan.
- Bake for 1 hr to 1 hr 15 minutes.
- When done let sit for 15 mins before removing from pan and placing on a wire rack.
