1 cup sifted all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
¼ teaspoon ground cinnamon
¼ cup butter or margarine, melted
½ cup packed brown sugar
½ cup white sugar
1 egg
1 teaspoon vanilla extract
½ cup chopped apple
½ cup finely chopped walnuts
2 tablespoons white sugar
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch pan. Sift together flour, baking powder, salt, and 1/4 teaspoon of cinnamon; set aside.
  • In a large bowl, mix together melted butter, brown sugar, and 1/2 cup of white sugar with a wooden spoon until smooth. Stir in the egg and vanilla. Blend in the flour mixture until just combined, then stir in the apples and walnuts. Spread the mixture evenly into the prepared pan. In a cup or small bowl, stir together the remaining cinnamon and sugar; sprinkle over the top of the bars.
  • Bake for 25 to 30 minutes in preheated oven; finished bars should spring back when lightly touched. Cool in the pan, and cut into squares.

2 cups peeled cored and finely shredded apples
1/4 cup finely chopped dates
1/4 cup confectioners' sugar

Steps:

  • Preheat oven to 350f degrees.
  • Mix the flour, salt, nutmeg, baking soda and cinnamon together in a medium bowl and stir thoroughly.
  • Cream the sugar and butter together in a large bowl.
  • Beat in the eggs and whisk until smooth.
  • Stir in the shredded apples and dates until they are completely distributed throughout.
  • Slowly stir in the dry ingredients and mix thoroughly into the batter.
  • Spray the bottom and sides of a 9 inch square baking pan with nonstick cooking spray or grease it with butter and pour in the batter.
  • Bake in the preheated oven for about 45 minutes.
  • Put the confectioners' sugar in a sifter and dust it over the cake a few times until all the sugar is gone.

2 cups flour
1 cup sugar, plus 1/4 cup sugar (separate)
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk (non fat is OK)
3/4 cup butter, plus 2 tbsp butter (separate)
1 large egg
1 teaspoon cinnamon
5 -6 cups cored peeled and thinly sliced apples

Steps:

  • Preheat oven to 350*F.
  • In a food processor or bowl, mix flour, 1/4 cup sugar, baking powder and salt.
  • Cut 3/4 cup butter into small pieces and add to flour mixture (whirl in food processor or cut in with a pasty cutter) until textured as fine crumbs.
  • Beat milk and eggs to blend and pour into flour mixture. Whirl or stir until moistened. Knead on floured surface until dough holds together.
  • With floured hands, press dough into bottom of 9"X13" baking dish. Press edges up sides to form a slight ridge.
  • Arrange apple slices, slightly overlapped, in 3 rows down the length of the pan.
  • In processor or bowl, whirl or cut together 1 cup sugar, 2 Tbsp butter, and cinnamon until it has the texture of fine crumbs. Sprinkle over apples.
  • Bake in the middle of the oven for 40 minutes or until the cake is browned. Cut into squares. Serve warm or cool.

3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
4 cups all-purpose flour
1 1/2 teaspoons kosher salt
1/2 cup chopped walnuts
1 teaspoon ground cinnamon
1 1/2 pounds Granny Smith apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
1 1/2 pounds Golden Delicious apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
2 tablespoons freshly squeezed lemon juice
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
4 tablespoons (1/2 stick) unsalted butter

Steps:

  • Preheat the oven to 375 degrees.
  • For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
  • Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.

Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
  • Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.

3 medium juicy, sweet apples, such as Gala orFuji, peeled
1/2 cup (68 grams) all-purpose flour
1 teaspoon baking powder
2 large eggs, at room temperature
1/3 cup (67 grams) sugar
Pinch of fine sea salt
2 teaspoons pure vanilla extract
6 tablespoons whole milk at room temperature
2 tablespoons (1 ounce; 28 grams) unsalted butter, melted and cooled
Confectioners' sugar, for dusting (optional)

Steps:

  • Center a rack in the oven and preheat the oven to 400 degrees F. Butter an 8-inch square baking pan.
  • Slice the apples from top to bottom using a mandoline, Benriner or a sharp knife, turning the fruit as you reach the core. The slices should be about 1/16 inch thick-elegantly thin, but not so thin that they're transparent and fragile. Discard the cores.
  • Whisk the flour and baking powder together in a small bowl.
  • Working in a large bowl with a whisk, beat the eggs, sugar and salt together for about 2 minutes, until the sugar just about dissolves and, more important, the eggs are pale. Whisk in the vanilla, followed by the milk and melted butter. Turn the flour into the bowl and stir with the whisk until the batter is smooth. Add the apples to the bowl, switch to a flexible spatula and gently fold the apples into the batter, turning everything around until each thin slice is coated in batter. Scrape the batter into the pan and smooth the top as evenly as you can-it will be bumpy; that's its nature.
  • Bake for 40 to 50 minutes, or until golden brown, uniformly puffed- make sure the middle of the cake has risen-and a knife inserted into the center comes out clean. Transfer the cake to a rack and allow to cool for at least 15 minutes.
  • Using a long chefs knife, cut the cake into 8 squares in the pan (being careful not to damage the pan), or unmold the cake onto a rack, flip it onto a plate and cut into squares. Either way, give the squares a dusting of confectioners' sugar before serving, if you'd like.

225g butter , plus a little extra for greasing
140g cooking apple , peeled, cored and chopped
140g stoned date , chopped
280g light soft brown sugar
175g plain flour
1 tsp bicarbonate of soda
100g porridge oat

Steps:

  • Heat oven to 190C/170C fan/gas 5. Grease an 18cm square tin and line with baking parchment.
  • Tip the apples into a pan with 2 tbsp water. Bring to the boil and simmer on a low heat for 5 mins until tender and slightly pulpy. Add the dates and 50g of the sugar, and cook for a further 5 mins. Take off the heat and break the apples down with the back of a spoon until smooth and well mixed with the dates. Set aside.
  • Gently melt the butter in a saucepan. Mix the flour, bicarb, oats and remaining sugar in a bowl. Pour in the melted butter and stir well until oats are coated.
  • Press half the mixture firmly into the tin, spread the apple mix on top and smooth over. Cover with the remaining oat mixture and press down. Bake for 30-35 mins until golden and firm. Cool in the tin before cutting into squares.

1 cup cold water

Steps:

  • In a large bowl, combine the flour, oats, brown sugar and baking soda; cut in 1 cup plus 2 tablespoons butter until mixture resembles coarse crumbs. Set aside 2 cups for topping. Press remaining crumbs into a greased 13x9-in. baking dish. Arrange apples over top; set aside. , In a saucepan, combine the sugar, cornstarch, water, vanilla and remaining butter. Bring to a boil.   • Heat oven to 180C/160C fan/gas 4 and line a 20 x 30cm cake tin with baking parchment. Put the apple in a small pan with 2 tbsp water. Cook for a few mins or until the apple starts to soften.
  • Meanwhile, make the crumble topping. Rub the butter into the flour, sugar and lemon zest until it resembles big breadcrumbs, then set aside.
  • Beat the butter and sugar in a large bowl until fluffy, then gradually add the egg. Tip in the flour and milk, and continue to beat until everything is combined. Incorporate the apples then spoon the mixture into the tin, smooth the surface, then dot with the raspberries. Sprinkle over the crumble topping and bake for 45 mins or until a skewer inserted comes out clean, and the topping is golden.

  • For frosting: Bring brown sugar, butter and milk to a boil. Boil only 2 1/2 minutes. Remove from heat and add sifted powdered sugar while stirring. Cool slightly and spread on bars. Sprinkle chopped pecans on top.
  • Cool completely and cut into bars. Store in air-tight container to retain moisture.
  • Note: If you prefer sweeter, add 1/4 cup sugar to batter of bars, but remember the apple juice from the grated apples will provide some sweetness. We enjoy it as is because the carmel frosting is sweet. Also, we have had them with no frosting and just a sprinkling of powdered sugar on top. Enjoy!
