I adapted an old oatmeal raisin cookie recipe I had to match a more autumnal feel, and it turned out really good. The apples came through nicely and the cookie itself is light, soft, and nicely crumbly.

⅔ cup white sugar
⅔ cup packed brown sugar
2 large eggs
½ cup butter, softened
½ cup shortening
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon baking powder
½ teaspoon ground nutmeg
3 ½ cups old-fashioned rolled oats
2 cups thinly sliced apples
1 cup all-purpose flour

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat white sugar, brown sugar, eggs, butter, shortening, baking soda, cinnamon, vanilla extract, salt, baking powder, and nutmeg together in a bowl with an electric mixer on medium speed until smooth; stir in oats, apples, and flour until dough is evenly combined. Drop dough by rounded tablespoons, about 2 inches apart, onto baking sheets.
  • Bake in the preheated oven until cookies are lightly browned, 9 to 11 minutes. Transfer cookies to a wire rack to cool, 3 to 5 minutes.

3/4 cup shortening
1 1/4 cups firmly packed brown sugar
1 large egg
1/4 cup milk
1 1/2 teaspoons vanilla
1 cup flour
1 1/4 teaspoons cinnamon
1/2 teaspoon salt
1/4 teaspoon baking soda
1/4 teaspoon nutmeg
3 cups quick oats (not instant or old fashioned)
1 cup peeled diced apple
3/4 cup raisins (optional)
3/4 cup coarsely chopped walnuts (optional)

Steps:

  • Preheat oven to 375° and grease cookie sheet.
  • Combine shortening, sugar, egg, milk and vanilla in large bowl.
  • Beat at medium speed until well blended.
  • Combine flour, cinnamon, salt, soda and nutmeg in a small bowl and mix into creamed mixture at low speed until just blended.
  • Stir in oats, apples, raisins and nuts.
  • Drop rounded tablespoonfuls of dough about 2-inches apart onto prepared cookie sheets.
  • Bake for 13 minutes or until just set.
  • Cool for a minute or 2 on cookie sheets and then remove to a wire rack to cool completely.

1 package yellow cake mix (regular size)
1-1/2 cups quick-cooking oats
1/2 cup packed brown sugar
2 teaspoons ground cinnamon
1 large egg
3/4 cup unsweetened applesauce
1 cup finely chopped peeled apple
1/2 cup raisins

Steps:

  • In a large bowl, combine the cake mix, oats, brown sugar and cinnamon. In a small bowl, combine the egg, applesauce, apple and raisins. Stir into oat mixture and mix well. , Drop by heaping teaspoonfuls 2 in. apart onto baking sheets coated with cooking spray. Bake at 350° for 12-14 minutes or until golden brown. Let stand for 2 minutes before removing to wire racks to cool.
