This Maple Cardamom Apple Crisp features a perfectly jammy apple filling that is warmly spiced with cinnamon, cardamom, and maple syrup, and then topped with a perfectly crispy, crumbly pastry topping.

1 ½ lbs Baking Apples, (such as Pink Lady (weighed before peeling), sliced into 1/2" slices)
1/2 lb McIntosh Apple, ((weighed before peeling), sliced into 1/2" slices)
Juice of ½ Lemon
1 tbsp All Purpose Flour
3/4 cup Maple Syrup
1 tsp Cinnamon
1 tsp Cardamom
1 cup Rolled Oats
1 cup All Purpose Flour
1 cup Brown Sugar
1/4 cup Sliced Almonds
1 tsp Cinnamon
1/4 tsp Cardamom
1/2 tsp Baking Powder
Pinch of Salt
1/2 cup Unsalted Butter, (melted)

Steps:

  • Preheat oven 350°F. Add all 'filling' ingredients to a large bowl, and toss to combine. Pour into a large skillet or a large baking dish, pat into an even layer.
  • Add all ingredients, except melted butter, to a large bowl. Whisk to combine, then pour melted butter over top, and mix with a fork until the mixture looks like wet sand.
  • Spread the topping evenly over the filling in the skillet, then place into the oven to bake for around 40 minutes, or until the topping is golden and the apples are tender.

4 medium tart baking apples, peeled, sliced (4 cups)
1/3 cup plus 2/3 cup packed brown sugar
1/2 cup all-purpose flour
1/2 cup quick-cooking oats
1/2 to 3/4 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1/3 cup cold butter or margarine
1/4 cup chopped pecans, if desired
1 cup heavy whipping cream
1/4 cup caramel topping

Steps:

  • Heat oven to 375°F. Grease bottom and sides of 8-inch square baking dish with shortening or cooking spray.
  • In medium bowl, toss apples with 1/3 cup of the brown sugar. Spread apples in dish. In another bowl, stir remaining 2/3 cup brown sugar, the flour, oats, cardamom and cinnamon until well mixed. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like coarse crumbs. Stir in pecans. Sprinkle over apples.
  • Bake 30 to 40 minutes or until topping is golden brown and apples are tender when pierced with fork. Cool 45 minutes before serving.
  • In chilled large deep bowl, beat whipping cream and caramel topping with electric mixer on high speed until stiff peaks form. Serve caramel cream with warm crisp. Drizzle with additional caramel topping, if desired.

3 Granny Smith apples, peeled, cored, and sliced
Zest and juice of 1 lemon
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
Pinch salt
2/3 cup all-purpose flour
2/3 cup brown sugar
2/3 cup oats
Pinch salt
1 stick (4-ounces) unsalted butter
2/3 cup sugar
1/4 cup water
1 tablespoon butter
1/2 cup heavy cream or half-and-half
1 teaspoon vanilla extract
1 teaspoon cardamom seeds, gently crushed to release oils

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the Apple Filling:
  • In a small bowl, toss the apple slices with the lemon zest, lemon juice, sugar, cinnamon, and salt, and set aside.
  • To make the Crumble Topping:
  • In another small bowl, mix the flour, brown sugar, oats, and salt with a fork until uniform. In a baking dish, melt the butter in the microwave until about half melts, 10 to 15 seconds on high. Pour the butter into the flour mixture and incorporate with a fork. Leaving the excess butter in the baking dish, arrange the apple slices in the dish. Top with the flour-oat mixture. Bake until the apples are cooked through and the topping is golden, about 45 minutes.
  • To make the Vanilla-Cardamom Caramel Sauce:
  • In a medium-heavy saucepan, mix the water and sugar and bring to a boil over medium-high heat. Allow the mixture to boil, without stirring. Cook's Note: Swirl the pan, if needed. Boil until the sugar mixture is pale golden brown, approximately 7 minutes.
  • Remove the pan from the heat, and stirring vigorously add the butter and cream. The mixture will bubble. Add the cardamom seeds and stir to incorporate. Return the pan to the heat and bring the mixture to a boil and then remove from the heat and allow to cool a few minutes. Stir in the vanilla extract and strain the sauce before drizzling over the cobbler.

2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 1/2 cups flour
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
1/2 teaspoon kosher salt
1 cup oatmeal
1/2 pound cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9 by 14 by 2-inch oval baking dish.
  • Peel, core, and cut the apples into large wedges. Combine the apples with the zests, juices, sugar, and spices. Pour into the dish.
  • To make the topping, combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until the mixture is crumbly and the butter is the size of peas. Scatter evenly over the apples.
  • Place the crisp on a sheet pan and bake for 1 hour until the top is brown and the apples are bubbly. Serve warm.

5-6 medium-sized apples, you can use a mix of apples
3 tablespoons brown sugar
1 teaspoon cardamom
½ teaspoon freshly grated ginger
zest and juice of one lemon
1 tablespoon cornstarch (optional)
1⅓ cups all-purpose flour (or gluten-free flour mix)
1/2 cup brown sugar
½ teaspoon cinnamon
½ cup pecans, chopped ⅓ cup oats
½ cup (1 stick) unsalted butter, softened

Steps:

  • Preheat oven to 350 degrees. Position oven rack in the center. Grease a 9 x 13-inch pan or large round ramekin.
  • Peel and core apples. Slice into think ¼-inch slices and place in a medium bowl. Toss apples with brown sugar, cardamom, ginger, lemon zest, and juice and cornstarch. Set aside.
  • In a medium bowl, whisk together all the topping ingredients except the butter. Using your fingertips, work the butter into the topping and break until the mixture resembles wet sand.
  • Toss the apples with a cup of the topping and place in a prepared pan. Scatter the rest of the topping on top of the apples evenly.
  • Bake until topping is toasted and filling is bubbling, 50-55 minutes. Let cool before serving with a scoop of vanilla ice cream.

4 apples (peeled and cored)
2 tbsp honey (or maple syrup)
1/2 tsp cardamom
2 tbsp apple juice
1/5 cups oats
2 tbsp pumpkin seeds
1/2 tsp cardamom
1 tbsp honey (or maple syrup)
3 tbsp coconut oil (melted)
small pinch salt

Steps:

  • Preheat the oven to 180C
  • Scatter the apple slices into your ovenproof dish, drizzle with honey, pour over the apple juice and sprinkle over the cardamom.
  • Add all the ingredients for the oat topping to a bowl and stir well to combine. Spoon onto the fruit filling.
  • Bake for 25-30 minutes. Keep a watch after 20 minutes for any signs of burning. If the top is looking as though it could burn but the apples aren't softened, loosely place a piece of aluminium foil over the dish and bake until done.
