BUTTERMILK PANCAKES WITH APPLE CRANBERRY COMPOTE

Buttermilk Pancakes with Apple Cranberry Compote image

Provided by Amanda Freitag

Categories     main-dish

Time 1h10m

Yield 2 servings

Number Of Ingredients 17

2 eggs
3 tablespoons granulated sugar
11 tablespoons cold butter
1 1/2 cups all-purpose flour
1 1/2 tablespoons baking powder
1/2 teaspoon salt
1 1/2 cups buttermilk
1/4 cup confectioners' sugar
Maple syrup, for serving
Apple Cranberry Compote, recipe follows, for serving
1 cup fresh cranberries
1 cup granulated sugar
1 tablespoon honey
1/2 teaspoon kosher salt
6 Gala apples, skin on, cored and diced
1 stick cinnamon
1 lemon, juiced and zested

Steps:

  • Using a stand mixer fitted with the whisk attachment or a hand mixer, beat the eggs and granulated sugar until pale yellow, frothy and doubled in volume, about 10 minutes. Meanwhile, melt 3 tablespoons of the butter and cool to room temperature. In a separate bowl, mix the flour, baking powder and salt. Whisk the buttermilk into the dry ingredients and blend until it becomes a smooth paste. Add in the melted butter. Use a rubber spatula to fold the beaten eggs into the batter. Hold the batter at room temperature until ready to cook.
  • Heat a 14-inch skillet or griddle pan to medium-high heat. Place 1 tablespoon of the butter on the skillet and ladle out 2 ounces of the batter. When the top of the pancake starts to bubble, use a large metal spatula to flip, and then cook on the other side until brown, 3 to 5 minutes. Repeat for the remaining batter, about 6 pancakes total, adding butter to the griddle before each pancake. Stack three pancakes on each plate and serve with the remaining 2 tablespoons butter, confectioners' sugar, some maple syrup and the Apple Cranberry Compote.
  • In a medium saucepot set over medium heat, add the cranberries, granulated sugar, honey, salt, apples, cinnamon, lemon juice and zest, and bring to a simmer. Reduce the heat to low, stir and continue cooking until the apples start to break down and the cranberries begin to pop, about 15 minutes. Remove from the heat and serve warm.

BUTTERMILK PANCAKES

Buttermilk pancakes image

These fluffy American-style buttermilk pancakes are best made fresh and served up for brunch with our decadent apple and pecan topping

Provided by Good Food team

Categories     Breakfast, Brunch, Treat

Time 50m

Number Of Ingredients 11

3 eating apples , such as Golden Delicious or Pink Lady
25g butter
85g/3oz pecan halves, halved lengthways
175ml maple syrup
100g plain flour
2 tsp baking powder
½ tsp bicarbonate of soda
1 tbsp golden caster sugar
2 large eggs , separated
284ml tub buttermilk
25g butter , melted, plus extra

Steps:

  • Make the topping. Peel, core and quarter the apples, then slice each quarter into four. Heat the butter in a large frying pan. Cook the apples until golden, but still firm. Stir in the pecans and maple syrup. Heat gently for 2-3 minutes. Remove from the heat and keep warm.
  • For the pancakes, sift the flour, baking powder, bicarbonate of soda, sugar and a pinch of salt into a bowl. Whisk the egg whites until stiff. Mix together the egg yolks, buttermilk and melted butter and whisk into the flour mixture until the batter is thick and smooth. Carefully fold the egg whites into the batter until evenly mixed.
  • Heat a large frying pan, preferably non-stick, and brush lightly with melted butter. Drop 2 or 3 large spoonfuls of batter into the pan to make pancakes about 10cm in diameter. When the surface has dulled slightly and bubbles appear, after about 3-4 minutes, carefully flip the pancakes over and cook on the other side until browned.
  • To serve, place a spoonful of the apple mixture on a pancake, top with a second pancake and spoon over more of the topping. Repeat to make three more pancake stacks.

¼ teaspoon apple pie spice blend
1 cup sifted flour
2 tablespoons white sugar
½ teaspoon salt
½ teaspoon baking soda
1 cup buttermilk
1 large egg, lightly beaten
2 tablespoons unsalted butter, melted

  • Heat your oven to 200 degrees. In a medium-sized bowl, mix all of the dry ingredients together with a whisk or fork until combined. In a separate small bowl, mix the buttermilk, egg, and vanilla together until combined. Pour the buttermilk mixture into the dry mixture, and GENTLY fold or mix together until almost combined. Pour in the melted butter and continue to fold/mix until combined. Lumps should remain, and small pockets of flour are ok. Be careful not to overmix or you will toughen the pancakes by creating too much gluten. Please be gentle. Set the batter aside.
  • Peel and core your apples and cut into even-sized chunks. In a 10-inch skillet, melt the butter over medium heat. Add the apples, brown sugar, cinnamon, maple syrup, nutmeg if using, and salt. Gently fold and mix the mixture until every apple is evenly coated. Allow to cook for about 6 to 8 minutes or until apples are softened and fork tender.

  • Whisk flour, baking powder, cinnamon, baking soda and salt in a large bowl. Whisk egg, buttermilk, apple, oil, sugar and vanilla in a medium bowl. Make a well in the center of the dry ingredients, add the wet ingredients and whisk just until combined. Resist overmixing--it will make the pancakes tough.
  • Let the batter sit, without stirring, for 10 to 15 minutes. As the batter rests, the baking powder forms bubbles that create fluffy pancakes and the gluten in the flour relaxes to make them more tender.
  • Coat a large nonstick skillet or griddle with cooking spray; heat over medium heat. Without stirring the batter, measure out pancakes using about 1/4 cup batter per pancake and pour into the pan (or onto the griddle). Cook until the edges are dry and you see bubbles on the surface, 2 to 4 minutes. Flip and cook until golden brown on the other side, 2 to 4 minutes more. Repeat with the remaining batter, coating the pan with cooking spray and reducing the heat as needed.
