CHEDDAR AND APPLE GRILLED CHEESE

- In an 8-inch nonstick skillet over medium heat, cook the bacon until crisp, about 5 minutes. Tear in half and set aside.
- Into the same skillet, add the brown sugar, onions and 1 tablespoon of the butter. Cook, stirring as needed, until the onions are golden, about 5 minutes. Transfer to a plate and set aside.
- Build the grilled cheese by spreading one piece of bread with the mayonnaise. Sprinkle half of the grated cheese on top, followed by the onions. Place the apple slices and bacon on top of the onions, then add the rest of the cheese. Spread the other slice of bread with the mustard and put it mustard-side down on top of the cheese. Spread the outside of the top bread slice with 1 tablespoon butter.
- Transfer the sandwich to the skillet over medium-low heat, butter-side down. Spread the top of the sandwich with the remaining tablespoon butter. Toast each side of the sandwich until golden on the outside and the cheese is melted, 3 to 4 minutes per side. Cut in half and serve.
CHEDDAR APPLE CRISP
I never understood the cheese with apple pie thing until I made this recipe. The cheese in the crumble elevates a simple apple dessert to a whole new level, without losing the home/farm comfort. Then I lost my recipe for a couple of decades. Now I just found it again, and I can't wait to make it!

- 1. Slice the apples. A corer-slicer makes this job a snap.
- 2. Put the apple slices in a large mixing bowl, toss with the lemon juice and water.
- 3. Arrange the apple slice mixture in a 9x9" baking dish that has been prepared with food release spray.
- 4. Combine 1/4 cup of the sugar, cinnamon, and salt, and sprinkle over the apples.
- 5. Combine remaining sugar with the flour and salt. Work in the butter with a fork until the mixture is crumbly.
- 6. Stir in the cheese.
- 7. Sprinkle the crumb mixture over the apples.
- 8. Bake at 350* about 45 minutes, until the apples are tender and the crumble is golden brown.
- 9. NOTE: You can use whatever apple you like, but I think Granny Smith is the best, or maybe Pippin. This recipe is easy to multiply. It can easily be made gluten free by substituting gluten free flour. I like Bob's Red Mill Gluten Free All Purpose Baking Flour.
CHEDDAR CHEESE APPLE CRISP

- Spoon the apple filling into a shallow baking dish (1 qt. size works well).
- Combine the flour, sugar, baking powder, salt and cheese in a bowl.
- Add the melted butter and milk.
- Stir to blend.
- Spoon the"dough"over the filling.
- Bake at 375F for about 30 minutes or until golden brown.
- This will make 6 servings.
- But because it is so good, I usually double the recipe!
APPLE-CHEDDAR SOUP WITH BACON

- Cook the bacon in a large pot over medium heat until crisp, 4 to 5 minutes per side. Transfer to paper towels to drain; let cool slightly, then roughly chop. Pour out all but 2 tablespoons of the drippings from the pot.
- Increase the heat under the pot to medium high. Add the onion, apples and potato and cook, stirring frequently, until the apples are soft, about 8 minutes. Add the chicken broth, apple juice, 3/4 teaspoon salt, and pepper to taste. Bring to a simmer and cook until the potato is soft, 10 to 12 minutes. Stir in all but 2 tablespoons of the cheddar until melted. Working in batches, transfer the soup to a blender and puree. Return to the pot and season with salt and pepper.
- Meanwhile, preheat the broiler. Spread the bread with the mustard and sprinkle with the reserved 2 tablespoons cheese. Broil until the cheese melts, about 30 seconds, then cut into 1-inch squares. Ladle the soup into bowls and top with the bacon, chives, cheese croutons and more pepper.

- In a large bowl, combine the sugar, flour and cinnamon; add apples and toss to coat. On a lightly floured surface, roll out each pastry sheet into a 12-in. square. Cut each into four squares. , Spoon 1/2 cup apple mixture into the center of each square; fold diagonally in half and press edges to seal. Place on a parchment-lined baking sheet., In a small bowl, combine the butter, sugar and cinnamon; brush over pastry. Bake at 400° for 12-16 minutes or until golden brown. - Heat the oven to 375 degrees F.
- Combine the apples, sugar, flour and 1 cup of cheese.
- Place in a greased 8-inch square baking pan.
- Combine the flour, sugar, cinnamon, and salt.
- Cut in the butter until the mixture resembles coarse crumbs then sprinkle over the apple mixture.
- Bake in the preheated oven for 30 to 35 minutes.
- Remove from the oven and top with the remaining cheese.
- Return to the oven until the cheese melts.
- Serve warm with hard sauce or ice cream.

- In a medium bowl, combine the butter, flour, ½ cup of the brown sugar, the oats, walnuts, and salt. Using a wooden spoon (or clean hands), mix until well combined. Gently fold in the cheddar cheese, then set aside.
- Peel, core, and thinly slice all the apples and place them in a large bowl. In a small bowl, whisk together the lemon juice and the cornstarch until completely smooth. Add this mixture to the apples, along with cinnamon and the remaining ¼ cup sugar. Toss well. Transfer the apples to a 9x9-inch square baking dish and spread into an even layer. Crumble the topping mixture evenly on top, covering the entire surface of the apples.
