APPLE PIE TURNOVER
Homemade apple turnovers with an apple pie filling in flaky, buttery puff pastry dough.

Steps:
- Preheat oven to 400 degrees, lightly spray a baking sheet with cooking spray.
- Melt butter in a skillet, add apples and cook for about 3 minutes. Add sugar, cinnamon, nutmeg, cornstarch, lemon juice stir. Bring to a simmer and cook until sauce is thickened about 5 minutes.
- Unfold the thawed puff pastry sheet. Use a rolling pin to gently roll over the seams. Cut the sheet into four squares. Divide the mixture up evenly and spoon it into the center of the pastry square. Fold the pastry in half and pinch the edges together using a fork. Repeat with the remaining squares. Brush some egg wash on top of the pastries to help them become nicely browned. Place on baking sheet. Bake 12-15 minutes. Let cool 10 minutes on cooling rack
- In a small bowl whisk the powdered and milk together until combined. If you want it thicker just add a little more sugar. Drizzle glaze over turnovers.
- **If you want to freeze some of the turnovers. Place them on a baking sheet lined with parchment paper and place in freezer. Once they are frozen you can put them in a ziplock freezer bag and they wont stick together. Bake 15-20 minutes

You can never go wrong with Chuck Hughes ' tender apple turnover topped with delectable sheep's cheese.

- For the apple filling: Melt the butter in a saucepan over medium heat. Add the brown sugar, cinnamon and apples and cook until the apples are caramelized and have started to soften, 10 to 15 minutes. Transfer to a bowl and let cool, then keep in the refrigerator.
- Preheat the oven to 400 degrees F (200 degrees C).
- For the turnover: Roll out the puff pastry to 10 by 10-inch square with a 1/8-inch (3mm) thickness on a lightly floured surface. Transfer to a large baking sheet lined with parchment paper. Spoon the apple filling over half the pastry, leaving a border around the edge. Beat the eggs with 1 teaspoon water for the egg wash. Brush the edges of the pastry lightly with some of the egg wash. Fold the pastry over the filling to form a triangle. Press the edges to seal and enclose the filling completely, then press with the back of a fork to make a tight seal. Using a small knife, cut two 1/2-inch-long slits in the top of the crust. Brush the top with the egg wash.
- Bake the turnover until the crust is puffed and golden and the juices are bubbling through the slits in the crust, about 25 minutes.
- Sprinkle the turnover with the confectioners' sugar. Turn the oven to broil, and cook until the sugar is caramelized, watching it closely so it doesn't burn. This will give the turnover a browned crust. Carefully run a metal spatula under the turnover to loosen and transfer to a wire rack to cool slightly.
- To serve, cut the turnover into wedges and serve warm with a dollop of cheese, yogurt or ice cream.
APPLE BUTTER TURNOVERS

Steps:
- Place the first 4 ingredients in a food processor and pulse until it resembles coarse cornmeal.
- Sprinkle the ice water, 1 tablespoon at a time, in the food processor and pulse until the dough starts to come together.
- Form the dough into a disk, wrap in parchment paper or plastic wrap, refrigerate for 30 minutes.
- Roll out the dough 1/4 inch thick.
- Using cookie cutters, cut out turnovers into desired shapes (If you are making 8 turnovers, you need 16 cut-outs, one for the top and one for the bottom).
- Place one cut-out on a parchment or silpat lined baking sheet, top with 2 tsp of apple butter (depending on the size of your shape) leaving a 1/4 inch border around the cut-out.
- Combine the honey and water together in a separate bowl.
- Brush the 1/4 inch border with the honey water, place matching pastry shape on top of the apple butter and using the tines of a fork, gently press down to seal the dough.
- Brush the remaining honey water on top of each turnover.
- Using the tip of a knife, cut several slits through the dough (to allow ventilation).
- Bake at 400 degrees for 20 minutes.

- Heat oven to 400°F. Line cookie sheet with cooking parchment paper.
- In 2-quart saucepan, heat apples, butter, brown sugar, cinnamon and cornstarch to boiling over medium-high heat. Reduce heat; simmer about 5 minutes or until thickened and apples are tender. Set aside to cool slightly.
- Sprinkle work surface lightly with flour. Roll out thawed puff pastry into 15-inch square. Cut into 4 smaller squares.
- Brush each square with egg wash; spoon apple mixture onto center of each. Fold each in half diagonally to form a triangle; press edges together to seal. Use back of fork to crimp edges. Transfer to cookie sheet; brush with egg wash. Use sharp knife to cut a few vents into each turnover.
- Bake 25 to 30 minutes or until golden.
