A simple recipe for Pannekoeken, a baked apple pancake hailing from the Netherlands, this "casserole" version is infused with cardamom and nutmeg and puffs up dramatically in the oven. A delicious weekend breakfast or brunch. Adapted from The Heavy Table

2 tablespoons coconut oil or butter
4 apples, sliced (no need to peel)
1/2 cup pecans (or walnuts)
2 tablespoons maple syrup
pinch salt
1 1/2 cups whole milk (or sub 3/4 cup half & half plus 3/4 cups water)
6 eggs
1 1/2 cups flour
1 tablespoon vanilla
1 tablespoon maple syrup (or brown sugar)
3/4 teaspoon salt
1/2 teaspoon cardamom
1/2 teaspoon nutmeg
1 teaspoon cinnamon

Steps:

  • Pre-heat oven to 425 F with the 13 x 9 inch baking dish inside.
  • In an extra-large skillet over medium, heat the butter and saute the apples, stirring until tender, about 10 minutes. Add the pecans, lightly toasting. When the apples begin to caramelize, stir in the maple syrup and a pinch of salt and and turn off the heat.
  • by placing everything in a blender (eggs, milk, flour, vanilla, maple syrup, salt, cardamom, nutmeg, cinnamon) and blend until smooth. (Or feel free to whisk in a bowl)
  • When the oven is fully preheated remove the heated baking dish, and add 2 tablespoons butter, brushing the sides and bottom. Add the caramelized apples and spread out evenly on the bottom. Pour the batter over top. Grate with extra nutmeg if you like.
  • Place on the middle rack with ample room on top and bake 30 minutes or until beatufully puffed and deeply golden.
  • Serve immediately with maple syrup. Feel free to sprinkle with powdered sugar.

Apple Bacon Dutch Pancake (Pannenkoeken) in a thin and round crepe-like pancake filled with apple and bacon.

Number Of Ingredients 8

1 cup self-rising flour
1 egg
1 ¼ cup 2% or whole milk (or more for consistency)
1 tsp sugar
1/8 tsp salt
1 medium Gala apple, peeled, cored and thinly sliced
1 tsp unsalted butter
3 slices thick-cut bacon, cut into ½ " strips.

Steps:

  • Step 1 In a liquid measure or a medium bowl, add the flour, salt and sugar. Mix well with a fork. In a separate cup, add the milk and egg and beat well. Add the wet to the dry, stir to incorporate it all, and set aside for 30 minutes. Step 2 Meanwhile, make the fillings: In a small, nonstick sauté pan (the same one that you'll use for the pancakes), melt the butter and add the apples. Cook until the apples are soft and slightly brown, about 10 minutes. Set aside. Step 3 In the same pan, add the strips of bacon, and cook until crispy. Drain the fat and set aside to drain on a paper towel. Step 4 Preheat the oven to 200F. Step 5 Once the fillings are made and the batter has set, make the pancakes. Step 6 Coat the pan with melted butter, a bit of oil or cooking spray over medium heat (this is important- we're cooking lower and slower so they don't burn). Pour 1/4 cup of batter into the center of the pan and swirl to spread evenly. Add the fillings in a thin layer, and drizzle about another 3 TB of batter over the fillings. Once the top starts to set a little and the bottom layer is brown, carefully give it a flip. Cook another 2 minutes on the second side to let the batter set. Step 7 Place in a single layer in a baking rack, and let stay warm in the oven until all the pancakes are made.

4 bacon strips, chopped
1 large apple, peeled and sliced
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1 cup all-purpose flour

1 large egg, room temperature
3/4 cup 2% milk
1 tablespoon butter, melted
1/2 teaspoon vanilla extract
Optional toppings: Confectioners' sugar and maple syrup

Steps:

  • Preheat oven to 375°. In an 8-in. cast-iron or other ovenproof skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove bacon to paper towels to drain, reserving drippings., Add apple to drippings; cook and stir over medium-high heat until crisp-tender, 2-3 minutes. Remove from heat. Sprinkle with bacon, brown sugar and cinnamon., In a large bowl, combine flour, sugar and baking powder. In a small bowl, combine egg, milk, butter and vanilla; stir into dry ingredients just until moistened. Pour over apples., Bake until lightly browned, 20-25 minutes. Invert onto a serving plate. If desired, dust with confectioners' sugar and serve with syrup.

Pancakes (pannekoeken) are a Dutch tradition. There are pancake houses all over the Netherlands. As a kid I loved to go to the pancake house. Typically they make the pancakes very large and serve them for any meal. The pancake is generally served with powdered sugar or heavy Dutch syrup (stroop), and the menu typically offers quite a variety including ham and pineapple, ham and cheese, apple and raisins, assorted fruit, mushrooms, or my favorite - bacon and apple. 1 cup white flour
1/4 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1 teaspoon butter
1 teaspoon oil
10 slices bacon, sliced into thin strips
3 apples, thinly sliced (choose nice crisp apples)
syrup, preferably Dutch pancake syrup if you can find it

Steps:

  • Mix flour, baking powder, salt and a little of the milk to a smooth paste. Slowly add the remaining milk, while whisking. Add the egg, beating the mixture well. For a lighter texture, leave to rest for a few hours or overnight.
  • Melt the butter and oil in a large frying pan and wait until it sizzles. Pour in enough of the mixture to cover the entire surface of the pan (spread the mixture evenly by tilting the pan). Bake until bubbles appear on the surface and turn over. Pancakes should be pale golden on both sides. Set aside and keep warm.
  • Fry bacon in the pan until crisp. Remove to a paper towel to drain. Now add the sliced apples to the bacon fat and caramelize. Drain on paper towels. Serve pancakes open-faced on the plate, top with apples and bacon and drizzle some syrup on top.

4 tablespoons (1/2 stick) unsalted butter, divided
2 tablespoons granulated sugar, divided
1/4 teaspoon ground cinnamon
1/2 cup whole milk
2 extra-large eggs, at room temperature
1/2 teaspoon pure vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon kosher salt
Confectioners' sugar
Pure maple syrup, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Peel, core, and slice the apple 1/8 inch thick. Melt 3 tablespoons of the butter in a 9-inch ovenproof crêpe pan or skillet over medium to medium-high heat. Add the apple, 1 tablespoon of the granulated sugar, and the cinnamon and toss well. Sauté the apple for 5 to 7 minutes until tender, tossing occasionally. Spread the apple out in the pan and keep hot over low heat.
  • Meanwhile, melt the remaining tablespoon of butter in the microwave. In a medium bowl, whisk together the milk, eggs, melted butter, and vanilla. In a small bowl, combine the flour, the remaining tablespoon of granulated sugar, and the salt. Whisk the flour mixture into the milk mixture, whisking until there are no lumps. Pour the batter over the cooked apple in the hot pan and immediately place in the oven.
  • Bake for 12 to 15 minutes, until the pancake is puffed and the edges start to get crispy and browned. Dust lightly with sifted confectioners' sugar, cut in wedges, and serve hot with maple syrup.

3/4 cup milk
3/4 cup all-purpose flour
1/2 teaspoon salt
2 granny smith apples, peeled, cored, and cut into 1/4-inch slices
3 tablespoons sugar
2 tablespoons lemon juice
1/4 teaspoon cinnamon
6 tablespoons unsalted butter
1/2 a lemon, juice of
3 tablespoons confectioners' sugar

Steps:

  • Preheat oven to 450 degrees Fahrenheit.
  • In a medium bowl, beat the 3 eggs and milk until well blended. Add the flour and salt; stir until batter is barely blended (the batter should be slightly lumpy).
  • In another bowl, toss apple slices with sugar, 2 tablespoons of lemon juice, and cinnamon.
  • Melt unsalted butter in a heavy, ovenproof 12-inch cast-iron or non-stick skillet over medium-high heat. Add apple mixture and saute 4 minutes, or until slightly softened. Spread out apples into an even layer; pour batter over apples.
  • Bake in preheated oven for 20 minutes, or until pancake is golden brown and puffed.
  • Sprinkle with the juice of half a lemon and dust with confectioner's sugar. Serve immediately.
