3/4 cup sugar
4 ounces (1 stick) unsalted butter
1/2 teaspoon vanilla extract
4 Honeycrisp apples, cored and quartered
4 Bartlett pears, cored and halved
3/4 cup raw macadamia nuts, toasted and crushed
12 ounces puff pastry
All-purpose flour, for dusting
Sweetened whipped cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat the sugar and 1/2 cup water in a 10-inch cast-iron skillet with a handle over medium heat. Cook, swirling the skillet as needed to even out the color, until it is evenly very light amber, about 10 minutes. Add the butter and 1/4 teaspoon vanilla and stir to combine, allowing the butter to melt. Carefully add the apples and pears, cut-side down. Finish with the remaining 1/4 teaspoon vanilla extract. Cook the apples and pears for 12 minutes, then add the nuts, gently nestling the nuts with the fruit.
  • Roll out the puff pastry on a lightly floured surface into a 10-inch round, then prick with a fork and lay on top of fruit. Transfer the skillet to the oven and bake until the puff pastry is golden, 45 to 50 minutes.
  • Remove and let cool for 15 minutes, then place a plate over the puff pastry and carefully flip the skillet over (use heatproof gloves). Let rest for 5 minutes, then lift the skillet off.
  • Spoon into shallow dishes and garnish with whipped cream.

This is a special apple pie that Grandma liked very much. Her recipe is an old one used by many family members. She always made her crust from scratch but I often take the shortcut of using refrigerated pie pastry. This pie is especially delicious served warm with ice cream. Be sure to use a deep dish pie plate.

6 c thinly sliced peeled baking apples
1 c brown sugar, firmly packed
1/4 c water
1 Tbsp lemon juice
1/4 c all purpose flour
2 Tbsp sugar
1/2 tsp salt
1 tsp vanilla extract
3 Tbsp butter
unbaked pastry for 2 crust deep dish pie
1 Tbsp each brown sugar and white sugar

Steps:

  • 1. Preheat oven to 425 degrees. Combine apples, 1 cup brown sugar, water, and lemon juice in a saucepan. Cover and cook about 5 minutes or until apples are beginning to become tender. Mix flour, 1 cup white sugar, and salt. Stir into apples. Cook for about 2 more minutes until sauce thickens. Remove from heat and stir in vanilla and butter. Pour filling into pastry lined deep dish pie plate and cover with top crust. Cut 2 or 3 slits in pastry. Mix 1 tablespoon each brown sugar and white sugar. Sprinkle over pie crust. Bake 40-45 minutes. Cover with aluminum foil if crust starts to brown too much during last 15 minutes of baking.
  • 2. Note: I often turn the temperature down to 375 degrees after about 15 minutes so the pie does not get too brown. With the deep dish filling the pie takes longer to bake than you might expect.

1/3-1/2 c light corn syrup
2 c apples, coarsely shredded
1/4 c butter, melted
1 tsp vanilla
1/4 tsp salt
1/4 tsp cinnamon
1 pkg butterscotch chips (11 oz.)
1 c macadamia nuts, coarsely chopped
1 pie shell, 9 inch, unbaked

Steps:

  • 1. Combine eggs, corn syrup, apples, butter, vanilla, salt and cinnamon in large bowl: mix well.
  • 2. Stir in nuts and chips.
  • 3. Pour into pie shell. Put pie on cookie sheet.
  • 4. Bake at 375 degrees for 45-50 minutes.
  • 5. Cool on wire rack for 2 hours.
  • 6. Serve immediately or cover and refrigerate.

1/3 cup packed brown sugar
1/4 cup all-purpose flour
1/4 cup quick-cooking oats
1/3 cup cook-and-serve butterscotch pudding mix
1/2 teaspoon ground cinnamon
1/4 cup cold butter, cubed
Vanilla ice cream, optional

Steps:

  • Place apples in a 1-1/2-qt. slow cooker. In a small bowl, combine the brown sugar, flour, oats, pudding mix and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle over apples. , Cover and cook on low for 2-1/2 to 3-1/2 hours or until apples are tender. Serve with ice cream if desired.

1 cup light corn syrup
3 tablespoons butter
1/2 cup brown sugar
3 tablespoons all-purpose flour
1/4 teaspoon salt
3 eggs

1 (6 1/2 ounce) jar macadamia nuts, coarsely chopped

Steps:

  • Preheat the oven to 350°F.
  • Unfold the pie crust and place in a 9-inch pie plate or tart pan, pressing the crust firmly into the pan.
  • Trim the edges and flute, if desired.
  • In a large saucepan, combine the corn syrup, butter, brown sugar, flour, and salt over medium heat, stirring until the mixture comes to a rolling boil.
  • Remove from the heat and let cool slightly.

5 cups thinly sliced peeled tart apples (about 5 medium)
1 cup packed brown sugar
1/4 cup water
1 tablespoon lemon juice
1/4 cup Gold Medal™ all-purpose flour
2 tablespoons granulated sugar
3/4 teaspoon salt
1 teaspoon vanilla
3 tablespoons butter
2 cups Gold Medal™ all-purpose flour
1 teaspoon salt
2/3 cup plus 2 tablespoons shortening
4 to 6 tablespoons cold water

Steps:

  • In 2-quart saucepan, mix apples, brown sugar, water and lemon juice. Heat to boiling; reduce heat. Cover and simmer 7 to 8 minutes or just until apples are tender. In small bowl, mix 1/4 cup flour, the granulated sugar and 3/4 teaspoon salt; stir into apple mixture. Cook, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute; remove from heat. Stir in vanilla and butter; cool.
  • Heat oven to 425°F.
  • In medium bowl, mix 2 cups flour and 1 teaspoon salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
  • Gather pastry into a ball. Divide pastry in half; shape each half into flattened round surface. Wrap flattened rounds of pastry in plastic wrap and refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Roll one round of pastry on lightly floured surface, using floured rolling pin, into circle 2 inches larger than upside-down 9-inch glass pie plate. Fold one pastry circle into fourths and place in pie plate. Unfold pastry and ease into plate, pressing firmly against bottom and side and being careful not to stretch pastry, which will cause it to shrink when baked.
  • Spoon apple mixture into pastry-lined pie plate. Trim overhanging edge of bottom pastry 1/2 inch from rim pf pan. Roll other round of pastry. Fold top pastry into fourths and cut slits so steam can escape. Place pastry over filling and unfold. Trim overhanging edge of top pastry 1 inch from rim of pan. Fold and roll top edge under lower edge, pressing on rim to seal; flute. Cover edge with 2- to 3-inch strip of foil to prevent excessive browning; remove foil during last 15 minutes of baking.
  • Bake 40 to 45 minutes or until crust is golden brown. Cool on wire rack at least 2 hours.

I found this on rampantscotland.com an interesting and informative web site, and tried this on my family last night. Very good and easy. Especially when using ready prepared pie crust and sliced, tinned or frozen apples. A thin layer of plum jam and a meringue topping make this pie different, and extra good. Prep time is determined by whether or not you use fresh or tinned/frozen apples.

9 inches flan pastry dough
4 -6 cups apples, to fill the flan case completely
100 g demerara sugar (light brown)
125 g granulated sugar
2 tablespoons plum jam
2 tablespoons flour
2 tablespoons cream
1 egg
2 egg whites
1 pinch salt

Steps:

  • You can use a ready-prepared pastry flan case or make your own. I recommend Recipe #148258.(I would like to mention that on rampantscotland.com, most pie crust recipes are made with half lard, half butter. Seems to be another scottish touch, which I like).
  • Peel and thinly slice the apples to fill the case completely.
  • Beat together one egg and two tablespoon of cream. Mix this with the brown sugar, flour and pinch of salt.
  • Spread this mixture over the apples and bake in a preheated oven at 220C/425F/Gas mark 7 for ten minutes. Then reduce the heat to 180C/350F/Gas mark 4 for a further 20 minutes or so, until the apples are soft.
  • Make a meringue topping by placing two egg whites in a dry bowl and beat with an electric whisk/mixer until firm peaks form. Add the white sugar gradually, beating constantly until the mixture is thick and glossy and all the sugar has dissolved.
  • Spread the plum jam over the apples and then spoon the meringue over the filling. Swirl into peaks with a fork or flat-bladed knife.
  • Bake for a further 20 minutes or so until the meringue is lightly golden.(watch kind of closely, I've burned meringues by following these directions excactly because ovens vary) Serve cold.
