Number Of Ingredients 15

1-3/4 cups all-purpose flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/8 teaspoon ground ginger
1 egg, lightly beaten
3/4 cup milk
1/4 cup canola oil
1/2 cup thick apple butter
TOPPING:
1/2 cup chopped pecans
3 tablespoons sugar

Steps:

  • In a small bowl, combine the first eight ingredients. Combine egg, milk and oil; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups with a rounded tablespoon of batter. Top each with a rounded teaspoon of apple butter and remaining batter. Combine topping ingredients; sprinkle over muffins. , Bake at 400° for 15-18 minutes. Cool for 10 minutes before removing from pan to a wire rack.

1 medium apple, peeled and cut into 24 slices

Steps:

  • In a large bowl, beat butter and brown sugar until crumbly, about 2 minutes. Add eggs, one at a time, beating well after each addition. Stir in the buttermilk. Combine the flour, cinnamon, baking soda and salt; add to butter mixture just until moistened. Fold in chopped apples. , Fill paper-lined muffin cups three-fourths full. Place sliced apples over batter. For topping, combine the flour, brown sugar and cinnamon; cut in butter until crumbly. 1 3/4 cups unbleached flour or 1 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder (aluminum-free if available)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter, softened
1 cup sugar
1 egg
1 cup apple butter (homemade if available)
1 teaspoon vanilla
2 tablespoons lemon juice
1 (5 ounce) can evaporated milk
sugar, to sprinkle

Steps:

  • In a small mixing bowl stir together the flour, baking powder, baking soda and salt; set aside.
  • In a large mixing bowl cream the butter and sugar until fluffy.
  • Add the egg to the sugar mixture; beat well.
  • Beat in the apple butter and vanilla.
  • Stir lemon juice into the evaporated milk.
  • Beating at low speed, alternately add the flour and the milk mixtures to the apple butter mixture until just combined.
  • The less you mix the more tender the crumb.
  • Grease or line with baking papers, 24 muffin cups.
  • Fill each cup 2/3 full.
  • Sprinkle lightly with sugar.
  • Bake at 350F for 20-25 minutes.
  • Cool on wire racks.

I love apples and I love baking with apple butter. I searched zaar looking for a muffin recipe that used both as ingredients but found nothing so I decided to experiment and create my own recipe using the ingredients that I like. This was the end result and I was so pleased with how they turned out that I had to share! You could add 1/4-1/2 cup of nuts or raisins if you'd like but I like them just the way they are. Enjoy!

1 1/4 cups unbleached all-purpose flour
1/4 teaspoon baking soda
1 1/2 teaspoons baking powder

1/2 cup wheat bran (or oat bran)
3/4 cup milk
2 eggs, slightly beaten
1/3 cup apple butter
2 tablespoons oil
1 cup shredded granny smith apple (about 2 small)

Steps:

  • Preheat oven to 375°.
  • Grease a large muffin tin (I use my "Texas" sized muffin pan).
  • In a medium bowl combine flour, baking soda, baking powder, salt, sugar, and cinnamon and mix to blend.
  • In another bowl add wheat bran and milk and blend well.
  • Then to the bran mixture add eggs, apple butter and 2 tbsp oil and mix to blend.
  • Let bran mixture sit 5-10 minutes.
  • Meanwhile, peel, core and shred the apples.
  • Squeeze out any excess moisture from apples with your hands.
  • Add shredded apples to the bran mixture and mix well to blend.
  • Add wheat bran mixture to flour mixture and stir to blend (batter will be thick).
  • Spoon batter into muffin cups evenly.
  • Bake at 375° for 25-30 minutes or until they just begin to brown and test done with a toothpick.
  • Cool muffins in pan on a wire rack 5-10 minutes.
  • Remove muffins from muffin pan and cool completely.
  • *** Preparation time includes preparing the apples. You can make 12 standard size muffins instead of six large but you'll need to reduce baking time to approximately 15-20 minutes or until they test done.

2 large golden Delicious apples, peeled and chopped
1/2 cup butter, cubed
3 cups All-Bran
1 cup boiling water
2 cups buttermilk
2 eggs, lightly beaten
2/3 cup sugar
1 cup raisins
2-1/2 cups all-purpose flour
2-1/2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon salt

Steps:

  • In a skillet, saute apples in butter until tender, about 10 minutes. Combine cereal and water in a large bowl; stir in buttermilk, eggs, sugar, raisins and apples with butter. Low Fat (But Tasty!) Buttermilk Apple Bran Muffins Ww Friendly image

A healthier variation of my Recipe #101530. I have found they are a perfect WW 2 Points Plus snack after a workout. (They are 3 points plus with the oats added.) They also are very good for keeping your system regular when you are limiting your fat intake. ;) You can keep the batter in the refrigerator for several days and bake them as you need them, but they also freeze really well. (If you don't have fat free buttermilk, place 2 Tbls. of vinegar or lemon juice in a measuring cup then add low fat milk until it totals 2 cups altogether.) Sometimes I get bored with the original plain muffins and add some or all of the optional ingredients. I've also started adding 1 cup of old fashioned oats to mimic nuts in the muffins. They are delicious with WW's cream cheese on them too. PLEASE NOTE: wheat bran is NOT cereal. I buy mine at the bulk food store, and it looks like sawdust. Oat bran can be used in its place but the muffins aren't as tasty IMHO.
